No-Churn Pineapple-Banana Sorbet image

1 medium banana, cut into 1/2-inch-thick slices (about 2/3 cup)
12 ounces (about 1 1/2 cups) frozen pineapple chunks
2 tablespoons frozen orange juice concentrate

Steps:

  • Line a medium plate with parchment. Place the banana slices on the prepared plate in a single layer, making sure they are not overlapping. Freeze the bananas until hard and completely frozen, 30 to 45 minutes.
  • Add the frozen bananas, pineapple and orange juice concentrate to a food processor and process until smooth, scraping down the sides of the bowl with a rubber spatula as needed. Transfer to an airtight container and freeze until scoopable, about 1 hour. The sorbet will keep for up to 2 months.

If you don't have an ice cream freezer, put the mixture into ice cube trays and stir occasionally while freezing. Mix in a blender when ready to serve.

1/2 cup lemon juice
3 medium ripe bananas, cut into chunks
1-1/2 cups sugar
2 cups cold water
1-1/2 cups orange juice

  • Place lemon juice and bananas in blender; cover and process until smooth. Add sugar; cover and process until blended. Transfer to a large bowl; stir in water and orange juice. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer to a freezer container, allowing headspace for expansion. Freeze 2-4 hours before serving. Repeat with remaining sorbet mixture. 4 cups (2 pints) strawberries, stemmed
4 medium, very ripe bananas, peeled
1/2 cup sugar
1 cup (about 4 oranges) fresh orange juice
3 tablespoons freshly squeezed lemon juice (about 1 1/2 lemons)
2 cups whole milk

Steps:

  • Place strawberries in a large bowl. Using a potato masher, mash strawberries, and set aside.
  • Place bananas and sugar in a medium bowl. Using the potato masher, mash until smooth.
  • Add banana mixture to strawberries, and mix well. Stir in orange juice, lemon juice, and milk. Divide the mixture among four metal ice-cube trays, about 2 cups per tray. The sherbet can also be poured into a 9-by-13-inch glass baking dish and placed in freezer. Stir every 30 minutes until frozen, about 4 hours.

It is the first to go at ice cream socials. Everyone loves it. I serve it with my Recipe #83963. I found this in the newspaper years ago and adapted it to suit my style. For the best dessert ever, serve it in the Recipe #327004. The flavors are wonderful when combined!

1 cup sugar
1 cup water
1 teaspoon orange zest
4 oranges
1 sprig spearmint

Steps:

  • Combine sugar and water in saucepan.
  • Stir and cook over high heat until sugar is dissolved.
  • Boil without stirring for 1 minute.
  • Remove from heat and set aside.
  • Grate the zest and set aside.
  • Squeeze Oranges into 4 cup glass measure (strain, or remove seeds).
  • Stir in sugar syrup and zest.
  • Add water to make 3 1/2 cups total, stirring well.
  • Chill in refrigerator about one hour.
  • Transfer mixture to ice cream maker and proceed according to manufacturer's directions.
  • May serve at once, or place in covered container until desired consistency is reached.
