SAVOURY CHEESE MUFFINS
Recipe video above. They taste like cheesy garlic bread - in muffin form! If you want lovely high domes as pictured, this makes 11 muffins. It's irritating, I know, but such is life. See notes for Add In options!

Steps:
- Preheat oven to 180C/350F (standard) or 160C/320F (fan).
- Place butter and garlic in a microwave proof bowl and melt in 30 second bursts. Mix.
- Brush a 12 hole standard muffin tin generously with butter, being sure to slather with some garlic. Reserve some butter to brush tops.
- Whisk Dry ingredients in a bowl.
- Whisk Wet ingredients in a separate bowl.
- Pour Wet into the Dry ingredients bowl. Mix 8 times. Add cheese, mix as few times as possible just to incorporate remaining bits of flour - no more than 7 big stirs (secret to soft muffs).
- Divide between 11 holes in muffin in (I use an ice cream scooper). Batter should be thick and fill muffin tin to top (if in ball shape due to scooper, leave as is). See video.
- Bake for 22 - 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.
- Remove onto cooling rack, brush with remaining butter (microwave again if needed) and cool slightly before getting stuck into them!

- In bowl stir together flour, sugar, baking powder, baking soda and salt.
- In another bowl stir in cheese,yogurt, butter and eggs.
- Add this mixture to dry ingriendents and stir just enough to moistened.
- This batter will be stiff.

- Bake at 400 for 15-20 minutes.

EASY CHEDDAR CHEESE MUFFINS
Steps:
- Preheat the oven to 400 F.
- Grease a 12-cup muffin tin.
- In a medium bowl, combine the all-purpose flour, baking powder, salt, dry mustard, cheddar cheese, and sugar.
- In a small bowl, mix the vegetable oil, egg, milk, and water.
- Add the mixed liquid ingredients to the bowl of dry ingredients. Quickly mix the ingredients altogether, making sure not to overmix.
- Fill each muffin cup two-thirds full with the batter. Sprinkle paprika on the tops of each muffin cup. Bake at 400 F for 25 minutes or until done.
- Let the muffins cool in the muffin tin for about 10 minutes.
- Lift the muffins out with a spoon and serve them with butter.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
- Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.

BASIC MUFFIN RECIPE

- Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
- Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
- Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
- Stir in 100g chocolate chips or dried fruit if using.
- Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
- Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

I adapted this recipe from a cookbook published in Arkansas many years ago. If dough is too thick, add a little more milk. Cheeses can be whatever you have on hand; cheddar, Swiss, Parmesan, etc. I used a blend of all three.

- Mix filling ingredients with mixer.
- Set aside.
- Preheat oven to 350 degrees.
- Oil bottoms only of medium muffin tins.
- Beat eggs; stir in milk and oil; set aside.

- Heat oven to 200C/180C fan/gas 6 and oil a 12-hole muffin tin. Whisk the oil, egg and buttermilk. In a mixing bowl, mix the flour, 1 tsp salt and mustard powder, then stir in the cheddar, spring onions, chives and half the Parmesan.
- Use a large spoon to gently fold the wet ingredients into the dry - don't overmix, just lightly combine. With the final few folds, mix in the soft cheese cubes. Spoon the mixture between the holes in the tin (they will be quite full), scatter with the remaining Parmesan and bake for 25 mins.
