2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. Spread walnuts on a baking sheet and bake until fragrant, about 12 minutes. Cool 15 minutes then coarsely chop. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients then stir in 1 cup walnuts.
  • Divide batter evenly between prepared cups using a 2-ounce scoop. Sprinkle with remaining 1/2 cup nuts and sanding sugar if desired. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1 ½ sticks unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • Combine flour, cinnamon, baking powder, baking soda, and salt in a large bowl.
  • Mash 2 bananas with a fork in a small bowl so they still have a bit of texture; mix in 1/2 cup chopped pecans.
  • Mash remaining 2 bananas in a separate large bowl. Add brown sugar and white sugar and beat with an electric mixer for 3 minutes. Add melted butter, eggs, and vanilla; mix for 1 more minute. Mix the banana-sugar mixture into the flour mixture until combined. Stir in banana-pecan mixture.
  • Spoon about 1/4 cup of batter into each prepared muffin cup and top with remaining pecans.
  • Bake in the preheated oven until tops spring back when lightly pressed, 16 to 17 minutes; do not overbake. Cool in the tins for 5 minutes. Transfer to a wire rack to cool completely.

1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg ((I used freshly ground nutmeg, optional))
1/2 teaspoon kosher salt
2 large ripe bananas
2/3 cup brown sugar ((light or dark))
1 large egg
1 teaspoon vanilla extract
2 tablespoon milk
6 tablespoon unsalted butter, melted
½ cup chopped pecans or walnuts ((optional))
1 cup cream cheese, room temp
½ cup confectioners powdered sugar
½ teaspoon vanilla extract
1 cinnamon stick ((optional garnish))

Steps:

  • Preheat the oven to 425°F and prepare a muffin pan with paper liners or non-stick spray. Melt the butter in a microwave-safe bowl and set aside.
  • Place the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium mixing bowl and mix together using a whisk or fork and set aside.
  • Peel and place the ripe bananas In a large mixing bowl (or in the bowl of your stand mixer or mix by hand) and beat on low until mashed and smooth.
  • Beat in the brown sugar, egg, vanilla extract, milk, and melted butter on medium speed until everything has combined. Pour the dry ingredients into the wet ingredients, then beat or stir until just combined. Give the mixture a turn or two with your spatula/spoon and mix in the nuts by hand if you are adding them.
  • Place the batter in the muffin pan evenly across 12 sections. The cups should be almost full. Bake for 5 minutes at 425°F and then reduce the temperature to 350°F. Don't open the door, just reduce the heat. This step will help the muffins rise in the pan and bake evenly. Continue baking for 15-18 more minutes until a toothpick comes out clean. Remove the muffins from the oven and let them cool in the pan for 5 minutes before placing them on a cooling rack to cool completely.
  • Put the cream cheese in a medium mixing bowl and beat on medium speed until smooth. Add the powdered sugar and vanilla extract and beat until everything is combined. The frosting will be thick and creamy so it doesn't pipe into shapes well.
  • If you want, you can pipe some of the frosting into the middle of the muffin before adding frosting to the top. I used my long piping tip to get some frosting in the middle and the same tip to make a pile of frosting on top. Dust the top with freshly grated cinnamon if desired and enjoy!

1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom
1/2 c light brown sugar
1/4 tsp salt

1/2 c applesauce, not sweetened
1/2 tsp vanilla
1/8 tsp banana extract
1 egg
1/4 - 1/2 c chopped walnuts or pecans
butter cream frosting or banana glaze
butterscotch chips

Steps:

  • 1. Spray muffin tin with non stick cooking spray. Set oven top 350 degrees
  • 2. Mix flour, baking soda, cardamom, cinnamon, nutmeg, and salt in a bowl
  • 3. In a seperate bowl beat sugar and butter until mixed well. Add applesauce, bananas, extracts and egg and beat again until mixed well.
  • 4. Now add flour mixture to sugar and banana mixture about a third at a time, beating after each third until all flour mixture is added.
  • 5. Into this fold the walnuts or pecans.
  • 6. Using a small ladle, put muffin mix into tins filling about 2/3 of the way.
  • 7. Bake for about 25 to 30 minutes or until toothpick inserted in muffin comes out clean. Remove from oven and let cool completely if adding frosting or glaze. Otherwise serve warm from the oven.
  • 8. For Buttercream Frosting: Put frosting in a pastry bag, add the tip of choice and squeeze onto muffins in desired thickness. Top off with a butterscotch morsel
  • 9. For banana glaze: add powdered sugar, banana extract, and milk together to desired consistancy (add extract to your taste) Dip cooled muffin tops into glaze and let excess drain off while upside down.

Steps:

  • Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
