2 loaves vanilla pound cake
16 tablespoons unsalted butter, room temperature
1 ½ cups sugar
½ teaspoon kosher salt
1 teaspoon vanilla extract
3 large eggs
3 cups all-purpose flour
2 teaspoons baking soda
½ cup whole milk
½ cup strawberry puree
nonstick cooking spray
¼ cup water
¼ cup sugar
½ tablespoon vanilla extract
1 cup white chocolate chip
½ cup heavy cream, hot
red sprinkle
pink heart sprinkle
heart shaped cookie cutter

Steps:

  • Preheat the oven to 350°F (180°C).
  • On a cutting board, slice the ends off the pound cakes, then slice the cakes to the same thickness as the heart-shaped cookie cutter.
  • Cut the centers out of the slices of pound cake with the cookie cutter. Set the hearts aside and discard the scraps or save for another use.
  • In a large bowl, cream the butter, sugar, and salt with an electric hand mixer for 4 minutes, or until fluffy. Scrape down the sides of the bowl with a rubber spatula.
  • Add the vanilla and eggs, 1 at a time, beating to incorporate before adding the next. Scrape down the sides of the bowl again.
  • Sift in the flour and baking soda, then fold to incorporate a bit with a rubber spatula.
  • Continue mixing with the electric hand mixer, streaming in the milk and beating until just incorporated. Add the strawberry puree and beat to combine.
  • Grease a bundt pan with nonstick spray.
  • Add 2 cups of cake batter to the bundt pan and smooth the top with a spatula. Place the pound cake heart cut-outs around the pan, points up, submerging in the batter by about ½ inch (1 ¼ cm.) Add the rest of the batter, then gently tap the pan against the counter 2-3 times to release any air bubbles.
  • Bake for 45 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let the cake cool for 30 minutes, then invert onto a wire rack set over a baking sheet.
  • Make the vanilla simple syrup: In a small saucepan over medium heat, combine the water, sugar, and vanilla. Cook until the sugar is completely dissolved and the mixture reaches a gentle boil. Remove from the heat and set aside to cool.
  • Make the white chocolate ganache: In a medium bowl, pour the heavy cream over the white chocolate chips. Whisk until completely smooth.
  • Using a skewer, poke holes all over the cake, then brush with the vanilla simple syrup.
  • Pour the white chocolate ganache over the cake. Decorate with sprinkles.
  • Slice the cake to reveal the hidden hearts, then serve.

1 pint fresh strawberries
1/2 cup (1 stick) unsalted butter, softened
1-1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (3 ounce) box strawberry flavored gelatin (1 tablespoon reserved for frosting)
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup whole milk
1/2 cup unsalted butter, softened
1 (8 ounce) cream cheese, softened
1 tablespoon strawberry flavored gelatin
2 cups powdered sugar
Fresh strawberries, for garnishing, if desired

Steps:

  • Preheat oven to 350°F. Line the bottom of one 8-inch round cake pan and one 8-inch square cake pan with a piece of parchment paper cut to fit. Lightly grease and flour both cake pans and set aside.
  • Wash the strawberries, remove the stems and cut them into quarters. Place the strawberries in a shallow bowl and mash gently with the back of a fork until all strawberries are mashed and some juices are released. Set aside.
  • In the bowl of an electric mixer, beat the butter and sugar until smooth. Add the eggs, one at a time, and beat until well combined. Beat in the vanilla extract.
  • In a separate bowl, whisk together the flour, all but 1 tablespoon of the strawberry gelatin package, baking powder and salt. With the mixer on low speed, alternate adding the flour mixture and the milk, ending with the flour mixture, until well combined and batter is smooth. With the mixer on low, beat in the mashed strawberries and their juices.
  • Divide batter evenly between the prepared cake pans. Bake cakes for about 30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans 20 minutes before running a knife around the edge and turning the cakes out onto a wire rack to cool completely.
  • Once cakes are cooled, cut the round cake in half. Place the square cake on a large cake stand or platter so that it look like a diamond when you're looking at it. Place the half circle cakes on the top flat sides of the diamond to create a heart shape. See step-by-step images.
  • To make the frosting beat the butter and cream cheese in the bowl of an electric mixer until smooth. Add the remaining 1 tablespoon strawberry gelatin and powdered sugar and mix on low speed until just combined. Turn the mixer to medium-high speed and beat frosting until fluffy. Add additional powdered sugar if frosting is too thin to spread.
  • Spread frosting evenly over the top and sides of the cake. Cut and serve. Store in the refrigerator.

1 ½ cups strawberry, hulled and quartered
2 teaspoons lemon juice
½ cup sugar
nonstick cooking spray, for greasing
1 box chocolate cake mix
1 cup water
½ cup canola oil
3 large eggs
3 jars chocolate frosting, in a piping bag fitted with a medium round tip
¼ cup semi-sweet chocolate chips, melted
2 cups semi-sweet chocolate chips
½ cup heavy cream, divided
8 whole strawberries
2 parchment papers, 10 in squares

Steps:

  • Make the strawberry sauce: Add the strawberries, lemon juice, and sugar to a small saucepan over medium heat. Cook for about 8 minutes, stirring occasionally, until the strawberries have softened but are still vibrant red.
  • Strain the strawberry mixture through a fine-mesh sieve into a medium bowl. Use a spatula to press the juice out of the berries. Discard the pulp and set the sauce in the refrigerator to cool.
  • Make the cake: Preheat the oven to 350°F (180°C). Grease 2 8-inch (20 cm) round cake pans with nonstick spray and line with parchment paper.
  • In a medium bowl, whisk together the cake mix, water, canola oil, and eggs until smooth. Divide the batter evenly between the prepared pans.
  • Bake the cakes according to the package instructions, until a toothpick inserted in the centers comes out clean. Let cool completely.
  • Place one of the cooled cakes on a cutting board on top of a 10-inch (25 cm) square of parchment paper. Carefully trim off the domed top of the cake so it is level. Use a sharp knife to lightly make an X across the cake. Using the X as a guide, trim the top and bottom of the cake to create straight edges, discarding the trimmings. Cut the top triangle of the cake out, and place on the bottom, so it aligns neatly along the bottom edge. Trim the top points of cake so they become rounded, to create a heart. Use a pencil to trace the heart on the parchment. Move the cake pieces and parchment aside, reserving the parchment for later use. Repeat with the remaining cake.
  • On a rimmed serving platter, build the cake: Transfer one of the heart cakes to the platter. Pipe a strip of chocolate frosting to attach the top and bottom of the heart. Pipe a layer of frosting over the top of the cake. Stack the remaining cake layer on top and repeat frosting.
  • Pipe frosting onto the sides of the cake and use an offset spatula to spread evenly over the entire cake. Pipe a thick ¾-inch (2 mm) tall border around the top edge of the cake. Make sure there are no gaps. Chill the cake in the refrigerator for at least 30 minutes.
  • Place the parchment with the traced heart on a baking sheet. Pour the melted chocolate into the center of the traced heart, using an offset spatula to fill in evenly. Place the other square of parchment on top. Refrigerate until hardened, at least 20 minutes.
  • Peel back the top sheet of parchment from the chocolate heart and pipe a thin layer of chocolate frosting on top, spreading evenly with an offset spatula. If not using immediately, cover with the second piece of parchment paper again and place in the refrigerator until ready to assemble the cake.
  • Remove the cake from the refrigerator and carefully pour in the strawberry sauce into the bordered top until nearly full. Carefully place the frosting-coated chocolate heart on top of the frosting border. Use the remaining chocolate frosting to carefully fill in the sides between the heart and the cake, then spread another thin layer of frosting over the top. Return to the refrigerator for at least 20 minutes.
  • Make the chocolate ganache: Combine the chocolate chips and ¼ cup (60 ml) heavy cream in a microwave-safe medium bowl. Microwave on medium power for 1½ minutes, then let sit 2 minutes. Stir until smooth. Add the remaining ¼ cup (60 ml) heavy cream and stir to incorporate. Let cool at room temperature for 10-15 minutes, stirring occasionally, until just slightly warm to the touch, but still runny.
  • Remove the cake from the refrigerator. Pour about ½ cup of the ganache in the center of the cake. Use an offset spatula to lightly push to the edges, allowing some of the ganache to drip over the sides. Add more ganache as needed. Refrigerate for 5 minutes.
  • Dip the strawberries in the remaining ganache and arrange around the edges of the cake. Refrigerate for at least 20 minutes, until completely set, or until ready to serve.
  • Slice and serve.

1 box (21 oz) Immaculate Baking Co.™ Chocolate Cake Scratch Mix
1 1/4 cups Milk
4 Eggs
1 1/2 sticks (3/4 cup) Butter, Melted
1 cup Fresh Strawberries, stems and leaves removed
2 tablespoons Fresh Lemon Juice
1 cup (2 sticks) Unsalted Butter, softened
4 cups Powdered Sugar
1 tablespoon Milk
1 tablespoon Vanilla
* Chocolate Covered Strawberries, for topping

Steps:

  • Heat oven to 350°F for shiny metal pan or 325°F for dark, nonstick or glass pan. Grease and flour bottoms and sides of 2 heart-shaped pans (or two 9-inch round cake pans or three 8-inch round cake pans).
  • Prepare cake ingredients as directed on cake mix box. Divide batter evenly among prepared pans. Bake 25 to 35 minutes until toothpick inserted in center of cakes comes out clean. Cool cakes 10 minutes in pans, then carefully remove from pans and cool completely on cooling rack, about 1 hour.
  • Meanwhile, in blender or food processor, blend strawberries and lemon juice until fully pureed. Pour puree into small saucepan. Bring mixture to simmer over medium heat and cook, stirring constantly, 10 to 15 minutes until mixture reduces to about 1/4 to ? cup. Cool completely to room temperature.
  • In large bowl or bowl of stand mixer, beat butter and strawberry mixture 1 to 2 minutes on medium speed until smooth and creamy. Beat in powdered sugar on medium speed 1 cup at a time, beating well after each addition until mixture is smooth. Add milk and vanilla; stir to combine. Increase speed to high and beat 1 minute more until frosting is creamy and fluffy.
  • Place 1 cake layer on serving plate. Frost top with generous amount of frosting. Top with remaining cake layer; frost top and sides with remaining frosting. Decorate with chocolate-covered strawberries, if desired. Store leftovers tightly covered in refrigerator up to 3 days.
  • *To make chocolate-covered strawberries, melt 1/2 cup semisweet chocolate chips and 1 tablespoon vegetable oil in small saucepan over low heat, stirring constantly until smooth. Dip strawberries halfway into chocolate mixture, then transfer to wax paper or parchment paper-lined baking sheet. Chill in refrigerator 30 minutes to set.

I found this recipe on Diana's Desserts and she says it should be made with an Elegant Heart Cake Pan by Nordic Ware. It can be purchased online or at JCPenney's. She made it for her husband on Valentine's Day in 2005 and she calls it a winner! It looks awesome in the picture! The cake takes a long time to cool but it is worth it, I guess!

1 2/3 cups granulated sugar
1 1/4 cups unsalted butter, at room temperature, cut into small pieces

  • Preheat oven to 325F(160.
  • Butter and flour a 10 or 12 cup bundt or heart shaped cake pan.
  • In a large bowl, blend the eggs and granulated sugar.
  • Using an electric mixer, beat in the butter & liqueur until fluffy.
  • Add all but 2 tablespoonns of the flour and baking powder and salt, and beat until well incorporated and no lumps remain.
  • In another bowl, combine 1-1/2 cups(chopped) strawberries and the remaining 2 tablespoons flour.
  • Toss to coat the strawberries evenly with the flour.
  • Using a rubber spatula, gently fold the berries into the batter.
  • Pour the batter into the prepared pan and level top with rubber spatula.
  • Bake 60 minutes or until a wooden skewer inserted in the center of cake comes out clean.
  • Transfer the pan to a wire rack and let the cake cool in the pan for 20-25 minutes.
  • Unmold the cake onto the rack and let cool completely.

1 Classic Pound Cake, or store-bought pound cake
2 large eggs
1 large egg yolk
1/2 cup sugar plus 3 tablespoons sugar
Coarse salt
2 pints strawberries, hulled and halved, plus 4 whole strawberries, thinly slices crosswise, for garnish
1 teaspoon freshly squeezed lemon juice
1/4 cup heavy cream
Confectioners' sugar, for dusting

Steps:

  • Slice pound cake crosswise into four 1/4-inch-thick slices, reserving any remaining pound cake for another use. Insert a 3-inch heart-shaped mold into each slice and remove any of the cake that remains around the outer edge of the cutter. Transfer cutters, with cake in the bottom to a parchment paper-lined baking sheet; set aside.
  • Fill a medium saucepan with about 2 inches of water and bring to a boil; reduce to a simmer. In the heatproof bowl of an electric mixer, combine the eggs, yolk, 3 tablespoons sugar, and a pinch of salt. Set bowl over, but not touching, simmering water and whisk until egg mixture reaches 140 degrees on an instant-read thermometer. Transfer bowl to an electric mixer fitted with the whisk attachment, and whisk until mixture is thickened and forms ribbons.
  • Meanwhile, in the bowl of a food processor, combine 2 pints strawberries, remaining 1/2 cup sugar, lemon juice, and a pinch of salt. Pulse until finely chopped; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat heavy cream until soft peaks form. Fold whipped cream into yolk mixture, along with 1/4 of the strawberry mixture, until well combined. Top the cake-filled molds with the yolk mixture, smoothing out the top so that it is even with the molds. Transfer to a freezer and freeze overnight. Refrigerate remaining strawberry mixture overnight.
  • Remove parfaits from freezer. Push strawberry parfaits from molds to remove, using a hot towel, if necessary. Let parfaits stand for 20 minutes.
  • Cover the bottom of each of four dessert plates with remaining strawberry mixture; top with parfait. Dust with confectioners' sugar and fan strawberry slices on top of parfaits; serve immediately.

I got this recipe out of a Taste of Home book last summer and I love this recipe. I made it for a BBQ and my daughter requested it as a birthday cake. I've also used strawberries and blueberries for 4th of July celebration. The recipe recommends slicing the cake with a serrated knife. To split the cake into three layers I use dental floss - Makes a nice clean cut.

1 cup egg white (about 7)
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 1/2 cups sugar, divided
5 egg yolks
2 tablespoons water
1/2 teaspoon almond extract
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 (3 ounce) package strawberry gelatin
1 cup boiling water
1/2 cup ice water
1 pint fresh strawberries, sliced
1 (8 ounce) carton frozen whipped topping, thawed and divided
1 pint fresh strawberries, for garnishment (optional)

Steps:

  • In a large mixing bowl, beat egg whites, cream of tartar and salt until soft peaks form.
  • Gradually add 1 cup sugar, a tablespoon at a time, beating until stiff peaks form; set aside.
  • In another bowl, beat egg yolks until slightly thickened, about 5 minutes.
  • Gradually add remaining sugar, beating until thick and lemon-colored.
  • Blend in water and extracts.
  • Sift flour over batter; beat until smooth.
  • Fold in egg whites just until blended.
  • Spoon into an ungreased 10-inch tube pan.
  • Cut through batter with a knife to removed air pockets; smooth the top.
  • Bake at 325 degrees for 50-55 minutes or until cake springs back when lightly touched.
  • Immediately invert pan; cool completely.
  • In a large bowl; dissolve gelatin in bowling water. Add ice water and stir.
  • Place bowl in ice water for about 5 minutes or until slightly thickened.
  • Fold in strawberries and 1/2 cup of the whipped topping.
  • Run a knife around the edges of pan to loosen cake.
  • Split the cake horizontally into three layers (I use dental floss); place bottom layer on a serving plate.
  • Spread with half of the gelatin mixture. Repeat with a layer of cake and then the remaining gelatin mixture. Top with remaining cake layer.
  • Frost top and sides with remaining whipped topping. Garnish with strawberries.
  • Store in refrigerator until ready to serve. Refrigerate leftovers.

1 6-ounce box strawberry Jell-o mix
2 cups water, boiled
1 container Cool Whip
1 16-ounce container frozen strawberries in sugar (or 21 oz strawberry pie filling)

Steps:

  • First, let the strawberries and Cool Whip rest on the counter. The strawberries will mix with the Jell-o better if they're not rock hard, and the Cool Whip will incorporate better if it's a little soft.
  • Slice the angel food cake into 1/2 to 1-inch pieces using a serrated knife, and spread half of the angel food cake pieces on the bottom of the 9×13 inch dish. (Or a fun glass dish like a trifle bowl.)
  • Bring two cups of water to a boil. In a large mixing bowl, combine the water and Jell-o powder. Stir until fully combined.
  • Then, add the frozen strawberries and stir, breaking up the chunks until they have melted. Fold the Cool Whip a few dollops at a time into the strawberry mixture, stirring gently to combine without deflating the dessert. Again, you can leave it a little less than uniformly combined, but you want it well-mixed.
  • Spread half the mixture over the cake. Add the remaining cake, then cover with the remaining mix. Spread to ensure the cake is fully covered.
  • Alternatively, you can combine all the cake and mix in a large bowl. You may prefer this method if you're serving the dessert in a trifle or glass bowl.
  • Chill in the fridge four hours or overnight. If the cake feels wet or jiggles, it's not set.
  • To glam it up, you can cover the chilled cake with Cool Whip, or garnish or decorate the top with sliced strawberries.
