If you like Twinkies, you will sure love this cake. This is an easy cake because there is no baking. With the maraschino cherries on top of the cake, it is a pretty cake for the Christmas holidays.

Steps:
- Split Twinkies in half.
- Place in a 13 x 9 inch baking dish, filling side up.
- Mix 4 cups of cold milk and vanilla puddings together.
- Spread pudding mixture over the Twinkies.
- Layer the drained pineapple.
- Layer sliced bananas over pineapple.
- Cover with Cool Whip.
- Sprinkle with nuts and place cherries on top.
- Note: I used 1 package of vanilla and 1 package of banana cream pudding mix.
- You can use fresh strawberries also, or whatever you want.

- For the ice cream layer: Line a 9-inch round cake pan with two layers of plastic wrap, pressing into the sides and corners to smooth it out as much as possible and leaving an overhang so you can lift the ice cream out.
- Spread the vanilla ice cream in the prepared pan in an even layer using a small offset spatula or the back of a spoon, then freeze until solid, about 1 hour 30 minutes to 2 hours. Repeat with the chocolate and strawberry ice creams, spreading the layers on top of each other and freezing each layer until firm. (See Cook's Note.)
- For the topping: Meanwhile, preheat the oven to 350 degrees F. Spray the sides of two 9-inch round cake pans with cooking spray and dust the sides lightly with flour. Line the bottoms with parchment paper rounds.
- Combine the sugar and 1 1/2 tablespoons water in a medium skillet and stir until the mixture looks like wet sand. Cook over medium-high heat, gently swirling the pan occasionally but not stirring, until light amber, about 5 minutes. Pour the caramel syrup into the bottom of one of the prepared cake pans.
- Peel and cut each of the bananas crosswise into 3 equal pieces. Cut each piece in half lengthwise. Arrange two banana pieces cut-side down in the pan with the caramel so they from an upside-down V. Continue making upside-down Vs with the banana pieces all the way across the pan. Fill in any empty spaces with the remaining banana pieces.
- For the cake: Whisk together the flour, baking powder and salt in a medium bowl. Add the sugar and vegetable oil to the bowl of a stand mixer and beat to combine. Add the eggs one at a time, beating to incorporate after each addition, then beat in the vanilla until combined. With the mixer on low speed, alternate adding the flour and buttermilk in 3 parts each, scraping down the bowl as needed, then beat on medium-high for 1 full minute.
- Divide the batter between the two prepared pans, covering the bananas evenly (use an offset spatula if needed). Bake until a toothpick inserted in the center comes out clean, 45 minutes to 1 hour (the plain cake will bake faster than the one with the topping, so check both). Let cool on a rack until cool enough to handle, about 25 minutes, then turn the cakes out onto racks to cool completely.
- Place the plain cake layer on a cake pedestal or plate. Remove the ice cream from the freezer and lift it out of the pan using the plastic wrap. Invert the ice cream layer directly on the cake layer. Top with the second cake layer, bananas facing up. Decorate the top with whipped cream rosettes, then top with cherries and sprinkle with chopped peanuts and sprinkles. Serve immediately with hot fudge and caramel sauce.

In a large bowl, mix together one package of pudding with 1 1/2 cups cold milk until combined (I used a wire whisk). Fold in 1/2 cup whipped topping and blend. Spread the strawberry pudding mixture evenly over the Twinkies to cover. Add banana slices and spread crushed pineapple over bananas. Top with remaining whipped topping and spread evenly. - Heat oven to 350°F. Grease and flour three 9-inch round cake pans. In large bowl, mix flour, baking soda and salt; set aside.
- In large bowl, beat butter, shortening and sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Beat in eggs, one at a time. Beat in vanilla. Beat in flour mixture alternately with buttermilk. Continue beating on medium speed 1 minute, scraping bowl constantly.
- Divide batter among 3 bowls (about 2 1/2 cups each). Stir 2 tablespoons of the strawberry topping and 3 drops of the red food color into batter in one bowl. Stir 2 tablespoons of the pineapple topping and 3 drops of the yellow food color into batter in second bowl. In small bowl, mix cocoa and hot water; stir into batter in third bowl. Pour batters into separate pans.
- Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour.
- In medium bowl, mix whipped topping and pudding mix until well blended. Place strawberry cake layer on serving plate; spread with remaining 2 tablespoons strawberry topping. Top with layer of banana slices; spread with 3/4 cup frosting. Top with chocolate cake layer; spread with remaining 2 tablespoons pineapple topping. Top with layer of banana slices; spread with 3/4 cup frosting. Top with pineapple cake layer. Frost side and top of cake with remaining frosting. Drizzle with chocolate topping. Store in refrigerator.

- Preheat oven to 350 degrees F.
- Coat two 8" cake pans with nonstick cooking spray.
- In a large bowl, with an electric beater on medium speed, beat the cake mix, pudding mix, water, oil and eggs until smooth.
- Stir in the pineapple then pour the batter into the cake pans, dividing equally.
- Bake for 35- 40 minutes, or until a wooden toothpick inserted in the center comes out clean.
- Allow to cool for 15 minutes then invert onto wire racks to cool completely.
- In a small bowl, combine 3/4 cup whipped topping and the strawberries and mix well.
- Place one cake layer on a serving plate and frost the top with the strawberry mixture.
- Place the second layer over the first then frost the top and sides with the remaining whipped topping.
- Drizzle with hot fudge then place the cherries around the edges of the cake top and sprinkle evenly with the nuts.
- Serve immediately, or cover and chill until ready to serve.
- NOTE: Warm the hot fudge enough to make it pourable, but don't allow it to get too hot or it will melt the"frosting"!

- 1. Preheat the oven to 350°F. Lightly spray a filled cake pan/cream canoe pan with cooking spray, or lightly grease with oil, and set aside.
- 2. Put all cake ingredients (except beaten egg whites) into a large mixing bowl and beat until smooth.
- 3. Fold 1/3 of the beaten egg whites into the batter. Be sure to fold, don't beat. Once incorporated, repeat with another 1/3 until all egg whites have been folded into the batter. You want the batter to be light so don't stir or beat...fold.
- 4. Fill each section of your canoe cake pan 2/3 full. Cakes will puff quite a bit during baking, but will shrink during cooling. Bake cakes in a preheated oven for 8-12 minutes, until golden brown. NOTE - To make as cupcakes, prepare cupcake pans with cooking spray. Baking 15-18 minutes.
- 5. Remove pan from oven and let cool for 5 minutes. Using a flexible spatula, gentle remove each cake and cool flat side down on a rack until completely cool.
- 6. PREPARE VANILLA CREAM FILLING, IF USING - In a small saucepan, stirring constantly, cook flour and milk over medium heat until it forms a paste. Do not allow mixture to brown. - Remove from heat and let cool 1 minute. - Add vanilla and stir until smooth. - Press a piece of plastic wrap down on the surface of the paste to avoid forming a skin and set aside to cool completely. - Using your mixer beat butter, shortening, and sugar until fluffy. Be sure to scrape bowl to fully mix all ingredients. - Add cooled flour/milk mixture, continue to beat 5 mins at medium-high speed until smooth and creamy. - Fill cakes or cupcakes.
- 7. To fill cakes with vanilla cream filling, put about 1 cup filling into clean pastry bag fitted with round pastry tube, or use filling tool included with cream canoe pan. NOTE: Vanilla cream filling will remain creamy for 3-4 days, stored at room temperature. - Gently insert tube into underside of cake, about halfway through cake. Squeeze small amount of filling into cake. You'll feel cake expand. Be careful not to overfill or cake will burst. Repeat 3 times per cake. Store cakes well covered at room temperature for up to 4 days.
- 8. IF USING OTHER FILLINGS - - fill pastry bags with toppings when ready to use - use 3 fillings per cake if desired - use round pastry tube on each filling bag
- 9. FOR MARSHMALLOW GLAZE (RECOMMENDED) - in a small bowl, add 1/2 cup marshmallow cream. Warm 2 or more Tbsp half and half and whisk it in to the marshmallow cream 1 Tbsp at a time until desired consistency is reached. Spread or drizzle over filled cakes, or dip top portion of filled cake into marshmallow cream mixture.
- 10. FOR VANILLA GLAZE - In a small bowl, whisk together 1 cup powdered sugar, 1 Tbsp milk and 1/2 tsp vanilla extract. Add additional milk until desired consistency is reached (up to 1 Tbsp additional). Spread over top of filled cake or drizzle as desired
- 11. FOR CHOCOLATE DRIZZLE - place 1/2 cup chocolate chips into a cup or small bowl. Warm 1/4 half and half and slowly add to the chocolate chips, whisking until smooth and desired consistency is reached. Drizzle over filled cakes. This goes wonderfully with the marshmallow cream glaze.
- 12. Top with chopped nuts of your choice and enjoy!
- 13. NOTES: You can get very creative with these to make them your own. Try making them chocolate with peanut butter filling or peanut butter with jelly filling. This also makes a very nice adult dessert by making the cream using liquors. They're also great with banana filling. Have fun and be creative. - Split Twinkies lengthwise and lay in 9x13 pan (should use whole box).
- Prepare instant pudding with 1 1/2 cups milk.
- Lay sliced bananas over Twinkies in pan and pour pudding over bananas.
- Prepare 2 envelopes of Dream Whip as per package directions and spread this over the top of pudding.

BANANA SPLIT CAKE
This is a fun, eye-pleasing cake that incorporates the classic flavors of a banana split. It can be served on its own but is best served "a la mode" with vanilla, chocolate or strawberry ice cream. It has layers of banana cake with a center layer of chocolate fudge frosting, sliced bananas and sliced strawberries. Then the top of the cake is finished with strawberry frosting and arranged, sliced strawberries. I think the embellishment of fresh fruit gives the cake a homemade appearance. No need to tell anyone you used a cake mix and prepared frosting! (Note: If you can't find banana cake mix, substitute with yellow cake mix, reduce water to 1 cup and add one extra mashed banana). - Preheat oven to 350°F.
- Prepare three 9-inch round cake pans by coating with cooking spray and dusting with flour.
- In a large mixing bowl, combine cake mix, water, mashed banana and eggs. Beat with an electric mixer until well combined. Pour cake batter evenly into the prepared cake pans.
- Bake for 20-25 minutes or until toothpick inserted into centers of each cake comes out clean. Cool cakes on a wire rack until completely cooled. Turn cakes out. With a wide knife, slice off rounded tops of cakes until top surfaces are flat.
- Slice bananas and hull/slice strawberries; set aside. I always reserve three large strawberries, slice them into fans and set them aside for garnishing.
- Place first cake layer on serving plate/pedestal. Spread generously with chocolate frosting to 1/4-inch from the outside edge of the cake. Arrange a thin layer of sliced strawberries and then bananas atop the frosting. Place second cake layer atop these layers and repeat once more.
- Place third cake layer on top. Spread top of cake only (not down sides of cake) with a generous layer of strawberry frosting. Then arrange sliced strawberries in the pattern of your choice atop frosting. I like to make three strawberry fans and arrange them in the center of the cake with circles of overlapping strawberries radiating outward.
- Slice and serve with a scoop of the ice cream of your choice. Refrigerate until ready to serve, and store left-overs in refrigerator for up to 24 hours. If you plan to store longer, please note the strawberries and banana slices may soften or discolor.

- Mix the wafer with the melted margarine; press in a 9X12 pan. (The box says 425g.).
- Cover the crust with slice bananas.
- Mix the eagle brand milk and lemon juice and spread over the bananas. (The can says 300ml.).
- Spread the drained pineapple on top of the milk.
- Make the pudding like the recipe on the box and spread on top of the pineapple. (I use the 4 to 6 serving box.).
- Cover with a large tub of Cool Whip.
- Sprinkle with fine coconut, nuts, and cherries.
- Refrigerate overnight.
