BASIC SQUASH CASSEROLE WITH CHEESE



Basic Squash Casserole With Cheese image

This simple squash casserole is made with shredded cheese, summer squash, saltine crumbs, onion, and a pecan or crumb topping.

2 pounds yellow squash (cut into 3/4-inch cubes)
1 cup onion ( chopped )
1 teaspoon salt
1/4 teaspoon pepper (or to taste)
Water (about 1-inch)
4 tablespoons butter
1 cup saltine crackers (crumbled)
1/2 cup milk
1 cup cheddar cheese (shredded)
1/2 cup pecans (finely chopped, or buttered bread crumbs)

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Generously butter a 1 1/2-quart baking dish.
  • Place the cubed squash, chopped onion, salt, and freshly ground black pepper in a large saucepan.
  • Add a small amount of water (about 1 inch). Cover and cook the squash until tender, stirring occasionally and adding more water if necessary.
  • Drain the squash and onions thoroughly.
  • Return to the pan and stir in the butter. Taste and adjust seasonings, adding more salt and pepper to your taste.
  • Stir the crumbled crackers into the squash mixture.
  • Turn the squash and cracker mixture into the prepared baking dish.
  • Pour the milk over the squash and then sprinkle with the cheese and chopped pecans or bread crumbs.
  • Bake uncovered in the preheated oven for 20 minutes, until the milk is absorbed and the squash casserole is bubbly.
  • Serve hot and enjoy!

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.

1 tablespoon vegetable oil
6 medium summer squash, thinly sliced
1 large vidalia onion, thinly sliced
1 tablespoon butter
1/2 cup grated fresh parmesan cheese
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
salt & freshly ground black pepper
1 sleeve cracker, crushed medium to fine (recommended Ritz)

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 2-quart casserole dish.
  • Heat the oil in a large skillet over medium heat. Saute the squash, onion, and butter until soft. Drain in colander to get rid of extra moisture.
  • Transfer to a bowl and stir in the Parmesan, Cheddar, and sour cream. Add salt and pepper, to taste.
  • Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top.
  • Bake for 20 minutes or until the top is golden and bubbly.

6 medium yellow squash, chopped fine
1/2 cup onion, chopped
1 teaspoon salt
3/4 cup cheddar cheese, shredded
2 eggs
1/3 cup milk
1 cup Ritz cracker, crushed
1/2 cup butter, melted

Steps:

  • Remove ends of squash and discard. Chop or cut squash into small fine pieces. Add salt to water and boil squash and onion until tender for approximately 15 minutes. Drain well.
  • In a medium size bowl, mix cheese with squash mixture. Beat eggs and stir into milk. Add to squash mixture.
  • Pour one-half of squash mixture into a 2 quart casserole baking dish. Sprinkle 1/2 cup of cracker crumbs over and pour 1/2 of melted butter. Pour remaining squash mixture and repeat with remaining crumbs and melted butter on top.
  • Bake in a 350 degree oven for 25 minutes.

¼ cup butter
4 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 cup sour cream
1 egg, lightly beaten
1 cup shredded sharp Cheddar cheese
1 sleeve buttery round crackers (such as Ritz®), crushed and divided
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Cook and stir squash and onion in hot butter until tender, 10 to 15 minutes. Drain and cool vegetables.
  • Whisk sour cream and egg together in a large bowl. Add squash mixture, Cheddar cheese, and 1/2 of the crushed buttery round crackers; stir to combine and pour into prepared baking dish.
  • Stir remaining buttery round crackers and melted butter together in a bowl; spread over the top of squash mixture and gently pat down.
  • Bake in the preheated oven until crackers are lightly browned, about 20 minutes.

4 -5 yellow squash, peeled and chopped in big chunks (peeling is optional)
1 medium onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup (I have used cream of chicken)
1/2 cup milk
1 -2 inch Velveeta cheese, chopped (off the big block)
2 cups shredded cheddar cheese (use more or less)
1 (12 ounce) bag Doritos, broken up (not to fine, you may not use the whole bag so crumble a layer at a time)
salt and pepper

Steps:

  • Heat soup and milk in sauce pan.
  • Add Velveeta stir until melted.
  • Add squash and onion to mixture and stir gently until mixed.
  • Layer Doritos in casserole sprayed with cooking spray, just enough to cover bottom good.
  • Pour enough squash mixture to cover chips.
  • Sprinkle enough cheese to cover mixture.
  • Repeat layers until all is used, ending with chips then cheese.
  • Cover and bake in 350 degree oven for 25 minutes.
  • Uncover and bake for 10 more minutes until top is lightly brown.
