Steps:
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
EASY AND QUICK MEATLOAF
I found this recipe while searching for a easy and quick meatloaf. I added a few ingredients on my own (green pepper, red pepper and cheese) and it turned out great. My family had it with white rice and hashbrowns and loved it. Now i make it every Sunday.

EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

ACCIDENTAL MEATLOAF (NOT TOO SWEET & NO MILK)
Haven't made meatloaf in YEARS and couldn't find my favorite recipe for it. I decided to wing it after discovering I didn't have enough ingredients in the cupboard to make the standard variety. It turned out F-A-B-U-L-O-U-S. Super-moist and very flavorful. Not too sweet. Leftovers made great sandwiches. To make the fresh breadcrumbs, simply tear some slices of bread up into smaller pieces and pulse in a food processor until fine. Enjoy!

Steps:
- Preheat oven to 350 degrees F.
- Heat a tablespoon of olive oil in a large cast iron skillet. Cook the mushrooms over medium/high heat until softened and lightly browned.
- Reduce the heat to medium/low. Add the onion, bell pepper, and garlic. Cook until the onions are soft and translucent, stirring often.
- Turn off heat and put vegetables aside to cool slightly.
- Combine the beef, ketchup, bbq sauce, tomatoes, breadcrumbs, eggs, worcestershire, and salt in a large bowl. Mix very well.
- Add the vegetables to the meat mixture. Mix well.
- Put the meat mixture into the cast iron skillet. Form it into a standard loaf shape or pat it down to fit the skillet. It will take more time to cook if it's a loaf shape.
- Cover with the strips of bacon.
- Bake for at least 1 hour. Mine took 1 hour and 15 minutes in a conventional oven. The meat should be cooked in the very center and the bacon should be slightly crisp. Cooking time will vary based on your oven and the shape of the loaf. It may take up to 1 hour and 30 minutes.
- Let rest for 15 minutes. Pour off any separated fat. Serve warm.
- Makes GREAT meatloaf sandwiches the next day.

Steps:
- Heat the oven to 350 degrees F.
- In large bowl, combine all ingredients together (except the topping) using your hands to mix and combine is the best way.
- Spread the meat mixture into an ungreased loaf pan, 9 X 5 X 3-inches or shape into a loaf in an ungreased baking pan.
- Spoon topping choice onto the loaf and bake, uncovered, for 1 to 1 1/4 hours or until done.
- Drain off the excess fat and allow the loaf to sit about 10 minutes before removing from loaf pan or slicing because it will fall apart.
- Slice loaf into serving sizes and serve on heated platter.
- POTATO-TOPPED MEAT LOAF: For four 1/2-inch slices of meat loaf, prepare some instant mashed potatoes, enough for 4 servings, as directed on the package and set aside. Set the oven control at broil/or 550 degrees F. Broil the slices with the tops 3 to 4 inches from the heat for 5 minutes. Spread the potatoes on the slices and sprinkle with shredded Cheddar cheese. Broil until the cheese is melted, about 2 minutes and serve hot.
- SOUPED-UP MEAT LOAF: For four 1/2-inch slices of meat loaf, mix 1/2 to 1 can of your favorite condensed cream soup, such as cream of mushroom, (10 3/4 oz size) and 1/4 to 1/2 cup of milk in a skillet. Heat to boiling, stirring frequently. Reduce the heat and place the slices in the skilled, turning to coat all sides with the sauce. Cover and simmer until the meat is hot, 10 to 15 minutes and serve.
