BANANA SPLIT GRANOLA BARS

Steps:
- Line a 9×13 pan with foil and spray lightly with cooking spray. Set aside.
- Preheat oven to 325°
- In a small sauce pan heat 1/2 cup until boiling over high heat, add quinoa, reduce to a simmer and cover for 9 minutes. Remove from heat, allow to sit for 5 minutes and fluff with fork.
- Transfer cooked quinoa into medium bowl to cool.
- In a large bowl combine oats, cinnamon, baking soda and salt.
- When the quinoa is cooled add mashed banana, egg, honey, Canola Oil and vanilla to bowl with quinoa. Stir to combine.
- Pour quinoa mixture over oat mixture and stir until all combined.
- Stir in dried cherries, walnuts and chocolate chips evenly.
- Spread mixture into prepared pan.
- Bake 20-25 minutes until top is golden and set.
- Allow to cool completely before cutting into bars.
BANANA SPLIT GRANOLA
This sundae-inspired granola has all the flavors of its namesake. Sprinkle it over Neapolitan ice cream, and don't forget to top it with a cherry.

Steps:
- Position an oven rack in the center of the oven, and preheat to 325 degrees F. Whisk together the butter, brown sugar, maple syrup, vanilla and salt in a large bowl. Add the oats and walnuts, and toss until evenly coated. Spread out on a rimmed baking sheet.
- Bake the oat mixture until golden and toasted, 30 to 35 minutes, stirring about halfway through,. Let cool completely on the baking sheet. Stir in the bananas, chocolate chips, strawberries and pineapple. (The granola can be stored in an airtight container at room temperature for up to 5 days.)
GRILLED BANANA SPLITS
Steps:
- Cut a small piece off the curved side of 4 unpeeled bananas so they'll sit level, then make a deep slit down the center of each through the peel; place on separate sheets of foil. Open the slits and brush the inside of each banana with melted butter, then sprinkle with sugar and 1 ounce chopped semisweet chocolate; fold up the foil. Grill the packets over high heat until the chocolate melts, 6 to 8 minutes (don't worry if the peel turns brown). Open the peels and top the bananas with ice cream, whipped cream, sprinkles and a cherry.
BANANA BREAKFAST SPLIT
Put a new spin on your yogurt, granola and fruit breakfasts...this also makes for a fantastic, filling and uber healthy after school snack. (Ask me how I know!) I saw this on Pinterest and knew it would be an instant hit with this crowd. For my dairy-free little people, I dropped a small scoop of coconut milk ice cream on the split instead of Greek yogurt...so their's was more of a "Banana Snack Split". Whether for breakfast with yogurt, or with ice cream for a snack, you can't go wrong with this Banana Breakfast Split! I sure wish I could have this delivered to you right now! ;) (P.S. I'm already seeing great prices on blueberries and blackberries in my stores. This will be perfect later in the spring, early summer when berry prices are at their lowest!)

- Preheat the oven to 350 degrees. Grease and flour a 13x9 pan.
- Bars:.
- Combine the flour, sugar, baking soda, salt and cinnamon in a large bowl. Set aside.
- In a separate bowl, mash bananas with a fork to make 1 cup. Add pineapple with juice, eggs, oil and vanilla. Stir in cherries.
- Stir flour mixture into banana mixture, mixing until well combined. Pour into prepared pan. Bake 30 to 35 minute Remove from the oven and let cool 30 minute.

- Heat butter and milk in a saucepan until the butter melts. Remove from the heat. Stir in the confectioners sugar and vanilla. Beat until smooth. Spread the icing over the bars.
