12 whole chicken wings (about 2-1/2 pounds)
1 bottle (8 ounces) Italian salad dressing
1/2 to 3/4 cup hot pepper sauce
1/8 to 1/2 teaspoon cayenne pepper
2 tablespoons butter, melted

Steps:

  • Cut chicken wings into three sections; discard wing tips. , In a bowl, combine salad dressing, pepper sauce and cayenne. Remove 1/2 cup for basting; cover and refrigerate. Place remaining sauce in a large resealable plastic bag; add chicken and turn to coat. Cover and refrigerate overnight. , Discard marinade. Grill wings, covered, over medium heat for 12-16 minutes, turning occasionally. Add butter to the reserved sauce; brush over wings. , Grill, uncovered, 8-10 minutes longer or until juices run clear, basting and turning several times.

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • Bend the wings and tuck the tips under the large joint to form a triangle.
  • Season the chicken wings on both sides with salt and pepper.
  • Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
  • Bake the chicken wings, turning once, until browned, about 45 minutes.
  • Remove the wings from the oven.
  • Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
  • Return the wings to the pan.
  • Pour the barbecue sauce over the chicken wings and return to the oven.
  • Bake for 10 minutes.
  • Turn the wings over and bake 10 minutes longer.
  • Serve hot, at room temperature, or cold.

  • For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in pepper sauce. 1 tablespoon salt
1 tablespoon red hatch chile powder
1 tablespoon smoked paprika
1 teaspoon ground black pepper
1 teaspoon granulated sugar
1/2 teaspoon granulated onion
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 cup white vinegar
2 tablespoons apple juice
2 tablespoons ketchup
2 teaspoons dark brown sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon chile flakes
1/4 teaspoon paprika
1/4 cup (4 tablespoons) butter
1/4 cup hot sauce, such as Frank's RedHot

  • Pat the wings dry, then toss with the All-Purpose Poultry Seasoning. Let sit for 15 minutes.
  • Preheat a grill to medium low (about 250 degrees F).
  • Once the grill is up to temperature, place the wings on the upper rack in the grill and cook with the cover closed for 15 to 20 minutes, or until the internal temperature is around 150 degrees F. Once the chicken wings reach the desired temperature, increase the temperature of your grill to medium high (about 400 degrees F). Spray your grill grates with nonstick grill spray, then place your wings onto the hot grates and cook to create a nice char on each side of the wings, until the final temp reaches 165 degrees F, about 1 minute per side.
  • Transfer the wings from the grill to a mixing bowl with the Buffalo BBQ Wing Sauce and toss to coat. Serve with the Blue Cheese Yogurt Dip (or your favorite ranch or blue cheese dressing) and carrots and celery sticks.
  • Combine the salt, chile powder, paprika, black pepper, granulated sugar, granulated onion, garlic powder and thyme in a mixing bowl and stir to evenly incorporate.
  • Combine the vinegar, apple juice, ketchup, brown sugar, salt, black pepper, chile flakes and paprika in a nonreactive container and whisk to combine.
  • Melt the butter over medium heat. Transfer to a mixing bowl, add the vinegar mixture and hot sauce and whisk to emulsify.
  • Combine the mayonnaise, yogurt, blue cheese, buttermilk, lemon juice, garlic powder, granulated onion, black pepper and salt and mix well. Cover and store in the refrigerator until ready to use. Great as a dip or dressing.

1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
3 pounds whole chicken wings
6 tablespoons unsalted butter
1/3 cup hot sauce
1 tablespoon apple cider vinegar
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
  • Preheat a gas grill to medium heat (about 350 degrees F).
  • Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
  • In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
  • In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

1 bag of Chicken (with first and second wing sections)
Texas Pete
Salt
Pepper
Vegetable oil
Barbecue Sauce

Steps:

  • First, I always wash my chicken. Then I put down a piece of foil, and place a paper towel on top of it to dry my chicken.
  • Always rememeber to bleach down your countertops and sink, you don't want any contamination from the chicken.
  • Now, I'm going season my chicken. I like to use salt, pepper, and since I'm Southern, I also use Texas Pete Hot Sauce.
  • After you finish seasoning your wings, you will want to put oil in your pot. *Do Not Flour Your Chicken*
  • Add your chicken wings to the hot oil, in order to begin frying them.
  • When your wings begin to bubble to the top, remove them from the pot.
  • You will want to butter a pan and then add your wings.
  • Add your choice of barbecue sauce and more hot sauce if desired. Place them in the oven on 350 degrees for about 5 minutes. Your wings are already done, so don't leave them in any longer. They're placed in the oven, in order to get a nice sear on them.
  • When your wings are done, carefully take them out of the oven and allow them to cool.
