BAREFOOT CONTESSA'S CHICKEN PICCATA

- Preheat oven to 275 and line sheet pan with parchment paper.
- Place each chicken breast between 2 sheets of parchment paper and pound to 1/4 inch thick. Sprinkle both sides with salt and pepper.
- Mix the flour, 1 teaspoons salt and 1/2 teaspoons pepper in shallow plate. In a second plate, beat the eggs with 1 Tbls. water. Place the breadcrumbs on a third plate.
- Dip each breast first in the flour, shake off the excess and then dip in egg and then bread crumb mixture.
- Heat 2 Tbls. olive oil in large saute pan over medium heat. Add 2 chicken breasts and cook for 2-3 minutes on each side until browned. Place them on lined pan and place in oven while you cook the rest of the chicken. Heat more olive oil in saute pan and cook the second 2 chicken breasts. Place them on the same lined pan and place in oven for 5-10 minutes while you make the sauce.
- For the sauce, wipe out the saute pan with a dry paper towel. On medium heat, melt 1 Tbls. of the butter and then add the lemon juice, white wine, the reserved lemon halves, 1/2 teaspoons salt and 1/4 teaspoons pepper.
- Boil sauce over high heat until reduced by half which will be about 2 minutes. Remove from heat and add remaining 2 Tbls. butter and swirl to combine. Discard the lemon halves. Serve one chicken breast on each plate and spoon on the sauce with a sprinkling of fresh parsley.

Steps:
- Preheat the oven to 400 F.
- Grease a shallow 3-quart casserole dish with butter.
- Boil salted water in a large saucepan.
- Add 1/2 cup of the cheddar cheese to the broccoli.
- Drain well, cool under cold running water, and pat very dry.
- Set the broccoli aside.
- Melt 4 tbsp of butter in a large saucepan set over medium heat.
- Stir the sage and flour into the melted butter and cook them for 1 minute.
- Cook the roux, whisking frequently, for approximately 2 to 3 minutes, without letting it brown.
- Add the sherry (or broth) and cook for 1 minute until reduced.
- Add the broth, milk, heavy cream, nutmeg, and salt and pepper to taste.
- Simmer the mixture, while whisking occasionally, until thickened, about 6 to 7 minutes.
- Add the scallions and gruyere to the sauce and stir until the cheese is melted. Remove from the heat.
- Toss the sauce with the broccoli, chicken, and almonds in a large bowl and toss until well combined.
- Pour the chicken mixture into the prepared casserole dish.
- Microwave the remaining 1 tbsp butter in a small bowl. Stir in the Parmesan and breadcrumbs.
- Sprinkle the mixture on top of the casserole.
- Bake for 35 minutes or until browned and bubbly.
- Serve with your favorite sides.

INA GARTEN CHICKEN CASSEROLE
Steps:
- Preheat the oven to 375oF and coat a large ceramic casserole dish with nonstick cooking spray.
- Next, layer the bottom of the casserole dish with minute brown rice, broccoli florets, yellow onion, carrots, and green peas.
- In a small saucepan, combine the broth and milk to make the cheese sauce. Warm-up over medium heat.
- Reduce the heat to low/medium and stir in 6 oz. shredded cheddar cheese, garlic powder, salt, and pepper. Continue to whisk until the cheese melts and the cheese sauce forms.
- Pour over rice and vegetables and toss to combine.
- Next, cut the chicken breasts into 1-inch pieces and put them in the casserole dish, making sure they are well covered in cheese sauce.
- Bake for 30 minutes, uncovered, at 375oF.
- Then, cover the casserole dish with 2 oz. shredded cheddar cheese and 1 oz. shredded parmesan cheese and bake for an additional 15-20 minutes.
- Allow the dish to sit on the burner for 15-20 minutes before serving to thicken more.

CHICKEN STEW WITH BISCUITS
Steps:
- Preheat the oven to 375 degrees F.
- Place the chicken breasts on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken.
- In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and the heavy cream. Add the cubed chicken, carrots, peas, onions, and parsley. Mix well. Place the stew in a 10 x 13 x 2-inch oval or rectangular baking dish. Place the baking dish on a sheet pan lined with parchment or wax paper. Bake for 15 minutes.
- Meanwhile, make the biscuits. Combine the flour, baking powder, salt, and sugar in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is the size of peas. Add the half-and-half and combine on low speed. Mix in the parsley. Dump the dough out on a well-floured board and, with a rolling pin, roll out to 3/8-inch thick. Cut out twelve circles with a 2 1/2-inch round cutter.
- Remove the stew from the oven and arrange the biscuits on top of the filling. Brush them with egg wash, and return the dish to the oven. Bake for another 20 to 30 minutes, until the biscuits are brown and the stew is bubbly.
COOKED CHICKEN FOR RECIPES - BAREFOOT CONTESSA STYLE
I always poached chicken when I needed cooked for a recipe -- and I never liked the way it came out. I was watching Ina's show on the Food Network last weekend and this is how she cooks her chicken for recipes. I tried it and it was the most moist chicken I have ever had. I used it in chicken noodle soup -- YUM!!! The recipe can be increased or decreased depending on how much cooked chicken you need. UPDATE 7/31/07 -- I tried this method on boneless, skinless chicken breasts and it worked great -- I baked for about 35 minutes and it was cooked perfectly!
