MONKEY BARS -- BANANA BARS WITH BROWNED BUTTER FROSTING
I got this great recipe from a site called CaramelPotatoes.com. So yummy. The sour cream helps to keep these light, like cake, but the bananas make it super moist. This is a great way to use up over-ripe bananas. I put them in the freezer and just thaw them when I'm ready to bake. Works great!

- Heat oven to 375 degrees. Grease and flour a 10×15 jelly roll pan. Beat first four ingredients until creamy. Blend in bananas and vanilla until incorporated. Add dry ingredients and blend one minute. Sitr in nuts and spread in pan. Bake 20 to 25 minutes -until light brown and center springs back to the touch (don't over bake). Cool and frost with Browned Butter Frosting.
- For the frosting: 1/2 cup butter.
- 2 cups powdered sugar.
- 1 1/2 teaspoons vanilla.
- 3 tablespoons milk.
- Heat butter in saucepan over medium heat past the melting point until it boils and turns a delicate brown.Remove from the heat and immediately wisk in the remaining ingredients. This should make a thick glaze. Using a spatula smooth over the top of the Monkey Bars immediately. Work quickly, it hardens fast!

BANANA BAR RECIPE
This banana bar recipe is soft and moist with browned butter icing. Think of the best banana bread made into easy to eat bars.

- Heat oven to 375 degrees. Grease and flour 10x15 jelly roll pan or line with parchment paper (for thicker bars use a 9x13 pan and bake for 10 minutes longer than directed). In a large mixing bowl, beat first four wet ingredients with an electric mixer or stand mixture with the paddle attachment until creamy.until creamy. Blend in the mashed bananas and vanilla for one minute. Add dry ingredients and blend flour mixture for one minute. Stir in nuts and pour batter into the pan. Bake 20 to 25 minutes until golden brown. Cool slighty until warm but not hot and frost with Browned Butter Frosting (recipe below).
- For the Browned Butter Frosting Recipe: Heat butter in saucepan over medium heat past the melting point until it is boiling and a delicate brown. Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze and thinner than frosting. You can add milk to get it to the correct consistency. Using a spatula smooth over the top of the banana bars immediately for the best results. The frosting will be easier to spread once it's on the warm bread.

- Preheat oven to 350°F
- Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
- In a large bowl beat cake mix, oil and egg until well blended and crumbly.
- Stir in nuts.
- Set aside 1 cup of the crumb mixture.
- Firmly press remaining crumb mixture on bottom of prepared pan.
- In a small bowl, combine condensed milk and mashed banana; pour evenly over crust.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan. Place the raisins and rum in a microwave-safe bowl. Place in the microwave and cook on High for 1 minute. Set aside until needed.
