HEALTHY 3 INGREDIENTS BANANA PANCAKES (SUGAR-FREE)
This Super easy 3 Ingredients Banana Pancakes Recipe is Sugar-Free and will be ready in less than 20 minutes. Perfect for a healthy and quick breakfast!

Steps:
- Mash the Bananas into a large mixing bowl until smooth.
- Add the Eggs and whisk until combined, then whisk in the Self-Rising Flour until no lumps remain.
- Grease a small skillet with cooking spray (or butter). Pour some Banana Pancake batter in the middle of the skillet, on medium heat. Leave to cook for about 1 minute, or until you can see bubbles appearing on the surface. Flip and leave to cook for another minute. Repeat until all the batter is cooked.
- See note under (*) below if the centre of the first pancake is mushy or soggy - you might need to add a little bit more flour.
- Thinly slice the Banana.
- Heat up a small skillet on low heat and drop the tablespoon of honey. It will melt and bubble straight away.
- Add the sliced Bananas and leave to caramelise for about a minute, stiring occasionally to flip the banana slices (see note 1)
- Serve over the Banana Pancakes, warm. Optionally, pour some Honey over the Pancakes if you would like them to be sweeter.

Steps:
- Mix flax seed and water in a small bowl and let sit a few minutes.
- In a medium size bowl, mash the banana.
- Add the rest of ingredients and mix until just blended.
- Grease a skillet or griddle and heat to medium high heat.
- Spoon batter (it will be thick) onto griddle.
- Cook until lightly browned and then flip (3-4 minutes).
- Serve with real maple syrup.

BANANA PANCAKES (EGGLESS)
It's really hard to find a recipe for eggless pancakes, and after lots of searching, I found a few pancake recipes and fine-tuned them to come up with this one, which is awfully easy and pretty darn yummy as well! It tastes wonderful with honey, or, if using apples instead of bananas, apple jam! It can easily be veganised using soy milk, or a similar substitution.

- In a large bowl, mix all-purpose flour, whole wheat flour, salt, baking powder and sugar.
- Stir in milk and bananas just until moistened.
- Heat a lightly oiled griddle or frying pan over medium high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Brown on both sides and serve hot.

- Mash the banana in a mixing bowl. Stir in the sugar, salt and oil. Add the flour and baking powder and mix thoroughly. Make a well in the centre and gradually whisk in the milk. The batter should be a thick, droppable consistency.
- Heat a little oil in a frying pan over a medium heat. Add 2 tbsp of the batter to make American-style pancakes. You will be able to make about 4-5 at a time. Fry on each side for 2-3 mins until golden. Serve with syrup, sliced banana and berries, if you like.

- In a medium bowl, mash the bananas well. Whisk in the coconut oil. Add all the dry ingredients and roughly mix together. Whisk in the oat milk until the batter is well mixed.
- Lightly coat a large non-stick skillet or griddle with a bit of coconut oil or oil, then heat over medium to medium-high heat. When the pan is hot, working in batches, spoon about 3 tablespoons of pancake batter onto the pan for each pancake. I usually use an ice cream scoop with a release trigger so all the pancakes are evenly sized. If needed, gently and lightly use the back of the spoon to guide the pancake batter so it spreads out into a 4-inch diameter round. Make sure to leave room between pancakes so you can easily flip the pancakes.
- Cook on one side, until there are some bubbles on the top, and the bottom is golden brown, about 2 minutes. Flip the pancakes, and cook until golden brown on the bottom, about 2 more minutes.
