This yummy honey barbeque sauce is great on chicken wings, pork, or short ribs. The soy sauce and oyster sauce hint at an Asian inspiration, while the gin gives it an undeterminable edge.

- In a large bowl, mix the teriyaki sauce, oyster sauce, soy sauce, ketchup, garlic powder, gin, liquid smoke, and sugar. Place the chicken wings in the bowl, cover, and marinate in the refrigerator 8 hours or overnight.
- Preheat the grill for low heat.
- Lightly oil the grill grate. Arrange chicken on the grill, and discard the marinade. Grill the chicken wings on one side for 20 minutes, then turn and brush with honey. Continue grilling 25 minutes, or until juices run clear.

- Preheat the oven to 375 degrees Fahrenheit.
- Bend the wings and tuck the tips under the large joint to form a triangle.
- Season the chicken wings on both sides with salt and pepper.
- Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
- Bake the chicken wings, turning once, until browned, about 45 minutes.
- Remove the wings from the oven.
- Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
- Return the wings to the pan.
- Pour the barbecue sauce over the chicken wings and return to the oven.
- Bake for 10 minutes.
- Turn the wings over and bake 10 minutes longer.
- Serve hot, at room temperature, or cold.

OVEN-ROASTED CAROLINA BBQ CHICKEN WINGS
No one will guess that these wings are made in the oven. The baking powder in the breading helps crisp up the skin, and then they're drenched in my traditional Carolina BBQ sauce, a mustard-based sauce. The sauce is great on pork too, and you can make it ahead and keep it in the refrigerator for up to 2 weeks.

- Preheat the oven to 425 degrees F. Line two rimmed baking sheets with aluminum foil and place a wire rack on top of each. Coat the racks with nonstick cooking spray.
- Make the Carolina BBQ sauce: Whisk together the mustard, brown sugar, granulated sugar, vinegar, Worcestershire sauce and hot sauce in a medium saucepan over medium heat. Simmer, stirring frequently, until the sauce thickens and the sugars dissolve, about 10 minutes. Set aside half of the sauce for the final basting and for serving.
- Make the oven-roasted chicken wings: Pat the chicken wings dry with paper towels. Stir together the flour, House Seasoning and baking powder in a bowl. Dredge the chicken wings in the flour mixture and arrange on the wire racks in a single layer. Bake for 30 minutes. Turn, then baste with the Carolina BBQ sauce and bake until the chicken wings are browned and crispy and a thermometer registers 165 degrees F, 15 to 20 minutes longer.
- Brush the roasted chicken wings with the reserved sauce before serving.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
BAR-B-QUE CHICKEN WINGS
Central and Western New York is "wing country," so you've gotta have some good wings on your menu. Most places fry their wings according to the original Buffalo recipe, but we smoke ours. You can make them hot or mild on your grill just by changing the rub and the sauce you slather on at the end. We serve them with the traditional fixin's-Blue Cheese Dressing and celery sticks.

- Wings require a two-phase cooking process. First you render out the fat and tenderize the meat on a medium-hot grill, 325° to 350°. Then you crisp and glaze them over hot coals.You might find it useful to light another chimney of briquettes (see Techniques of Outdoor Cookin', page 12) when you give the wings their first flip after 45 minutes, so you can add a few fresh coals to boost the heat at the end for an absolutely perfect finish.
- Get cooking by rolling the wings, olive oil, and rub of your choice (All-Purpose Red Rub for mild wings and Creole Seasoning for hot wings) together in a large bowl.
- Fire up your grill and mound up the coals on one side. Spread the wings out on the other side of the grill, away from the coals. Cover the grill and cook the wings for about 45 minutes. Open the grill, flip the wings over, and switch them around-move the ones closest to the heat source off to the side, and move the ones on the outside edge closer to the heat source. (Remember to start another chimney of charcoal now.) Cover again and cook about 45 minutes more, til the meat is tender.
- Add some nice hot coals to the fire, and flip the wings over the direct heat of the coals. You should hear them sizzle a bit. Without waiting, brush the wings with some of the Mutha Sauce or Hot BBQ Sauce, flip them again, and let them cook for about 4 minutes so that the heat can caramelize the sauce. Brush the wings again with sauce and flip them over to cook another 4 minutes on that side. Slather the wings with sauce one last time to glaze them, and pull them off the grill as they get done.
- Serve with Blue Cheese Dressing for dipping, celery sticks, and plenty of napkins.
