3 cups warm water
1 cup granulated sugar
2 tbsp lime zest
1 cup lime juice
1 cup basil leaves

Steps:

  • In a large pitcher combine the water, sugar and lime zest and stir to combine. Add the lime juice and basil leave and let the mixture marinate for at least 2 hours. Pour the mixture through a strainer into another pitcher. Add ice and serve.

1 (12 ounce) can frozen lemonade concentrate, thawed
⅓ cup white sugar
¼ cup fresh lime juice
½ cup firmly packed torn basil leaves

  • Stir water, lemonade, sugar, and lime juice together in a pitcher. Add 1/2 cup basil leaves, stir to combine, cover the pitcher, and refrigerate until flavors combine, 8 hours to overnight. Remove basil leaves and discard.

1 cup sugar
3 sprigs fresh basil, plus basil leaves, for garnish
1 1/2 cups fresh lime juice (from about 12 limes)
One 6-ounce container blueberries
Gin, for serving, optional

Steps:

  • Place the sugar, basil sprigs and 1 cup of water into a small saucepan over medium-high heat. Cook, stirring every so often, until the sugar has dissolved, about 5 minutes. Remove from the heat and let steep for 30 minutes.
  • Discard the basil and pour the syrup into a pitcher. Stir in the lime juice and 4 cups of cold water. Add the blueberries and chill for at least 4 hours or until ready to serve.
  • To serve, put some ice in a glass, pour over the limeade and garnish with basil leaves. To make into a cocktail, add ice to a rocks glass and top with 1 1/2 ounces gin. Top off with the limeade and garnish with basil.

This is a lovely fresh granita that couldn't be easier to prepare. We like to add a couple of shots of vodka to it just before freezing, to make a more grown up version. Perfect for after a barbecue! Timing does not include 3 hours freezing time.

8 limes, juice of
30 basil leaves
10 ounces sugar
7 fluid ounces water
vodka (optional)

Steps:

  • In a pan, dissolve the sugar in the water. Bring it to a boil and simmer for a couple of minutes. Remove from the heat, and add the basil leaves. Mix and leave to cool.
  • When it is cold, remove the basil leaves and discard them. Add the lime juice, including any fleshy bits, and mix.
  • Pour into a large freezer proof container, and put into the freezer.
  • Every 15 minutes, for 2 hours, take out of the freezer and mix it up. Then every half an hour until the granita appears grainy and the crystals have been broken down. It should resemble snow or coarse sand.
  • Enjoy!

8 cups fresh strawberries, hulled
1 package (1-3/4 ounces) powdered fruit pectin
1/3 cup lime juice
1 teaspoon butter
7 cups sugar
1/4 cup minced fresh basil
4 teaspoons grated lime zest

Steps:

  • Rinse nine 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly., In a small bowl, thoroughly crush strawberries, 1 cup at a time, to measure exactly 5 cups; transfer to a 6-qt. stockpot. Stir in pectin, lime juice and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. Immediately stir in basil and lime zest., Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving.

1/2 cup sugar
5 -6 limes, zest of
1 cup lime juice
1 bunch fresh basil, pounded to a puree (about 2 cups of leaves before pounding)

Steps:

  • Place the water and sugar in a pan, bring to a boil, and simmer for 4 minutes with the lime zest. Remove from the heat, and allow to cool for a while.
  • Add the lime juice and basil puree. Stir this up and leave to infuse for a while.
  • Pass it through a coarse sieve and pour into a plastic tub or earthenware dish and place in the freezer.
  • Generally, sorbet takes 2 hours to set. Try to stir it around every 30 minutes, if you remember. Serve it in a glass on its own. Garnish with basil and a lime slice.
