A wonderful, quick, and inexpensive recipe for those time crunched dinners. Just throw together and bake. Adjust your seasonings for your own taste.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.
- Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
- Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

BARBECUE BEEF BAKE
Steps:
- Preheat oven to 400°F. Cook ground beef and 1/2 cup of onion in 10" inch skillet until golden brown, drain. Stir in barbecue sauce.
- Spoon into ungreased 13x9x2 baking dish or foil pan. Sprinkle with cheese.
- Stir Bisquick, milk, and eggs until well blended and pour over beef and cheese mixture. Sprinkle with remaining onion.
- Bake 30 minutes or until golden brown.

- In a small bowl, combine the first 11 ingredients. Stir in Liquid Smoke if desired. Place roast on a rack in a shallow roasting pan; pour ketchup mixture over the top., Cover and bake at 325° for 2-1/2 to 3 hours or until meat is tender. Remove meat to a serving platter and keep warm. Skim fat from pan juices and thicken juices if desired. Serve with beef.

- Preheat oven to 300 degrees.
- Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.

- Heat oven to 350°F. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
- Make potatoes as directed on pouch, using water, milk and butter. Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.

Steps:
- Heat oil in non-stick skillet.
- Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
- Add ground beef and cook, stirring occasionally until cooked through.
- Add tomatoes and season with salt and pepper.
- Add barbecue sauce and cook until all is well-coated. Remove from heat.
- Preheat oven to 350ºF.
- Spray a large baking pan with cooking spray.
- Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
- Cover with foil and bake 40 minutes.
- Uncover and top with remaining cheese.
- Bake, uncovered, until potatoes are cooked through, about 15 minutes more.
- Serve immediately.
