BBQ PULLED PORK SANDWICHES

BBQ Pulled Pork Sandwiches image

This meal is one we always eat too much of. I recommend using Sweet Baby Ray's or Jack Daniel's original BBQ sauce. A good quality sauce makes a lot of difference. I serve it with my Sweet, Creamy Coleslaw #100526.

Yield Makes 6 to 8 sandwiches

Number Of Ingredients 12

16 cloves garlic, peeled
2 small yellow onions, coarsely chopped
1 large carrot, peeled and chopped
1 large rib celery, chopped
3 tablespoons ground cumin
1/4 cup coarse salt
1 (5-pound) pork butt
4 cups Barbecue Sauce
Shredded iceberg lettuce, for serving
6 to 8 ciabatta rolls, halved horizontally, soft centers removed, toasted, for serving
Garlic Dill Pickles, for serving
Coleslaw, for serving

Steps:

  • Place garlic, onions, carrot, celery, cumin, and salt in the bowl of a food processor; process until smooth. With the motor running, slowly add 1/2 cup water; process until well combined. Place pork in a large, deep roasting pan. Rub pork generously with vegetable puree; cover and refrigerate for at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees.
  • Add enough water to the roasting pan so that it comes halfway up the sides of the pork. Cover pan tightly with parchment paper-lined aluminum foil and transfer to oven. Bake until pork is very tender and falling apart, about 5 hours, checking pan occasionally to make sure water has not evaporated and adding more water as necessary.

  • Increase oven temperature to 400 degrees.
  • Shred pork with a fork or pull apart using your fingers; discard any excess fat. In a large baking dish, combine shredded pork with 3 cups barbecue sauce. Transfer to oven and cook until mixture is heated through and bubbly, 5 to 10 minutes.
  • Divide pork and shredded lettuce evenly among rolls. Serve with remaining cup of barbecue sauce, pickles, and coleslaw.

PORK BANH MI

Pork Banh Mi image

Marinated pork tenderloin grilled to perfection topped with quick pickled veggies, cilantro, & flavorful mayo makes a mouthwatering Pork Bank Mi Sandwich.

Provided by Lauren Schmidt

Time 1h30m

Number Of Ingredients 12

1 (1lbs) Pork Tenderloin
1 cup carrots, shredded (2 carrots)
1 english cucumber, sliced thin
5 tablespoons rice vinegar
2 tablespoons fish sauce
3 teaspoons brown sugar
3 teaspoons sriracha
1 cup mayo
2 tablespoons lime juice
½ teaspoon + dash garlic powder
1 cup cilantro
1 large loaf french bread

Steps:

  • For the Pork Tenderloin: To make the marinade, add 2 tablespoons rice vinegar, 1 tablespoon fish sauce, 1 teaspoon brown sugar, 1 teaspoon sriracha, & ½ tsp garlic powder to a large bowl or sealable bag. Mix marinade together and add pork tenderloin. Marinate at least 1 hour or as long as overnight.
  • For the Quick Pickled Vegetables: In a large bowl mix 3 tablespoon rice vinegar, 1 tablespoon fish sauce, 2 teaspoons brown sugar together until sugar is dissolved. Add shredded carrots and sliced cucumbers. Mix together well until vegetables are fully coated in the liquid. If making ahead of time cover and refrigerate until ready to use. If not, keep the bowl with a mixing spoon on the counter, give the vegetables a stir in the liquid every so often as you make the rest of the meal.
  • To Make the 2 Flavorful Mayos: Divide the mayo evenly between to 2 small bowls. Add remaining sriracha to one of the bowls and the lime juice and a dash of garlic powder to the other. Mix each bowl separately until a smooth sauce forms. Set aside (in fridge if necessary) until ready to use.
  • Pre-heat grill to high. Remove pork from the marinade, allowing any access marinade to drip off. Place over direct heat. Grill 4 minutes, rotate pork tenderloin. Grill 4 more minutes. Rotate again, grilling another 3-4 minutes until internal temperature reaches 145º F in the thickest part of the cut. Remove from the grill and cover (with tin foil), let rest 3 minutes.
  • While the pork is resting slice french bread loaf in half the long way. Turn grill to low and place bread on the grill cut side down, grill 1-2 minutes until warm and slightly toasted.
  • Thinly slice the grilled pork tenderloin into slices for the sandwich, cut against the grain, pork should be slightly pink in the center.
  • To build the sandwich, cilantro to the bottom of the loaf of bread followed by the pickled vegetables (drained). Add the sliced pork over vegetables. Close sandwich and using a serrated knife cut into 4 pieces.
  • Serve sandwich with the sweet and spicy mayos allowing each person to choose the sriracha or lime mayo to spread on the top piece of bread.

SLOW COOKER BBQ PORK SANDWICHES

Slow Cooker BBQ Pork Sandwiches image

Crockpot BBQ Pork Sandwiches are a must make recipe for any busy family. These SLOW COOKER BBQ PORK SANDWICHES are the ultimate fun finger food for any party! Use the meat for sliders, stuff them into quesadillas, or eat it over rice. The possibilities are endless!

Provided by Becky Hardin - The Cookie Rookie

Categories     Main Course

Time 8h10m

Number Of Ingredients 12

6 pound pork shoulder (skin on and bone in)
16 oz. jar BBQ sauce (divided *See Note. (Blue's Hog BBQ Sauce is my personal favorite))
1 yellow onion (peeled & quartered)
½ head of cabbage
2 medium carrots (peeled & trimmed)
½ cup mayonnaise
¼ cup apple cider vinegar
¼ cup granulated sugar
1 teaspoon kosher salt
½ teaspoon ground black pepper
¾ teaspoon celery seed
1 teaspoon dried chives (or 2 teaspoons fresh, minced)

Steps:

  • Spray inside of slow-cooker with non-stick cooking spray.
  • Pour an inch of barbeque sauce into the bottom of the slow-cooker crock.
  • Score the fat on top of the roast in a crisscross pattern, being sure to cut through the fat layer.
  • Place the roast in the slow-cooker and pour 8 ounces of BBQ sauce over the roast.
  • Place the onion wedges around the roast.
  • Cover the slow-cooker with the lid. Set the temperature to HIGH and cook the roast (unopened) for 6 hours or until the meat can easily be pierced with a fork.
  • Transfer the roast to a cutting board, remove the fat layer, and use two forks to pull it apart. (Thus, the name, 'Pulled Pork")
  • Serve on buns and extra BBQ sauce or, if desired, place the pulled pork into a large bowl and mix it together with extra BBQ sauce to taste.
  • Serve pulled pork with coleslaw on sandwich buns.
  • Remove the core and outer layers from the cabbage. Cut the cabbage into pieces sized to fit into a food processor. Grate the cabbage in the food processor or with a grater. If no food processor is available, slice the cabbage very thin, and chop it until the pieces are very small.
  • Grate the carrots the same size as the cabbage.
  • Combine the grated cabbage and carrots and season with salt. Place the vegetables in a colander/strainer and set it over a large plate to drain for an hour.
  • After an hour, squeeze the cabbage by twisting it in a clean dishtowel to remove as much moisture as possible.
  • Combine the sugar and apple cider vinegar. Whisk together until sugar has dissolved. Add mayonnaise, celery seed, black pepper and chives. Whisk again, taste and adjust seasonings, if needed. *See note.
  • Squeeze the cabbage again and add it to the dressing. Mix until well combined.
  • Serve.
  • Serve coleslaw with pulled pork on sandwich buns.
  • Enjoy!
