- 1. Preheat oven to 375 degrees. Lightly spray a 9x13 glass pan with nonstick spray. Generously salt and pepper both sides of the chicken breasts, then place them in a single layer in the pan. 2. In a medium bowl, gently mix together the drained tomatoes and drained artichoke hearts with the garlic, parmesan cheese and flour/cornstarch if using. Spread this mixture over the top of the chicken and bake, uncovered for 45 minutes. Sprinkle on the mozzarella cheese and place under the broiler until browned, about 3 minutes. Remove from the oven and sprinkle the fresh basil over the top. You can serve this alone or with some pasta because it does make some pan juices.

- Heat oil in a large skillet over medium heat. Season chicken all over with salt and black pepper. Season with lemon and herb seasoning. Place in hot pan and cook 3 to 4 minutes per side, until cooked through.
- Meanwhile, in a blender, combine artichoke hearts, basil, garlic, 1/2 cup chicken broth, oil and cheese. Process until smooth, adding more broth, if necessary, to create a thick sauce. Transfer chicken to a serving platter and top with pesto.
- To make kale: Heat oil in a large skillet over medium heat. Add ham and cook 2 minutes, until golden brown. Add kale, beans and broth, cover and steam 5 minutes, until kale is tender. Season, to taste, with salt and black pepper. Serve kale alongside chicken.

- Prepare The Chicken: Cut the chicken into 2-inch by 1-inch pieces and season generously with salt and freshly ground black pepper then set aside until ready to use.
- Make The Lemon Garlic Oil: Meanwhile, place the oil in a large (ideally 12 inches or larger) frying pan over medium heat until the oil shimmers. Add the garlic and cook until it's golden about 2 minutes. Add the lemon slices and cook until the lemons start to soften and the garlic is golden for about 5 minutes. Season with salt and freshly ground black pepper, then remove the lemons and garlic to a plate.
- Partially Cook The Chicken: Return the pan (with the olive oil still in it) to the stove over medium heat. When the oil is warm, add the chicken and cook until the chicken pieces just start to turn white. Flip over and repeat on the other side. To clarify, you're not looking to cook them all the way through here but rather about 75% through -- you may need to do this in batches). Partially cover and let cook until the chicken is about 95% cooked, 5 to 10 minutes. Remove the cover and remove the chicken to a plate.
- Add Flour To The Chicken: Return pan to stove over medium heat, and, if using, sift the flour over the oil. Let it cook until the raw flour taste is cooked off, about 1 to 2 minutes then add the wine and scrape the bottom of the pan.Add the rinsed artichoke hearts and cook until the artichokes just start to break down and the sauce is slightly reduced, about 3 to 5 minutes.
- Finish The Dish: Stir in the chicken, lemons, and garlic and cook until the chicken is thoroughly cooked.Remove the pan from the heat, season with additional salt and pepper as desired, and taste the sauce, adding a drizzle of olive oil. Stir in all the basil and serve immediately.

Steps:
- Season chicken with salt, pepper, paprika, and cayenne.
- In large non stick skillet, brown chicken in 1-2 tbsp olive oil over med-high heat until golden on both sides. Time will vary between breasts and thighs; may need to do in 2 batches.
- Remove golden chicken pieces and place in crock pot.
- Add vinegar, garlic, and leeks to skillet and cook 1 minute.
- Stir in artichoke and wine. Cook 1 minute. Pour all ingredients in skillet over chicken in your crock pot.
- Cover and cook 4-5 hours on low.
- Stir in parsley, basil, and tomatoes and continue cooking an additional hour.
- Serve hot.

SPINACH ARTICHOKE CHICKEN

- Heat the butter and olive oil together in a large nonstick skillet over medium-high heat. Sprinkle the chicken on both sides with salt and pepper, then add them to the skillet. Cook until nicely browned and cooked through, about 3 minutes per side. Remove to a plate.
- Add the onion and garlic to the skillet and stir until slightly softened, about 30 seconds, then add the artichokes and cook, stirring, until the artichokes are hot and the onions are translucent, 1 to 2 minutes. Pour in the wine and stir, then add the cream and more black pepper, if desired, then stir again. Let the sauce come to a simmer, then add the Parmesan and cook for a minute to thicken.
- Add the pimientos, spinach and lemon juice, then stir until the spinach has wilted, for a minute or so. Nestle the chicken back into the skillet, spooning a little sauce over the top. Garnish with torn basil leaves and serve with warm bread.
PASTA WITH CHICKEN AND ARTICHOKES
This is from All You Magazine. The combination of Fresh basil, artichoke hearts and olives really make this a flavorful dish! The original recipe called for up to a lb. of pasta. I reduced it to 12 oz. I also use whole wheat penne for more fiber and nutrients.

- Bring a large pot of water to a boil over high heat. Add pasta and cook until tender.
