RED LOBSTER'S BASIL SHRIMP STUFFED ZUCCHINI

4 zucchini (2- to 3-inch diameter)
2 tablespoons butter or margarine
1 tablespoon minced onion
1/2 pound tomatoes, peeled, seeded and chopped
1 pound small shrimp, peeled, deveined (cut shrimp if they are larger than a quarter)
1 tablespoon minced fresh basil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup breadcrumbs
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Wash the zucchini and trim off the ends. Cut zucchini in half lengthwise and scoop out the seeds. Be sure to leave some by the ends to create a boat-like shape. Saute onions in butter until clear, add tomatoes and simmer until soft. In a mixing bowl combine tomato and onion mixture, shrimp, basil, salt and pepper and half of the bread crumbs. Fill the zucchini boats with the mixture. Place boats in a greased baking dish. Sprinkle with remaining breadcrumbs and drizzle with butter. Bake for 15 minutes or until shrimp are pink and clear.

3 lbs shrimp, peeled and deveined
3 tablespoons Grey Poupon mustard
1/4 cup butter, melted
3 cloves minced garlic
2 1/2 tablespoons olive oil
fresh basil (remove stems)
1 1/2 lemons, juice of
salt and pepper (white preferred)

Steps:

  • Melt 1/2 stick butter in medium size bowl.
  • Add olive oil.
  • Squeeze lemon juice into mix.
  • Add grey poupon mustard, add minced fresh basil.
  • Add minced cloves of garlic, add salt and pepper.
  • Whip mixture and marinate cleaned shrimp for 1 hour.
  • Place marinated shrimp on skewers and BBQ until shrimp is pink and done.

1 extra large zucchini
¼ cup olive oil, divided
6 cloves garlic, finely chopped
1 shallot, finely chopped
½ pound large shrimp - shelled, deveined, and cut in half
1 large tomato - peeled, seeded and diced
8 cremini mushrooms, quartered
¼ cup grated Parmesan cheese
8 leaves fresh basil, torn
ground black pepper to taste
kosher salt to taste
garlic powder to taste
¼ cup grated Parmesan cheese, divided

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Grease a baking sheet.
  • Cut the zucchini in half the long way, and scoop out the seeds and pulp, leaving a thick shell of flesh. Brush both halves of the zucchini with about 1 tablespoon of olive oil, and place them, cut sides down, onto the prepared baking sheet. Bake until the zucchini are hot and beginning to release beads of moisture, 5 to 10 minutes. Remove the zucchini from the oven.
  • Reduce the oven heat to 450 degrees F (230 degrees C).
  • Heat 2 tablespoons of olive oil in a skillet over medium-low heat, and cook and stir the garlic and shallot until translucent, about 5 minutes. Remove from the heat and let cool.
  • Place 1 tablespoon of olive oil, the shrimp, diced tomato, mushrooms, 1/4 cup of Parmesan cheese, basil, and the cooked garlic and shallot into a bowl, and stir to mix. Season to taste with black pepper, salt, and garlic powder. Stuff the mixture into the zucchini halves, and sprinkle each zucchini with about 2 tablespoons of Parmesan cheese.
  • Bake the stuffed zucchini in the preheated oven until the cheese is browned and the filling is cooked through and hot, about 20 minutes.

  • saute onions in butter add tomatoes and simmer until soft.
  • in a mixing bowl combine onion mixture, shrimp, basil, salt and pepper and half of the bread crumbs.
  • fill the boats with stuffing and sprinnkle with remaining bread crumbs and drizzle with melted butter.

4 (8 ounce) zucchini, scrubbed
2 small onions, chopped
2 tablespoons olive oil
4 ounces feta cheese, crumbled
3 tablespoons fresh basil, chopped

Steps:

  • Remove the ends of 2 of the zucchini, cut in half lengthwise; use a melon baller to scoop out the flesh, leaving a 1/4" thick shell; set the flesh aside.
  • Place the shells in a steamer, cut sides up, and steam until just tender, 3-5 minutes; invert on paper towels and drain.
  • Cut the remaining 2 squash into 1/4" slices; heat oil in a non-stick skillet; saute the onions over medium heat, until softened; add the reserved flesh, chopped,and the zucchini slices; continue to cook over medium-high heat, until golden.
  • Process the cooked mixture and the feta in a food processor until the zucchini is roughly chopped; stuff the shells with this filling and place them in an oiled baking dish.
  • Broil 4" from the heat source until filling is bubbly and deep golden in color, about 3 minutes.

2 lbs young zucchini (small to medium)
1 lb shrimp, in their shells
1/2 cup toasted unflavored breadcrumbs
1 teaspoon garlic, chopped very fine
2 tablespoons chopped parsley
1/3 cup extra virgin olive oil
salt
black pepper, in a grinder
1 large egg

Steps:

  • Soak the zucchini in cold water for 20 minutes.
  • Drain and rinse well under cold running water.
  • Drop the zucchini into boiling salted water.
  • The moment the water returns to a boil, drain the zucchini, removing them gently from the pot.
  • Set aside to cool completely.
  • Trim the ends off, cut the zucchini in half lengthwise, using a narrow-bladed tool, scoop out the insides, taking care not to puncture the skin.
  • Leave a wall about 1/4 inch thick Turn on the oven to 450 degrees.
  • Rinse the shrimp in cold water, shell them, and remove the dark vein from each.
  • Chop them into pieces not bigger than a large pea.
  • Put the chopped shrimp in a bowl together with 1/4 cup of the breadcrumbs, the garlic, parsley, 2 tablespoons of the olive oil, salt, and grindings of pepper.
  • Separate the eggs, set aside the white, and add the yolk to the bowl.
  • Mix all the ingredients thoroughly.
  • Choose a shallow baking pan that can accommodate all the zucchini in a single layer.
  • Grease the bottom of the pan lightly with olive oil and place the zucchini on it cut side up.
  • Sprinkle them lightly with salt.
  • Beat the egg white lightly and brush the insides of the zucchini with it.
  • Stuff the zucchini with the shrimp mixture.
  • heaping them full enough, if possible, to form a slight mound.
  • Sprinkle the top of each boat with the remaining bread crumbs and pour the remaining olive oil over in a thin stream.
  • Place the boats in the uppermost level of the over for 6 to 7 minutes, until the top forms a light, pale golden crust.
  • Serve when lukewarm.
