2 tablespoons vegetable or peanut oil, plus more for oiling the grill grates
8 bone-in skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons finely grated peeled fresh ginger
2 cloves garlic, chopped
1/2 cup ketchup
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons toasted sesame oil
2 teaspoons soy sauce
1 1/2 teaspoons Asian chili garlic sauce
Cooked broccoli and white rice, for serving

Steps:

  • Preheat an outdoor grill for medium heat.
  • Sprinkle the chicken thighs generously with salt and pepper. Lightly oil the grill grates. Grill the chicken until grill marks appear and an internal temperature of 170 degrees F, about 15 minutes per side.
  • While the chicken cooks, make the sauce: Heat the vegetable oil in a small saucepan over high heat. Add the ginger and garlic and cook until soft, 1 to 2 minutes. Add the ketchup, hoisin, sherry, sesame oil, soy sauce and chili garlic sauce. Whisk until smooth and bring to a boil. Remove from the heat and let cool.
  • Brush the chicken thighs with about 1/2 cup of the sauce several times in the last 5 minutes of cooking time. Serve the chicken with the extra sauce and with cooked broccoli and white rice.

2 Cornish game hens, halved
1 cup hoisin sauce
2 cups red wine
1/2 bunch scallions, chopped
1 tablespoon fresh ginger, chopped
2 teaspoons minced garlic
1 tablespoon sesame oil

Steps:

  • Place the hens in a baking dish. Mix the red wine, scallions, ginger, garlic and sesame oil together in a bowl and pour the marinade over the hens. Cover and refrigerate the hens for 1 to 2 days.
  • Preheat grill to medium heat. Place the hens on the grill bone side down and grill, covered, about 10 minutes. Gently turn them over and continue grilling for another 10 to 15 minutes or until the juices run clear. Let the hens rest for 5 minutes before serving.

3 lbs bone-in chicken breasts
2 tablespoons rice vinegar
2 tablespoons low sodium soy sauce
1 teaspoon dark sesame oil
1 teaspoon grated ginger
1/4 cup hoisin sauce
1/4 cup ketchup
2 tablespoons low sodium soy sauce
2 tablespoons honey
1 teaspoon grated ginger
1 teaspoon dark sesame oil
1 tablespoon toasted sesame seeds
2 -3 cups uncooked mai fun rice noodles (optional)
cooking oil (as needed) (optional)

Steps:

  • The night before preparing food, mix together marinade ingredients in a small bowl.
  • Place chicken in a ziplock bag and add marinade and seal, removing as much air as possible.
  • Refrigerate overnight, turning occasionally.
  • The next day, well before preparing food, heat oil to a depth of 2-inches at 375-400F in a large skillet or use a deep fryer.
  • Add small amounts of mai fun to hot oil and allow them to cook briefly (they will puff like rice cereal and float to the top almost instantly); remove them and drain as soon as they do this and set aside to use later.
  • Whisk together ingredients for sauce in a small saucepan and bring to a boil; lower heat and simmer for 3-4 minutes then remove from heat and allow to cool.
  • Bring chicken out of refrigeration and allow to warm to room temp- 30-45 min, then drain from marinade, reserving marinade.
  • Bring marinade to a boil in a saucepan, lower heat, and simmer for 2-3 minutes, then allow to cool (if it gets too thick, add a little water); use for basting chicken as it cooks.
  • Prepare grill, allowing for cooking with indirect heat.
  • Grill chicken using an indirect heat method, preferably charcoal, 45 min-75 min, depending on grill temp, or until chicken reaches an internal temp of at least 170F in the thickest part of the breast, basting occasionally.
  • As chicken nears doneness, apply sauce mixture to chicken and allow to glaze and cook onto it, then remove chicken from grill.
  • Sprinkle chicken with toasted sesame seeds.
  • Arrange a bed of puffed mai fun on a serving plate and arrange chicken on top of it; serve at once with other foods as desired.

BARBECUED HOISIN CHICKEN

A hot, spicy barbecue chicken adapted from Ming Tsai. This is a recipe that you need to start the night before with the marinade. The Sambal Olek is a ground chili paste and gives it the zing. I buy the brand with the red rooster on the label with the green lid. Reduce the quantity if you want it less spicy, but it does mellow overnight. This also adapts well for a delicious chicken wing appetizer.

2 cups hoisin sauce
4 tablespoons sambal oelek
2 bunches scallions, white and green parts chopped
1 cup dry red wine
1/2 cup finely chopped garlic
1/2 cup finely chopped fresh ginger
2 teaspoons fresh ground black pepper
8 chicken pieces (I use the thighs with legs)
salt

Steps:

  • In a non-reactive baking dish, or large ziploc bag just large enough to hold the chicken, combine the hoisin sauce, sambal olek, scallions, wine, garlic, ginger, and pepper and mix.
  • Add the chicken, turn to coat, cover, and marinate overnight.
  • Next day, remove chicken and discard marinade.
  • Heat an outdoor grill or preheat the broiler.
  • Spray the grill with nonstick cooking spray.
  • Season the chicken with the salt and grill or broil it.
  • Turn once, until brown and the juices run clear when pricked with a fork at the joint, about 15 minutes depending on how big your pieces are.
  • Serve with a tangy, Asian-style coleslaw.

Note: when preparing orange zest, only use the orange part, the white part is very bitter and does not go into the recipe. You can marinate the chicken up to 24 hours in the refrigerator.

1 cup fresh raspberries or 1 cup frozen raspberries
3/4 cup hoisin sauce (thick spicy or sweet sauce found in the Asian section of your store)
5 tablespoons rice vinegar, divided
1 garlic clove
1 strip orange zest (2 by 1/2 inch long)
1 tablespoon fresh ginger, chopped
1/8 teaspoon fresh ground black pepper
1 pinch crushed red pepper flakes (to taste)
1 1/2 lbs boneless chicken thighs, skinless, trimmed, each cut into 3 crosswise strips
2 1/2 cups water
1 cup long grain brown rice or 1 cup short grain brown rice
1/2 cup sliced scallion top, divided (not the tops)

Steps:

  • Combine raspberries, hoisin sauce, 3 tablespoons rice vinegar, garlic, orange zest, ginger, pepper, and crushed red pepper in a blender or food processor. Blend or process until smooth, about 1 minute. Set aside 1/4 cup for a dipping sauce.
  • Transfer the remaining marinade to a medium bowl and add chicken; stir to coat. Cover and refrigerate for at least 2 hours and up to 24 hours.
  • Combine water and rice in a medium saucepan and bring to a bowl. Cover and reduce heat to a simmer and cook until most of the liquid has been absorbed 40 to 50 minutes. Remove from the heat and let stand, covered, until ready to serve.
  • Preheat grill to medium-high or preheat the broiler to high.
  • Meanwhile, remove the chicken from the marinade, scrape off excess(discard marinade), and thread onto 4 skewers, distributing equally.
  • Grill the chicken until browned and cooked through, 3 to 4 minutes per side. If using the broiler, place the chicken on a broiler pan coated with cooking spray and broil 4 inches from the heat source until cooked through, about 5 minutes per side.
  • Just before serving, sprinkle the rice with the remaining 2 tablespoons vinegar and 1/4 cup scallions,fluff with a fork. Sprinkle the chicken and rice with the remaining scallions. Serve with the reserved dipping sauce.

Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."
