It takes just minutes to toss together this fresh tomato salad with balsamic vinegar, olive oil, and garlic.

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves (minced)
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano , optional)
1 teaspoon fresh basil (chopped, or 1/2 teaspoon dried basil, optional)
Salt (to taste)
Black pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
  • Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
  • Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of fresh oregano or basil.

Once you've mastered this basic tomato salad recipe, you can try adding in extra ingredients to amp up the flavor even more. Think olives, feta cheese, beans or other herbs. While you can certainly eat this tasty salad right away, the flavor gets even more delicious if you let it sit in the fridge overnight.

I got this recipe from The New American Heart Association Cookbook. Low fat, low calories, great taste...what's not to love! I usually add more cheese. Refrigerate the tomatoes for at least an hour before serving to let them soak in all that wonderful dressing!

4 medium tomatoes, sliced
2 tablespoons fresh basil, chopped or
2 teaspoons dried basil, crumbled
2 tablespoons balsamic vinegar

2 teaspoons parmesan cheese

Steps:

  • For salad, arrange tomato slices on a large plate or platter. Sprinkle with basil.

Twice a year there's a this model Airplane show in Lakeland, FL. The food vendor sells the most delicious tomato salad. I couldn't find any recipe close to it on here so I added this one. They used homegrown tomatoes. So finding good quality tomatoes is key.

8 tomatoes, cored and cut into chunks
2 large garlic cloves, smashed and finely chopped
1 tablespoon fresh cilantro, chopped
1/2 cup celery, chopped
1/4 cup scallions, chopped or 1/4 cup green onion
1 teaspoon fresh oregano
1 teaspoon fresh basil, freshly chopped
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar or 2 tablespoons balsamic glaze
salt & pepper

Steps:

  • You can substitute fresh basil & oregano with a 1/2 teaspoon dried.
  • Place the tomatoes & chopped veggies in a large bowl. Add the olive oil, vinegar, garlic, and herbs (if using). Toss well.

2 bags ready to use mesclun greens
Pinch salt
Freshly ground black pepper
Balsamic Vinaigrette, recipe follows
1 pint grape tomatoes
1 yellow bell pepper, seeded, halved and thinly sliced
1 shallot, peeled and roughly chopped
1 tablespoon chopped fresh basil leaves
1/4 cup balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 cup olive oil

Steps:

  • Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
  • Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

1 1/2 cups cornmeal
1 teaspoon paprika
1/2 teaspoon cayenne
1 teaspoon salt, plus more for seasoning
1/2 teaspoon ground pepper, plus more for seasoning
3 eggs, beaten
1 cup all-purpose flour
2 green tomatoes, sliced
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Pinch salt and ground pepper
1/4 cup olive oil
1 pound mixed greens
1/2 cup crumbled feta cheese
1/4 cup slivered almonds
2 peaches, pitted and thinly sliced

Steps:

  • For the fried green tomatoes: Preheat the frying oil to 350 degrees F in a heavy-bottomed pot over medium to medium-high heat.
  • In a shallow dish, combine the cornmeal, paprika, cayenne, salt and pepper and whisk together. In second shallow dish add the eggs, and in a third shallow dish add the flour. Dredge the slices of tomato into the flour, then the eggs and then the seasoned cornmeal. Add the breaded tomatoes to the oil, in batches if necessary, and fry until golden brown on each side, about 3 minutes. Remove and drain on paper towels. Season with salt and pepper.
  • For the dressing: Whisk the vinegar, honey, mustard, salt and pepper in a bowl. Drizzle in the oil until emulsified.
  • To assemble the salad: In a salad bowl, add the greens, feta cheese, almonds and peaches. Top with the balsamic vinaigrette dressing and mix together. Plate the salad and top with fried green tomatoes.

2 pints cherry tomatoes
4 tablespoons fresh basil leaves, cut in chiffonade
1/4 cup white balsamic vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

  • Slice tomatoes in half and put into a medium sized bowl.
  • Sprinkle tomatoes with salt, dress with vinegar and oil and toss together.
  • Cut basil leaves into chiffonade (roll leaves together as if making a cigar and run your knife perpendicular through at very thin intervals--the result will be little strips of basil).
  • Sprinkle basil over tomatoes, add pepper, toss and serve.
  • Notes: I thought that the salad tasted the best after a few hours. The downside is that your basil can turn a little dark. I'd still say it is worth letting the salad mascerate for a couple hours--maybe adding basil leaves in an hour before serving.

I can't take credit for this recipe. A friend of mine who is a chef gave me this and I love it. Serve over grilled vegetables, fish and of course your favorite salad greens. One note, using a tube of the "double-concentrated" tomato paste really does make a big difference, as well as using an aged Balsamic. But I have made it with every day Balsamic and "standard" tomato paste and it still is pretty tasty. I think the rice vinegar is very important to use, and shouldn't be substituted in this recipe.
