1 cup basmati rice, rinsed
2 teaspoons Madras-style curry powder
Kosher salt
3 1/2 tablespoons vegetable oil
1 medium white onion, quartered
3 cloves garlic
1 2-inch piece ginger, peeled
1 14.5-ounce can diced tomatoes
1 to 2 serrano chile peppers, halved (remove seeds for less heat)
1 pound medium shrimp, peeled and deveined
1/2 cup whole or low-fat plain yogurt
1/3 cup chopped fresh cilantro

Steps:

  • Combine the rice, 1 1/3 cups water, 1 teaspoon curry powder, 1/4 teaspoon salt and 1/2 tablespoon oil in a saucepan. Cover and cook, undisturbed, over medium-low heat, about 15 minutes; keep warm.
  • Meanwhile, chop the onion in a food processor, drain the excess liquid and set the onion aside. Mince the garlic and ginger in the processor and set aside, then puree the tomatoes with 1 cup water.
  • Heat the remaining 3 tablespoons oil in a Dutch oven or deep skillet over medium-high heat. Add the onion and cook until golden, about 12 minutes. Add the garlic-ginger mixture, chiles, 1 teaspoon salt and the remaining 1 teaspoon curry powder and stir-fry until slightly browned, about 3 minutes. Add the tomato puree and simmer until thickened, about 8 minutes. Add the shrimp, cover and cook over medium-low heat until the shrimp are firm, 3 to 4 minutes. Remove from the heat, then stir in the yogurt and half the cilantro.
  • Serve with the rice and garnish with the remaining cilantro.

This is a home-style South Indian shrimp curry recipe from my husband's family. It is simple and quick to make. It contains no coconut so is not sweet, just mostly juicy and as hot as you like it. Serve with basmati rice or an Indian flatbread.

¼ cup vegetable oil
1 large onion, chopped
10 fresh curry leaves
1 tablespoon ginger garlic paste
1 teaspoon ground coriander
⅔ teaspoon salt
½ teaspoon ground turmeric
1 tomato, finely chopped
1 teaspoon ground red chile pepper
2 pounds medium shrimp - peeled and deveined
¼ cup water
1 teaspoon garam masala
chopped fresh cilantro to taste

Steps:

  • Heat the oil in a wok or large saucepan over nearly high heat. Add the onions; cook and stir until browned. Mix in the curry leaves, then season with the ginger garlic paste, coriander and salt. Cook and stir for 1 minute.
  • Season with salt and turmeric, then mix in the tomato, chile powder, shrimp and water. Reduce the heat to medium-high and cook for 7 to 8 minutes, until shrimp are opaque. Taste and adjust salt and chile powder if necessary. Season with garam masala, stir and remove from the heat. Garnish with fresh cilantro and serve with flat bread or rice.

2 tablespoons peanut oil
½ sweet onion, minced
2 cloves garlic, chopped
1 teaspoon ground ginger
1 teaspoon ground cumin
1 ½ teaspoons ground turmeric
1 teaspoon paprika
½ teaspoon red chili powder
1 (14.5 ounce) can chopped tomatoes
1 (14 ounce) can coconut milk
1 teaspoon salt
1 pound cooked and peeled shrimp
2 tablespoons chopped fresh cilantro

Steps:

  • Heat the oil in a large skillet over medium heat; cook the onion in the hot oil until translucent, about 5 minutes. Remove the skillet from the heat and allow it to cool slightly, about 2 minutes. Add the garlic, ginger, cumin, turmeric, paprika, and ground chile (see Note) to the onion and stir over low heat. Pour the tomatoes and coconut milk into the skillet; season with salt.
  • Cook the mixture at a simmer, stirring occasionally, about 10 minutes. Stir the shrimp, fresh cilantro, and dried cilantro into the sauce mixture; cook another 1 minute before serving.

3 lbs shrimp, cooked, shelled and deveined the day before
1/2 head celery, chopped
1 large onion, chopped
2 sweet peppers, chopped
2 garlic cloves, chopped
1 cup butter
1 (28 ounce) can tomato puree (or tomato sauce)
3 tablespoons curry powder
salt
1 teaspoon thyme
1 teaspoon marjoram
1 tablespoon Worcestershire sauce
1 tablespoon A.1. Original Sauce
2 tablespoons sugar
2 teaspoons black pepper
1/2 lemon, juice of
peanuts or slivered almonds
2 tablespoons raisins

Steps:

  • Sauté chopped celery, onion, peppers and garlic in butter in a large skillet.
  • Remove to large pot or deep casserole and add one large can of tomato puree.
  • Simmer until the ingredients are tender.
  • Add curry and drop shrimp into mixture.
  • Simmer on very low heat for a few minutes.
  • Add all other ingredients and cook for about 20-30 minutes until thoroughly blended and well heated.

1 onion, chopped
2 garlic cloves, smashed
1/4 cup butter
4 tablespoons curry powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom

1/2 teaspoon red chili powder
1 tablespoon flour
1/2 cup heavy cream
1 cup coconut milk, stirred well
2 cups chicken broth
2 teaspoons freshly grated lime zest
2 lbs large shrimp, peel and deveined
2 tablespoons fresh lime juice
salt and pepper
cooked rice and mango chutney
raisins, salted roasted peanuts, chopped candied ginger

Steps:

  • Cook the onion and garlic in the butter in a heavy 5 quart pot over moderate heat, stirring, until the onion is softened, about 4 minutes. Add the spices and flour and cook, stirring constantly, for 1 minute. Whisk in the cream, coconut milk, broth and lime zest and bring just to a boil. Simmer the mixture, stirring constantly, until it begins to thicken, about 2 minutes. Add the shrimp and simmer, stirring, until the shrimp turns pink and is cooked through, about 4 minutes. Stire in the lime juice, and add salt and pepper to taste.
  • Ladle the curried shrimp over rice and top with garnishes as desired. Serve the mango chutney on the side.

2 lbs medium shrimp (peeled and deveined)
1 cup onion, finely chopped
1/4 cup butter
1/4 cup flour
3/4 cup cream of coconut (Coco Lopez)
2 1/2 cups half-and-half
1 tablespoon curry powder (or more to suit your taste)
1 teaspoon salt
1/2 teaspoon fresh ginger, finely grated
1/4 cup fresh lemon juice
cilantro (to garnish) (optional)
chopped macadamia nuts (to garnish) (optional)
hot cooked rice

Steps:

  • In a large skillet, add butter, onions and ginger -- cook until tender. Stir in flour; gradually adding half and half - whisk until smooth. Add cream of coconut, curry, salt and pepper. Cook over medium heat until thickened. Add lemon juice, reduce heat and simmer uncovered 20 minutes. Add shrimp and cook 5-10 minutes (just until shrimp are pink - don't over cook). Serve over rice and garnish with cilantro. You could add some chopped macadamia nuts on top as well.

2 teaspoons curry powder (or more, according to taste)
1/2 teaspoon sugar
1 tablespoon reduced sodium soy sauce
1 tablespoon rice wine vinegar
3/4 cup reduced-sodium fat-free chicken broth
3 teaspoons canola oil or 3 teaspoons peanut oil, divided
2 carrots, cut into 1-inch pieces
1 red bell pepper, seeded, stems removed, diced
1/4 lb fresh sugar snap pea, strings on, edges removed (about 20)
2 teaspoons peeled ginger, grated
1 large garlic clove, minced
3/4 lb medium shrimp, peeled and deveined
3 cups hot cooked brown rice

Steps:

  • In a small bowl, combine cornstarch, curry and sugar. Mix in soy sauce, vinegar and chicken broth. Set aside.
  • In wok or heavy skillet, heat 1 teaspoon oil over high heat. Add carrots, pepper, peas, ginger and garlic. Stir-fry until vegetables are brightly colored, about 1 minute. Transfer onto plate with slotted spoon.
  • Place remaining oil in pan and set over high heat. Add shrimp and stir-fry until pink, about 1 minute.
  • Return vegetables to pan. Stir sauce mixture and pour into pan. Simmer gently until shrimp are white in center, 2-3 minutes. Serve immediately over rice.
  • Makes 4 servings.

2 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon sugar
2 teaspoons ground ginger
2 teaspoons turmeric
1 teaspoon cumin
1/2 teaspoon crushed red pepper flakes
2 medium tomatoes, chopped
1 clove garlic
2 lbs shelled and deveined shrimp (3-4 lbs in shells)
3 -5 tablespoons safflower oil or 3 -5 tablespoons vegetable oil
1 cup minced onion
6 cups hot cooked rice
fresh cilantro stem (to garnish)

Steps:

  • About 30 minutes before serving, in blender or food processor, blend together yogurt through garlic on the ingredient list at medium speed until smooth.
  • In a large skillet over medium heat cook shrimp in 3 Tbs hot oil until just tender, approximately 5 minutes, stirring constantly.
  • Add more oil if necessary.
  • Remove shrimp from skillet with a slotted spoon; set aside.
  • In remaining oil (again add more if necessary), cook onion until tender, about 5 minutes.
  • Stir in yogurt mixture.
  • Heat to boiling, then reduce heat to low.
  • Simmer 5 minutes or until the mixture is slightly thickened, stirring frequently.
  • Return the shrimp to the skillet.
  • Cook until heated through, about 3 minutes.
