2 teaspoons garlic, minced
1/2 onion, chopped
1 stalk celery, chopped
4 cups vegetable stock, plus 4 tablespoons
3 tomatoes, chopped
6 large mushrooms, sliced
1 potato, diced
1 cup white beans, cooked
1 cup corn kernel
4 dashes hot sauce
1 teaspoon black pepper

Steps:

  • Saute the garlic, onion, and celery in 4 tablespoons of vegetable stock for 3-5 minutes over medium heat.
  • Add the tomatoes, mushrooms, and 4 cups of vegetable stock. Continue to cook for 10-12 minutes.
  • Add the remaining ingredients and cook for 10 additional minutes.
  • Taste and adjust seasoning if necessary.

1 (15 ounce) can kidney beans
3 tablespoons olive oil
2 onions, chopped
2 potatoes, peeled and cubed
3 tablespoons chicken bouillon powder
½ teaspoon ground turmeric
½ teaspoon ground black pepper
½ teaspoon ground white pepper
½ teaspoon cayenne pepper
2 teaspoons curry powder
2 tablespoons soy sauce
½ cup whole milk
½ cup half-and-half
½ cup dry potato flakes
¼ cup chopped green onions

Steps:

  • In a medium-size cooking pot, add water and white kidney beans and bring to boil. Reduce heat and simmer for 15 minutes.
  • In a frying pan, saute onions in olive oil until lightly brown.
  • To cooking pot, add potatoes, sauteed onions, chicken soup base, turmeric, black pepper, white pepper, cayenne pepper, curry powder, and soy sauce, and cook until potatoes are tender.
  • Add whole milk and half and half cream and bring back to boil. Add instant potato flakes, stirring until well blended. Adjust seasonings to taste. Garnish with chopped chives or green onions.

1 cup sliced shiitake mushrooms or 1 cup button mushroom
2 teaspoons olive oil
3 large potatoes, peeled and thinly sliced (4 1/2 cups)
2 (14 1/2 ounce) cans chicken broth or 2 (14 1/2 ounce) cans beef broth
1 (15 ounce) can pinto beans, rinsed and drained
1/2 cup buttermilk
1 tablespoon cornstarch
1 tablespoon snipped fresh basil
1/4 cup plain yogurt or 1/4 cup sour cream
fresh basil sprig (optional)

Steps:

  • In a large saucepan cook the onion and mushrooms in hot oil till onion is tender but not brown.
  • Add the potatoes and broth- Bring to a boil; reduce heat.
  • Cover and simmer about 30 minutes or till potatoes are tender; stir in beans.
  • In a small bowl stir together the buttermilk and cornstarch; stir into potato mixture.
  • Cook and stir till thickened and bubbly.
  • Cook and stir for 2 minutes more.
  • Stir in 1 tablespoon snipped basil.
  • To serve, ladle soup into individual bowls and dollop each serving with yogurt or sour cream.
  • If desired, garnish with fresh basil.

4 cups fresh green beans, ends snipped and cut into small pieces
1 pound bacon, cut into small pieces
1 medium onion, chopped
4 medium sized potatoes, peeled and cut into 8 pieces
1 pint heavy cream
2 cups 2% milk
Salt and pepper
Snipped chives (optional) for garnish

Steps:

  • In a large pot or Dutch oven, cook bacon pieces until slightly crispy. Remove bacon with a slotted spoon and drain excess fat, but don't wipe the bottom clean.
  • Add onion to the pot and sauté in bacon drippings until soft.
  • While the bacon and onions are cooking, boil the potatoes until tender. Drain water and slightly mash. Set aside.
  • Steam green beans until slightly tender. Set aside.
  • When the beans and potatoes are done, add the bacon back in the pot, add green beans and mashed potatoes, and cover with the milk and cream. Stir to combine.
  • Warm for a bit until heated through, taking care not to boil.
  • Add salt and pepper to taste.
  • Serve hot, garnishing each bowl with snipped chives, if desired.

5 C (436g) Leeks, sliced thin, (about two large leeks)
8 C (348g) Green or Savoy Cabbage, cut into bite size pieces or thinly sliced** (see note)
2 C (285g) Russet or Yellow Finn Potatoes, skins on, cut into small cubes, (about one large potato)
8 C (1.7kg) Vegetable Broth (*** see note)
4 Cloves of Garlic, minced
1/2 tsp Sea Salt (+ more to taste, reduce to 1/4 tsp if using plant butter and adjust to taste)
2 C (425g) Cooked Cannellini Beans, drained and rinsed
4-5 Thyme Springs, tied
Squeeze of Lemon (to taste )
Parmesan Cheese for garnish (optional)
Fresh Ground Pepper

Steps:

  • In a large Dutch Oven or stock-pot, add the olive oil (or butter and melt) and heat until shimmering. Add the leeks and cook, stirring frequently on low until they're soft with a bit of golden color, about 10 minutes. Watch them close, as they can burn easily.
  • Add the cabbage to the leeks. Cook on low stirring occassionally to cook down, about 9-10 minutes (the pot will be very full!).
  • Add garlic, 1/2 tsp salt, broth, potatoes and thyme bundle. Bring to a simmer, then cook on low for about 20 minutes for a fork tender potato (this will vary depending on type of potato and size of cut, so test to taste), or 40 minutes to let the potatoes soften further (this time is flexible - cooking the potatoes longer will allow them to be more creamy and melt into the soup - yum!)
  • Remove the thyme bundle, stir in the beans and a good squeeze of lemon (it brightens the soup). Warm through, about five minutes. Taste to adjust salt and pepper seasoning as needed. Due to variations in salt content in vegetable broth, add salt to taste. I'm pretty generous with it in this recipe. Garnish with parmesan and fresh thyme leaves if desired.
  • Store in a lidded container in the refrigerator for up to three days. This soup is freezer friendly. Freeze in individual containers for lunch portion servings or a larger family size container. Thaw overnight in the fridge and gently rewarm on the stovetop.

6 oz. bacon ($2.00)
2 cloves garlic ($0.16)
1 yellow onion ($0.37)
3 carrots ($0.32)
3 ribs celery ($0.53)
2 lbs. potatoes ($1.44)
6 cups chicken broth ($0.76)
1 8z. can tomato sauce ($0.34)
salt and pepper to taste ($0.05)

Steps:

  • The night before, place the beans in a large bowl and add enough cool water to cover the beans by 2-3 inches. Let the beans soak in the refrigerator over night.
  • The next day, cut the bacon into one-inch pieces. Cook the bacon in a large pot over medium heat until brown and crispy. Remove the bacon to a paper towel lined plate and pour off most of the grease, leaving a tablespoon or two in the pot.
  • While the bacon is cooking, dice the onion and mince the garlic. Peel and slice the carrots, and slice the celery. Sauté the onion, garlic, carrots, and celery in the leftover bacon grease over medium heat until the onions are soft and transparent (about five minutes). Use the moisture from the vegetables to help dissolve the browned bits of bacon from the bottom of the pot.
  • While the vegetables are sautéing, peel the potatoes then cut them into 1/2-inch cubes. Drain the soaked beans in a colander and rinse them briefly.
  • Add the cubed potatoes, rinsed beans, and chicken broth to the pot. Cover the pot and bring it up to a boil. Reduce the heat slightly and let the pot boil gently for one hour, or until the beans and potatoes are very soft.
  • Use an immersion blender to purée about half of the soup, leaving some beans and vegetables whole. If you don't have an immersion blender, remove half of the soup from the pot, let it cool slightly, then use a blender or food processor to carefully purée the warm soup. Return the puréed soup to the pot and stir to combine with the rest.
  • Add the tomato sauce and reserved bacon to the soup. Stir and heat until warm. Taste the soup and add salt and pepper if needed. Serve hot.

1 large yellow onion, chopped

Steps:

  • Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion, celery, bell pepper and carrot. Cook, stirring occasionally, until the vegetables begin to soften, 5 to 7 minutes. Season with 1 teaspoon salt and the red pepper flakes.
  • Make a space in the middle of the pot and add the tomato paste, garlic, smoked paprika and coriander. Cook this mixture in that spot, stirring, until the tomato paste darkens a shade or two, about 1 minute, then stir into the vegetables. Add 12 cups water and the bay leaves. Bring to a rapid simmer and cook until the liquid has reduced slightly, about 15 minutes.

Raining 6 days straight here in the northeast and suddenly I'm thinking about warm comforting soups as a way to warm from the inside out. After pulling out one of my soup cookbooks and came across this one and decided to post it for the Zaar World Tour. You can make this vegetarian by omitting the prosciutto. I have not tried this one so please feel free to share your comments and sugeestions.

4 ounces dried cranberry beans
4 potatoes, cubed into 1 inch pieces
1 stalk celery, diced
1 large onion, chopped
2 garlic cloves
2 bay leaves
3 ounces prosciutto, fat trimmed and reserved
1 tablespoon all-purpose flour
8 ounces sauerkraut, drained
salt (to taste)
pepper (to taste)
2 tablespoons olive oil
1 pinch cumin

Steps:

  • Soak beans overnight in 4 cups of water. Rinse and drain.
  • Place the beans, potatoes, celery, onion, 1 clove of garlic and 1 bay leaf into a large soup pot. Add water to cover over plus 2 inches. Bring water to boil, then reduce to a low simmer. Cover and cook for 90 minutes.
  • In a small skillet, render the reserved fat from the prosciutto. Add flour and stir until browned. Remove fat pieces.
  • Drain the sauerkraut, patting if needed. Place in a sauce pan with second clove of garlic and bay leaf, as well as remaining prosciutto. Begin heating and add the browned flour (roux). Cook for an hour over very low flame.
  • Remove 3 cups of soup from pot and blend in a food processor. Return to the soup pot. Add in the sauerkraut. Cook for 30 minutes. Add salt and pepper to taste. Stir in the oil and cumin.
  • Serve warm not boiling hot.

To make this vegetarian, use vegie broth instead of chicken. From Crescent Dragonwagon. Based on a cold Hungarian soup, but this one is served hot. The green beans need to be cut into very thin pieces. Don't add the cornstarch-yogurt mixture until just before serving. Good with a crusty "peasant" type bread.

4 small yukon gold potatoes, peeled and cut into small bite-size chunks
6 cups chicken stock (good quality-or vegetable broth)
3 tablespoons cider vinegar
3 tablespoons honey
3 garlic cloves, finely minced
1 teaspoon caraway seed
salt & fresh ground pepper, to taste
2 tablespoons unsalted butter
1 large onion, diced
2 celery ribs, diced (with some leaves if possible)
2 tablespoons sweet Hungarian paprika (good quality and fresh)
3 tablespoons cornstarch
3 tablespoons water
3/4 cup plain yogurt

Steps:

  • Cut green beans into 1/4-inch slices crosswise.
  • Spray a large soup pot with nonstick cooking spray. Put in green beans, potatoes, stock, vinegar, honey, garlic, caraway, salt and pepper. Bring to a boil, reduce heat to medium-low, cover and simmer until vegetables are tender, about 30 minutes.
  • Meanwhile, in a 10-inch skillet, melt the butter over medium heat. Add onion and saute until softened, about 4 minutes. Add celery and saute another 3 minutes. Lower heat slightly and sprinkle paprika over mixture. Cook another minute, stirring constantly.
  • Scrape onion mixture into green bean pot and add a little water to skillet to deglaze it. Add this to soup pot. Take soup pot off of heat.
  • When ready to serve, have soup very hot. Disolve the cornstarch in the water, making a paste and stir the paste into the yogurt.
  • Whisk a ladleful of the hot stock into the yogurt. Turn down heat to low and stir cornstarch mixture into the hot soup. Using a wooden spoon, stir gently until soup has thickened slightly.
  • Check for seasoning. Add more salt and pepper if needed, and adjust sweet/sour ratio by adding more vinegar or honey as needed.
  • Serve.

When my DH and I were first married I made this for him. He thought this was the most VILE tasting stuff he had ever had, and I was to NEVER make it again!. I was so suprised our marriage wasn't annuled. As you can see-I did make it again (nearly 20 years later), but only so I can enjoy it, and post it here. My DH smirked at me and did some eye rolling when he saw me preparing this, and knew that I wouldn't dare pack it in his thermos. As a child I grew up on a farm-every animal imaginable, 17 acres or so of blueberries(child labor), and of course a huge vegetable garden(more child labor). My mother being the thrifty sort thought this up and we had this frequently. Cheap meal for 6 children. One of those 'Back to the Basics' recipes. No measuring is really required. This is at its Absolute BEST with fresh green beans, and beautiful squeaky new potatoes(with the skins left on). Of course this can be made with canned or frozen green beans, or canned potatoes. Easily made for 1 or 2 or for potlucks.

1 medium yellow onion, small dice
2 celery ribs, chopped
2 carrots, chopped
1 Tablespoon minced garlic
½ small green cabbage, cut into thin strips
2 cups vegetable broth *
4 cups water (or broth)
1/3 cup tomato sauce
1 Tablespoon white miso *
1 Tablespoon ume plum vinegar *
1 - [ 15 oz. can ] cannellini beans, drained and rinsed
1 1/2 teaspoons liquid smoke (+/- to taste) - (optional) *
2 Tablespoons dried minced onions
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon sweet paprika
1 teaspoon smoked paprika
¼ teaspoon dried crushed fennel
2 teaspoons sea salt (+/- ) *
1/8 to 1/4 teaspoon black pepper to taste
Pinch red pepper flake
Red pepper flakes
Italian microgreens

Steps:

  • Place the Spice/Herb Ingredients into a small bowl, mix well, set aside.
  • In a large ceramic/enamel lined deep skillet, Dutch oven/pot or similarly large stockpot, add the onion, celery, and carrots. Sauté over medium-high heat for 5 to 7 minutes until the veggies start to get tender. (If needed to prevent sticking, add a splash of vegetable broth or water).
  • Add the minced garlic and sauté for one minute.
  • Add the water, vegetable broth, tomato sauce, and miso bring to a boil, then immediately lower to a simmer.
  • Add the Spice/Herb Mix and all the remaining ingredients except for the cannellini beans, and simmer until the potatoes and cabbage are just about tender. Then add the cannellini beans, simmer until the potatoes and cabbage are tender.
  • Serve with your favorite toppings.
