Vegetable Thai Red Curry image

This vegetable red curry is easy to make, customizable to whatever veggies you have on hand and perfect for a quick and easy weeknight dinner. Serve with your favourite rice or other whole grain.

1 small onion, diced (2 cups, 225 g)
4 cloves garlic, minced
3 tablespoons Thai red curry paste
1 400 ml can coconut milk (light or full-fat)
1 tbsp fresh ginger, minced
1 large or 2 small red peppers, sliced (3 cups, 290 g)
1 medium zucchini, sliced (2 cups, 225 g)
3 carrots, peeled and sliced into rounds (2 heaping cups, 350 g)
2 heaping cups broccoli florets
1 tbsp organic sugar or coconut sugar
2 tbsp soy sauce, gluten-free tamari or coconut aminos
2 tbsp fresh lime juice

Steps:

  • In a sauce pan, sauté the garlic and onion in 2 tbsp of water or vegetable stock. If you prefer, you can cook in 2 tsp of olive oil, avocado oil or coconut oil.
  • Add the curry paste, stir to combine and cook for 3 minutes.
  • Add the coconut milk and chopped carrots and simmer lightly over medium heat for 4 minutes.
  • Add the rest of the vegetables and stir to combine. Continue simmering for about 10 minutes until all the veggies are tender.
  • Stir in the soy sauce, sugar and lime.
  • Serve with rice or another whole grain of choice. Optional toppings include peanuts or cashews, fresh lime juice, cilantro or green onion.

A Vegetable Curry that's so good meat eaters and vegetarians alike will fall in love with it! Fresh veggies and chick peas are slowly simmered in a well seasoned sauce allowing time for everything to meld together so perfectly. Serve over basmati rice to complete the dish.

1/4 cup olive oil*
1 yellow onion, (coarsely chopped)
4 garlic cloves, (thinly sliced)
1 (2-inch) piece fresh ginger, (peeled and thinly sliced)
2 jalapenos, (thinly sliced, with seeds (optional))
2 Tbsp red curry paste
2 Tbsp curry powder
1 Tbsp ground cumin
Salt
1 (14 oz) can can garbanzo beans, (drained and rinsed)
1 head cauliflower, (cut into bite size pieces (mine was nearly 3 lbs))
1 red bell pepper, (seeded and thinly sliced)
3 cups vegetable broth
1 cup tomato sauce
1 (14 oz) can unsweetened coconut milk
Thinly sliced green onions and chopped fresh cilantro, (for garnish)

Steps:

  • Heat 2 Tbsp oil in a large enameled cast iron pot over medium heat. Add onions and saute until nearly softened, about 5 minutes.
  • Add in garlic, ginger and jalapeno and saute until softened, about 5 minutes. Add in the curry paste, curry powder, and cumin. Season with salt to taste and cook 2 minutes, stirring frequently.
  • Stir in 1/4 cup water. Transfer curry mixture to a food processor and puree until smooth, about 2 minutes.
  • Heat remaining 2 Tbsp oil in same pot over medium heat. Add curry mixture and cook 1 minute.
  • Add the garbanzo beans, cauliflower, and bell pepper and toss to coat with curry mixture.
  • Stir in vegetable broth, tomato sauce, and coconut milk. Season with salt to taste and bring to a light boil.
  • Reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally (original recipe lists simmer covered for 30 and uncovered for 15, but I prefer a slightly thicker consistency).
  • Serve warm over basmati rice, topped with green onions and plenty of cilantro.

2 tablespoons vegetable oil
3 tablespoons red Thai curry paste
1 yellow onion, sliced with the grain
2 chicken breasts, cut into cubes
Salt and freshly ground black pepper
1 1/2 cups broccoli florets
1 1/2 cups chopped carrots
1 teaspoon dried basil
3 cloves garlic, minced
Zest of 1/2 lime
1 1/4 cups coconut milk
1/4 cup chicken stock
One 14-ounce can diced tomatoes
Lime wedges, for squeezing

Steps:

  • Cook 1 tablespoon of the oil, the curry paste and onions in a large saute pan over medium heat, stirring often and letting sizzle, 5 to 6 minutes. Pat the chicken dry, sprinkle with salt and pepper and add the remaining oil to the pan. Cook the chicken in the onion-curry mixture until golden on all sides. Add the broccoli, carrots, basil, garlic and lime zest and cook, stirring, until the vegetables are coated, about 2 minutes. Add the coconut milk, chicken stock and tomatoes and bring to a simmer. Let the chicken simmer until cooked through and the sauce begins to thicken, about 20 minutes. Squeeze with lime juice before serving.

Once you have all the ingredients at the ready, the dish comes together quickly. And you'll have enough leftover curry paste to make this again, even faster the next time. Omit the fish sauce (use soy instead) and egg to make this a vegan dish.

1/4 cup lightly packed cilantro leaves and stems (white roots, too, if available)
2 cloves garlic, roughly chopped
1 shallot, sliced
1 fresh hot red chile, seeded and roughly chopped
2 tablespoons prepared Thai red curry paste
1 tablespoon coconut oil
1 tablespoon grated fresh ginger
1 lemongrass stalk, tough outer leaves trimmed off, inner leaves finely chopped
Finely grated zest and juice of 1 lime
2 teaspoons Asian fish sauce
1 teaspoon curry powder
3/4 teaspoon cumin seeds
1/2 teaspoon ground coriander
3 tablespoons coconut oil
5 ounces sliced shiitake mushrooms (about 3 cups)
6 scallions, thinly sliced
3 cloves garlic, thinly sliced

Steps:

  • Prepare the curry paste: In a blender or mini food processor, combine cilantro, garlic, shallot, chile, red curry, coconut oil, ginger, lemongrass, zest and juice of 1 lime, fish sauce, curry powder, cumin and coriander. Blend into a paste, scraping down the sides of the blender as needed. If mixture is too thick to blend, add teaspoon or two of water as needed.
  • In a large skillet, heat coconut oil over medium heat. Stir in mushrooms, half the scallions, garlic, chile and a large pinch of salt. Sauté until golden, 10 to 12 minutes.
  • Meanwhile, cook the noodles according to package directions. Drain and set aside.
  • Stir 1/4 cup curry paste mixture into skillet and cook until fragrant and darkened, 1 to 2 minutes. Stir coconut milk into skillet along with remaining 1 1/2 tablespoons fish sauce, and juice of 1/2 lime.
  • Add red pepper, snow peas and 1/2 teaspoon salt. Cover and cook, stirring occasionally, until vegetables are softened, 3 to 5 minutes. Stir in bok choy and cook until wilted, 2 to 4 minutes longer.
  • Fold in noodles, tossing until coated with sauce and heated through. Add fish sauce or lime juice to taste, and pass lime wedges at the table. Top with remaining scallions and any of the optional garnishes. Serve with lime wedges on the side. Store the extra curry paste in the refrigerator for up to 3 weeks, or freeze for up to 3 months.
