Vinegar Based BBQ Sauce (Carolina Style) image

Easy and basic vinegar based BBQ sauce that's great on pulled pork and chicken, inspired by Carolina Style BBQ.

Provided by Mary Cressler | Vindulge

Categories     Sauce

Time 20m

Number Of Ingredients 9

2 cups apple cider vinegar
1 cup ketchup
½ cup brown sugar
¼ cup hot sauce, (we err towards a savory style hot sauce, like Valentina)
2 tablespoons chili powder
2 tablespoons whole peppercorn
1 tablespoon salt
1 tablespoon red chili pepper flakes
1 teaspoon dry mustard

Steps:

  • Combine all ingredients in a sauce pan over medium heat. Stir until sugar and spices all dissolve. Bring to a low simmer and cook 10-15 minutes, then turn off the heat.
  • Strain the sauce into a bowl to remove the chili pepper flakes and peppercorns (and discard the pepper flakes and peppercorns). Then, when cool, place BBQ sauce into a jar with a tight sealing lid. Store in the refrigerator for up to 4 weeks.

THE BEST VINEGAR COLESLAW

The Best Vinegar Coleslaw image

We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 10

1 cup distilled white vinegar
1 tablespoon kosher salt, plus more if needed
2 teaspoons sugar
3/4 teaspoon celery salt
1/2 teaspoon freshly ground black pepper, plus more if needed
1 clove garlic, finely grated
1/2 head green cabbage, cored and very thinly sliced
1/2 head red cabbage, cored and very thinly sliced
4 large carrots, peeled and shredded on the large holes of a box grater
1/4 cup extra-virgin olive oil

Steps:

  • Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
  • Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.

CHICKEN IN RED WINE VINEGAR SAUCE

Chicken in Red Wine Vinegar Sauce image

A savory, oven-braised chicken in red wine vinegar sauce. This tender, crisp-skinned chicken is made with pantry ingredients and is ready to eat in 30 minutes.

Provided by Karen Tedesco

Categories     Chicken

Time 46m

Number Of Ingredients 13

6-8 bone-in, skin-on chicken thighs (about 3 pounds)
1 tablespoon kosher salt (I recommend Diamond Kosher brand)
2 tablespoons extra virgin olive oil
1 shallot (thinly sliced)
1 tablespoon finely chopped garlic
½ cup dry white wine
¼ cup red wine vinegar
3 tablespoons tomato paste
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme
2 small bay leaves
¼ cup water or chicken broth
¼ teaspoon crushed red chili flakes (optional)

Steps:

  • Put the chicken thighs on a rimmed baking sheet or baking dish. Sprinkle the salt on both sides of chicken. Refrigerate, skin side up and uncovered up to 24 hours ahead. This will season the chicken and help the skin to crisp and brown. If you're short on time, season with the salt and let it sit at room temperature 15 minutes then proceed with the recipe.
  • Preheat the oven to 425 (220C) degrees.
  • Heat a large (12-inch) wide pan with at least 2-inch sides over medium high heat. Add the olive oil to the pan, and when it shimmers add the chicken, skin side down. Cook undisturbed for 10 minutes, watching that the pan doesn't get too hot and adjusting the heat accordingly, until the skin is a rich golden brown. Turn chicken and cook the other side 2 minutes. Remove chicken to a plate.
  • Pour off all but about a teaspoon of the fat in the pan, and stir in the shallot and garlic. Cook about 30 seconds, then pour in the white wine and vinegar, scraping the pan to remove the brown bits. Add the tomato paste, mustard, thyme, bay leaves and broth. Bring to a simmer then return chicken to the pan, skin side up.
  • Transfer the pan to the oven and roast 25 minutes, until the sauce is bubbling and the chicken is cooked through. *Note: If you notice the pan juices are reducing quickly after 10-15 minutes, add up to ½ cup more liquid to the pan.
  • Sprinkle the chili over the chicken, if using, and remove the bay leaves. Serve warm with the pan juices spooned over.

  • Béchamel (White Sauce): The sauce consists of milk and is thickened with white roux containing equal parts of flour and butter. Marquis Louis de Béchamel (1603-1703), a seventeenth century financier who held the honorary post of chief steward of King Louis XIV’s (1643-1715) household, is also said to have invented béchamel sauce when trying to come up with a way of eating dried cod.
  • Velouté: It literally means velvet. It is a very light blond coloured sauce, made from chicken, fish, or veal stock thickened with a blond roux.
  • Espagnole (Brown Sauce): ADVERTISEMENTS: Espagnok, meaning ‘Spanish’ in French was the original brown sauce and still is one of the glories of the French kitchen.
  • Tomato Sauce: The traditional French tomato sauce is thickened with a butter roux. However, tomato sauce is more commonly associated with Italian cuisine, and in particular as an accompaniment for pasta.
  • Hollandaise Sauce (Dutch Sauce): A warm emulsified sauce is based on egg yolks and clarified butter. Hollandaise is a French word meaning ‘Dutch style’.
  • Mayonnaise Sauce: ADVERTISEMENTS: The invention of the sauce or the name is possibly derived from three different sources- ‘mahon’, ‘manier’ (meaning to stir), and ‘moyeu’ (referred to the middle of the egg).

  • Vegan Orange Balsamic Vinaigrette Dressing. Fruit and balsamic pair nicely, and the addition of orange juice to a basic vinaigrette turns it into a crisp splash of flavor.
  • White Balsamic Vinaigrette. The sweet-tart flavor and golden color of white balsamic vinaigrette makes it a good choice for dressing salads and vegetables when you want a lighter, brighter floral flavor.
  • Balsamic Onion Jam. Balsamic vinegar deepens the caramelized effect, giving slow-cooked onions a rich, mellow flavor in a balsamic onion jam perfect for topping burgers, a pork roast, or even just toast.
