Nothing satisfies a crowd quite like ham on the bone, and this delicious barbecue glazed ham recipe is a stunner! It's even cooked on the barbie for easy entertaining!

8 kilogram cooked ham on the bone
30 whole cloves (approximately)
1/2 cup honey
2 tablespoon grainy mustard
1/4 cup orange juice
1/4 cup redcurrant jelly or quince paste
1/4 cup brown sugar

Steps:

  • Preheat a hooded barbecue to 180°C (or follow the barbecue manufacturer's directions for cooking ham).
  • Use a small, sharp knife to cut through the rind at the shank end of the ham. Starting at the bottom of the ham, gently lift off the rind by running your fingers between the rind and the fat. When you reach the scored shank end, gently pull off the rind.
  • Score the fat in a shallow diamond pattern and press a clove into the centre of each diamond.
  • Place the ham on a rack in a large roasting dish. Pour half a cup of water into the dish.
  • Combine the honey, grainy mustard, orange juice, redcurrant jelly or quince paste, and brown sugar in a small saucepan. Cook over a low heat, stirring, until the sugar, paste or jelly have dissolved.
  • Brush half of the glaze over the ham. Place the roasting dish with the ham in the centre of the barbecue, ensuring that only the outside burners are on.
  • Cook at 180°C with the lid on for 45-60 minutes until the ham is golden brown. Brush with extra glaze frequently. If some areas of the ham brown more quickly than others, cover these with small pieces of foil. Add extra water as necessary to the roasting dish.
  • Serve the ham warm or cold. Cover the leftover ham with a clean, damp tea towel and refrigerate. Do not use plastic wrap.

PITTSBURGH HAM BARBECUES

I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

1 small onion, finely chopped
2 cups ketchup
⅓ cup distilled white vinegar

For the Rub:
1 1/2 tablespoons freshly ground black pepper
1 1/2 tablespoons paprika
1 1/2 tablespoons sugar

1/2 to 1 teaspoon cayenne pepper
For the Basting Sauce:
1 cup chicken stock
3/4 cup pineapple juice

1/2 to 3/4 cup honey

Steps:

  • Gather the dry rub ingredients and ham.
  • The night before you smoke the ham, mix together the pepper, paprika, sugar, salt, dry mustard, and cayenne in a small bowl.
  • Rub the spice mixture over the surface of the ham.
  • Wrap the ham in aluminum foil and let it sit in the refrigerator overnight to soak up all the flavors.
  • The next morning, remove the ham from the refrigerator and let it sit for 1 hour.
  • Gather the basting sauce ingredients and ham.
  • Prepare the smoker. You will be smoking at about 210 F/100 C for 5 to 6 hours, or until the ham reaches 140 F . (If you use a digital meat thermometer you can set the temperature to 140 F, and you'll be notified once the ham reaches the desired temperature.)
  • In a saucepan, mix together the chicken stock, pineapple juice, vegetable oil, dry mustard, and ground cloves. Warm basting sauce over medium heat until completely mixed.
  • Score the ham with a sharp knife, scoring in a diamond pattern about 1/4-inch deep.
  • Tent the scored ham with foil to prevent it from drying out, and place ham in the smoker.
  • Baste the ham with the sauce once every hour, recovering the ham with the foil.
  • Gather the glaze ingredients.
  • Mix together the honey, pineapple juice, dry mustard, and a pinch of ground cloves to form the glaze.
  • Brush the ham generously with the glaze a couple of times during the last hour of smoking, re-covering with the foil to prevent drying out. Serve with your favorite sides and enjoy.

1 cup pineapple juice, unsweetened
1/4 cup brown sugar, firmly packed (plus 1 tbsp!!)
1 tablespoon dry mustard
2 tablespoons lemon juice
1 teaspoon onion salt
2 teaspoons soy sauce
2 1/2 inches thick slices smoked ham
4 slices fresh pineapple

Steps:

  • Combine the pineapple juice, brown sugar (don't forget the extra tablespoonful!), mustard, lemon juice, onion salt, and soy sauce in a medium saucepan, stirring well. Bring to a boil, reduce heat. Simmer, uncovered for 5 minutes; stir frequently. Remove sauce from heat, and set aside.
  • Trim any excess fat from the ham slices. Grill over medium coals for 20 to 25 minutes or until desired degree of doneness. While cooking, turn ham slices and baste every 5 minutes with the reserved sauce.

BONE-IN HAM ON THE BARBECUE WITH HONEY-BUTTER GLAZE



Bone-In Ham on the Barbecue With Honey-Butter Glaze image

My husband wanted a Bone in Ham the other day and with my kitchen was between 80 - 90 degrees, I did not want to heat the oven. I could find lots of recipes for steaks but very few for Whole or Bone in Ham. I combined what I found and came up with this.

4 -5 lbs ham shank, bone in
1/2 cup honey
1 ounce light corn syrup
3 tablespoons butter
your favorite smoking wood chips

Steps:

  • Soak your smoking chips in water. Put in a pan, either the one that came with your BBQ or a metal pie tin, place on the hot side of the grill. To create a hot side and a cold side only heat 1-2 burners or put all your charcoal on one side of the grill. Preheat your grill to 325°F.
  • Place bone-in ham cut side down on the cold side of the grill. Insert a meat thermometer not touching the bone. Cook until your meat thermometer reads 145°F (it's ok to go over little).
  • In the meantime prepare your glaze.
  • In a glass measuring cup or microwave proof dish mix Honey, Corn Syrup, and Butter. Microwave on high for 30 seconds. Mix well. Microwave again before using if necessary.
  • When your meat thermometer reads 145°F start glazing your ham. Continue cooking for 10 minutes glazing every 2-3 minutes, you might have left over glaze.

Yes, the whole thing, not just slices! Because I didn't want to put the oven on for 2 hours in this heat, I decided to try it. (I searched the site and the web, but to no avail!) The ham came out juicy and tasty...just like baked ham, really no barbeque taste. So, if it's too hot to have the oven on for hours, try it...it worked out well. I even fried pierogies in butter (in a foil pan) on the other side of the grill to go along with it!!

1/4 cup brown sugar

Steps:

  • Preheat gas grill on high for about 10 minutes.
  • Sit ham on long sheet of heavy duty aluminum foil.
  • Press brown sugar onto ham and wrap tight with foil.
  • Wrap tightly with another sheet of foil.
  • Lower grill temperature to low on both sides.
  • Place ham on top warmer rack (or on lower rack, but place in foil pan so the bottom does not get too dried out).
  • Shut grill lid and allow to cook for about 1 1/2 hours (no need to do anything else to it).
  • Remove foil from ham over a pan so you don't lose the brown sugar juices.

1 teaspoon onion salt

Steps:

  • Combine first 6 ingredients in a medium saucepan, stirring well and bring to a boil.
  • Reduce heat, and simmer, uncovered, 5 minutes; stir frequently.
  • Remove sauce from heat, and set aside.
  • Trim excess fat from ham slices.
  • Grill over medium coals 20 to 25 minutes or until desired degree of doneness.
  • Turn ham slices and baste every 5 minutes with reserved sauce.
  • Grill pineapple slices over medium coals 1 minute on each side.
  • Garnish ham with pineapple, and serve with remaining sauce.
  • Variation Use orange juice and lime juice instead of pineapple juice and lemon juice.

This is one of our favorite pizzas. It's great with regular pizza sauce as well, but the barbecue gives it a delicious new twist which compliments the ham and pineapple perfectly.

1 ½ teaspoons active dry yeast
¾ cup warm water (110 degrees F/45 degrees C)
1 ½ cups all-purpose flour
¾ cup whole wheat flour
3 tablespoons honey
1 ½ tablespoons olive oil
1 ¼ teaspoons salt
2 cups diced cooked ham
½ cup honey barbecue sauce, divided
2 tablespoons butter
1 red onion, halved and thinly sliced
1 clove garlic, minced
1 (8 ounce) can pineapple tidbits, drained
2 cups mozzarella cheese, shredded
½ cup shredded Gouda cheese

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Add the all purpose flour, whole wheat flour, honey, olive oil and salt to the yeast mixture; stir well to combine. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Roll the dough out into a 14 inch diameter circle and place on a 14 inch pizza pan which has been lightly dusted with cornmeal or lightly oiled. Cover with plastic wrap and set aside.
  • Preheat oven to 450 degrees F (230 degrees C). In a small bowl, combine ham and 2 tablespoons barbecue sauce; set aside.
  • Melt butter in a medium saute pan over medium heat. Saute onions and garlic in butter, stirring occasionally, until onions are brown and caramelized, about 15 minutes. Remove from heat and stir in ham and pineapple.
  • Spread remaining 6 tablespoons barbecue sauce over pizza dough. Top with half of the cheeses. Spread on ham mixture. Top with remaining cheese.
  • Bake in heated oven for 15 to 18 minutes, until crust is lightly browned and cheese completely melted. Let pizza sit for 5 minutes before slicing.
