SERVIETTE/NAPKIN FOLDING, FLEUR DE LIS IN A GLASS VERSION3
Between the teachings of my Grandmother, an Aunt, my Mother and several restaurants I learned a lot about serviette/ napkin folding. Now that I have already posted all the napkin folds I know, I decided to look on the net for some new ones to learn. This one is very similar to Fleur de Lis in a Glass Versions 1 and 2, but the method of making it is different and it results in a tall central point at the top and side points with much less definition. Works well with cloth napkins, or larger paper ones. I have included step-by-step photographs to illustrate/supplement the written directions. For neater presentation use ironed napkins for this fold.

- Take your square napkin, lay it totally flat before you, then fold it in half horizontally.
- Fold again, this time vertically so that you have before you a square a quarter the size of your original square.
- Only one of the 4 corners will have 4 open or loose edges. Rotate the square before you so that it looks like a diamond with the four open edges pointing to the top.
- We will call the points on your diamond shape East, West, South and the open edged bit, North.
- Starting at the East point, accordion fold the serviette until you are at the West point. Keep a firm hold on the East/West points once the accordion fold is complete, and you will see that you have a bigger fan at the top (the top has 4 open points of the serviette) and a smaller fan at the bottom.
- Take the bottom point of the bottom fan and curl it up upon itself like a snail shell until you are almost at the East/West points in your other fingers. The snail shell curl will anchor the fan in the glass and help it to keep its shape.
- Place the fan into a wine or water glass and you will have a small standing fan in a semi Fleur de Lis style but with smaller side points.
- Arrange the pleats to that they are even and neat.

Steps:
- Lay your serviette flat before you in a diamond shape.
- Take the point at South and fold it up to meet the point at North. You will now have a triangle in front of you where the crease is at the bottom and the point is facing the North position.
- Place your finger in the centre of the outside line of the triangle that runs from North to East. Then take the East point of the triangle and bring it up and past your finger so that you have made an additional triangle that has a point sticking up at the top. Repeat with the West point of the triangle. You will now have before you a very rough diamond shape that has three triangle points at the top.
- Take the bottom point at South and fold it half way up to the centre of the serviette. It will form a triangle below the three triangles points at the top.
- Carefully turn the serviette so that it is vertical (the 3 top points will now be facing East or West, whichever you prefer) and accordion fold from the bottom to the top of the serviette.
- Carefully set the base of the serviette into a wine or water glass (the base is the thicker bit at the bottom) and when you let go you will have a pleated triangle at the top and two pleated triangles hanging down at the sides.
- Arrange the pleats to that they are even and neat.

Here's a step-by-step instruction on how to make one of the easiest of them all.. a simple folded on with the napkin ring holding everything in place. Works well with cloth napkins, or larger paper ones. I have included step-by-step photographs to illustrate/supplement the written directions. This one I learned in the Oasis restaurant in tiny township of Omarama, New Zealand.

- Lay your serviette square out flat before you.
- Begin folding accordion/pleating style from the bottom, all the way up to the top. Make each fold/ pleat about 3/4" - 1" (2 cm - 2.5cm) wide.
- Fold the pleated napkin in half.
- Place the serviette into the wine glass, folding the first inch at the base underneath to keep pleats in place.
- Unfold the pleats and shape into a fan. Interlock the two center pleats if needed to keep the fan intact.

- Lay your serviette square out flat before you in a diamond shape.
- Fold the bottom point at South up to the top point at North, there will be a horizontal crease at the bottom.
- Fold the East corner up to meet the North point and then repeat with the West corner.
- Carefully turn the serviette over so that the open points are facing in the North position.
- Fold the South point up to meet the North point. You will now have a triangle that has a vertical gap running down the centre.
- Take the east/west points of the triangle and bring them together at the back, gently open the gap at the front if necessary so that the serviette stands up by itself with the pleat to the front and the east/west points facing to the back.

- Lay your serviette flat before you in a diamond shape.
- Take the point at North and fold it down to meet the point at South. You will now have a triangle in front of you where the crease is at the top and the point is facing the South position.
- Take this South point and fold it to the North, going past the middle centre of the top line so that you now have a strip at the bottom if the serviette and a triangle sticking out at the top of the strip.
- Turn the serviette carefully around so that it is now vertical and starting at the bottom end of the long strip, accordion pleat all the way to the other end of the strip at the top. Hold firmly so that it keeps its shape.
- Carefully set the base of the serviette into a wine or water glass (the base is the thicker bit at the bottom) and when you let go you will have a tall pleated triangle at the top and two pleated triangles hanging down at the sides.
- Arrange the pleats to that they are even and neat.

NAPKIN/SERVIETTE FOLDED FOR BOTTLE SERVICE
Super easy and works very well indeed with both cloth or paper serviettes/napkins. This very basic fold transforms the naked neck of your wine bottles into something elegant and also catches drips. I have included step by step photographs to illustrate / suppiment my written instructions. This fold works best with a smaller napkin and I almost always find that paper ones are the easiest.

- Lay out your square serviette in a single layer before you. Fold it in half horizontally, keeping the folded edge closest to you.
- Take the top two corners and fold them towards you coming only 1/3 of the way down the serviette, gently crease the new top edge.
- Take the bottom two corners and fold half way up but so that the upper edge doesn't quite reach the top edge that you just folded.(this makes for a cleaner and neater looking edge) you will now have a very long and thin rectangle shape.
- Keeping the side that has the join to the inside, put 1/3 of the serviette around the neck of the wine bottle, and bring the longer tail end of the serviette over the other end and tuck it carefully undernieth. tighten carefully around the neck of the bottle.
