Steps:

  • Preheat oven to 350 F. Line three, 8-inch round cake pans with parchment paper; or use two, 9-inch cake pans. Spray the sides with a baking spray.

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk
1 tsp vanilla extract
2 mashed, ripe bananas
284ml double cream
4 tbsp Banoffee toffee (Merchant Gourmet Banoffee Toffee, from major supermarkets is ideal)
1 banana , sliced

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together including the vanilla extract and 2 mashed, ripe bananas, until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • For the filling, whip the double cream and fold through the Banoffee toffee. To serve, spread half of the cream over one of the cakes, then top with another sliced banana.
  • Sandwich together, then cover with more cream then decorate the cake with an elegant drizzle of Banoffee toffee. Keep in an airtight container and eat within 2 days.

I love banoffee and I love cheesecake, so this is an easy, dairy-free mash-up of both. Everything can be made ahead and kept in the fridge, then when ready to serve, simply add the toppings.

11 ounces chocolate sandwich cookies (or graham crackers or digestive cookies)
2 tablespoons coconut oil, at room temperature
2 tablespoons coconut sugar
1 tablespoon vanilla extract
14 ounces (400 grams) dairy-free cream cheese, at room temperature
Juice of 1/2 lemon
2 ounces (50 grams) plain dark chocolate (I use 70% cacao), chopped or broken
3 medium bananas
1/4 cup Carefree Caramel, recipe follows
1 tablespoon cornstarch
1 cup unsweetened plant-based milk (I use coconut milk)
1 cup coconut sugar

Steps:

  • For the base: Blitz the cookies in a food processor or put in a resealable plastic bag and bash with a rolling pin to a small crumb consistency, then mix in the oil.
  • Press the cookie mixture into the base of a parchment-lined 8-inch springform nonstick cake pan. Press down to form an even base.
  • For the filling: Mix together the sugar, vanilla, cream cheese and lemon juice in a medium mixing bowl. Beat together well and spoon on top of the biscuit base, smoothing out evenly with a spatula or metal tablespoon.
  • Cover and put in the fridge to chill and firm, at least 4 hours and up to 2 days.
  • For the topping: Just before serving, put the chocolate in a heatproof bowl over a pan of gently simmering water (make sure the base of the bowl doesn't touch the water) and stir with a wooden spoon while you let it melt, about 4 minutes. Stir again to make sure it has totally melted, then remove the bowl and set aside. Alternatively, you can melt the chocolate in a microwavable bowl in 30 second bursts, stirring between each burst.
  • When ready to serve, unlock the ring on the pan, lift the cheesecake and put on a serving plate.
  • Peel and thinly slice the bananas and heap on top of the cheesecake, then drizzle over the Carefree Caramel in a zigzag or spiral pattern across the top, followed by a drizzle of the melted chocolate. Serve.
  • Spoon the cornstarch into a jug or bowl and stir in the milk until smooth and free of any lumps.
  • Tip the sugar into a small pan over medium-low heat and allow it to warm, about 2 minutes. Slowly pour the milk mixture into the sugar, stirring constantly with a wooden spoon to keep it smooth. Allow it to heat and gently bubble, stirring until nicely caramelized and thickened to a consistency that is glossy and coats the back of the wooden spoon, about 4 minutes. Refrigerate any extra caramel in an airtight container for up to 2 weeks.

1 can sweetened condensed milk
2 ripe bananas, sliced
Juice of 1 lemon
2 cups 35-percent cream
1/4 cup icing sugar
2 tablespoons strong coffee

Steps:

  • Chuck Hughes' Banoffee Pie is a fun and highly addictive dessert featuring layers of chocolate, banana and toffee.
  • Preheat the oven to 350 degrees F.
  • In a food processor, add the cookies and process until it becomes a crumb-like mixture. Add the butter and process again. Set aside.
  • Meanwhile, take the condensed milk can and place it in an ovenproof stockpot filled with water. DO NOT OPEN THE CAN. Make sure the can is constantly covered in water. Bake in the oven for 3 1/2 hours. Remove, let cool, open and set aside.
  • In a bowl, mix the bananas with lemon juice. Set aside.
  • Whip the cream with icing sugar and coffee in another bowl until soft peaks form.
  • For Serving: Using a round 4-inch mold directly on the serving plate, put a layer of the cookie mixture, then the slices of bananas, cover with the baked condensed milk (now toffee) and repeat the layers. Remove the mold and garnish with a dollop of cream.

200g butter , softened, plus extra for the tin
2 large ripe bananas (250g peeled weight)
250g light brown soft sugar
4 large eggs
1½ tsp vanilla extract
250g self-raising flour
100g natural yogurt
100g dark chocolate , chopped into chunks
100g thick caramel or dulce de leche (we used a can of Carnation caramel)
12 dried banana chips , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line a 20 x 30cm baking tin with two strips of criss-crossed baking parchment. In a jug, mash the bananas with a fork, then add the butter and sugar and mix with an electric whisk until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition, then add the vanilla and a pinch of salt. Use a spatula to fold through the flour, yogurt and chocolate chunks. Scrape the mixture into the tin and smooth over the surface. Bake for 30 mins until risen and golden and a skewer inserted into the centre of the cake comes out clean. Cool for 10 mins in the tin, then transfer to a wire rack.
  • Cut the traybake into 12 squares, then top each one with a spoonful of caramel and a banana chip, if you like. Will keep in a tin for up to five days, or in the freezer - without the toppings - for up to a month.

Different to all the others on here. This is simple to make and doesn't take ages. I always make a double one as there is never enough to go around...everyone will want seconds. Deviate from this recipe at your peril. I have followed this recipe exactly for years and have NEVER has a duff pie. Cook time does not include chill time.

250 g digestive biscuits
1 teaspoon mixed spice
100 g melted butter
50 g caster sugar
50 g dark brown sugar
100 g butter
397 g sweetened condensed milk
1 tablespoon black treacle
4 small bananas
284 ml double cream, lightly whipped
cocoa powder, to dust
chocolate curls, to decorate

Steps:

  • Blitz biscuits to fine breadcrumbs.
  • Add mixed spice and melted butter and blend.
  • Press the mixture into a lined loose bottomed cake tin, then chill well.
  • Place butter and sugars into a non stick pan, melt until it turns to a liquid.
  • Add the condensed milk and bring gently to the boil, stirring continuously.
  • Boil steadily for EXACTLY 1 minute, stirring frequently to make a golden caramel.
  • Add the treacle and mix thoroughly.
  • Spread the caramel over the biscuit base and place in the fridge for about 1 ½ hours until firm.
  • Arrange the bananas over the caramel.
  • Cover with whipped cream.
  • Dust with cocoa powder or chocolate curls to decorate.

175g unsalted butter, melted, plus extra for the tin
250g digestive biscuits, crushed to a fine powder
1/2 tsp ground cinnamon
2 tbsp icing sugar
1 tbsp cocoa
1/2 tsp cinnamon
3 medium bananas, chopped
750g full-fat soft cheese
200g mascarpone
175g light brown soft sugar
2 tsp vanilla bean extract
3 eggs
2 1/2 tbsp plain flour
100g caramel
300ml double cream
2 tbsp caster sugar
2 tbsp caramel
cocoa, for dusting
large handful baked banana chips (optional)

Steps:

  • Butter and line the base and sides of a 23cm square loose-bottomed cake tin. Put the biscuit crumbs in a bowl with the butter, cinnamon and a small pinch of salt, and mix until it resembles wet sand. Tip into the base of the tin, then level off and press the mixture down using the back of a spoon to compact it. Put in the fridge while you make the filling.
  • Heat the oven to 120C/100C fan/gas 1. Mix the icing sugar, cocoa and cinnamon in a bowl, then stir in the banana to coat. Set aside.
  • To make the creamy filling, put the soft cheese, mascarpone, sugar, vanilla extract, eggs and flour in a bowl. Beat using an electric whisk until smooth, about 3-4 mins. Gently fold in the banana mixture.
  • Take the base out of the fridge and pour over the filling. Level off the top using the back of a spoon, then drizzle the 100g caramel on top.
  • Bake in the oven for 1 hr with a tray placed underneath the tin to catch any drips of butter. Turn the oven off and leave the door ajar, using a spoon or spatula to prop it open. Leave inside until the oven is completely cool. Remove from the oven, then transfer to the fridge to chill overnight.
  • When ready to serve, make the sweet cream topping. Beat the cream and sugar in a bowl until it forms soft peaks. Remove the cheesecake from the tin and spread the cream over the top, drizzle with the 2 tbsp caramel, dust with cocoa and scatter with the banana chips, if using. Cut into nine pieces or 16 bite-sized squares to serve.
