HEALTHY BANANA OAT MUFFINS

Healthy Banana Oat Muffins image

These potassium- and fiber-packed muffins are great as a quick grab-and-go breakfast or after-school snack. Browning the butter adds a nutty, almost caramel-like flavor to the batter and the sour cream ensures that the muffins stay nice and moist.

Provided by Food Network Kitchen

Categories     side-dish

Time 40m

Yield 12 servings

Number Of Ingredients 11

1 stick (8 tablespoons) unsalted butter
1 1/2 cups whole wheat pastry flour or white whole wheat flour
1/2 cup plus 2 tablespoons rolled oats
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup reduced-fat sour cream
1/2 cup packed dark brown sugar
1 teaspoon pure vanilla extract
2 large eggs
2 medium bananas, peeled and cut into 1/2-inch pieces (about 1 heaping cup)

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners.
  • Melt the butter in a small skillet set over medium heat, and cook until it starts to bubble and foam, about 5 minutes. Continue cooking, stirring constantly, until the foam subsides and brown specks start to appear, 1 to 2 minutes. Transfer the butter to a medium mixing bowl to cool slightly.
  • In a large bowl, combine the flour, 1/2 cup of the oats, the baking powder, salt and baking soda.
  • Add the sour cream, sugar and vanilla to the browned butter and whisk. Add the eggs and whisk until combined. Fold the wet ingredients into the dry ingredients and mix until just combined. Then fold in the bananas (don't worry if there are a few lumps).
  • Divide the batter evenly among the prepared pan. Sprinkle with the remaining 2 tablespoons oats. Bake until the muffins are light golden and a toothpick inserted in the center comes out clean, 20 to 24 minutes. Cool in the pan for a few minutes, and then transfer to a wire rack to cool completely.

WW INSTANT OATMEAL MUFFINS (1 WW POINT EACH)

Ww Instant Oatmeal Muffins (1 Ww Point Each) image

I just started weight watchers and wanted a muffin for breakfast. Other recipes called for things I didn't have so I designed my own recipe with what I had in the kitchen. These are moist and sweet enough to please and my 1 year old and 3 year old loved them. They definitely stick to paper muffin cups a little so I think I'll try skipping the paper cups next time and opt for just the muffin pan and some cooking spray.

BANANA OATMEAL MUFFINS

Banana Oatmeal Muffins image

With the warm weather, bananas go black faster than I can snap my fingers. Here is a super moist muffin that makes a fabulous breakfast. It would be great with nuts or dried fruit if you are so inclined. I try to keep muffins on hand throughout the summer as snack food. My kids are constantly going to the pantry or refrigerator looking for food. When I have healthy (ish) homemade snacks, I feel better about their constant grazing.

Provided by Viki B

Number Of Ingredients 6

2 eggs
3 mashed bananas
1½ cups flour
1 cup oatmeal
1 tsp baking powder
1 tsp baking soda

Steps:

  • Cream butter and sugar.
  • Add eggs and bananas and mix thoroughly.
  • Combine dry ingredients and stir into banana mixture until just combined.
  • Spoon into greased muffin cups.
  • Bake 350 degrees for 20 minutes or until done.

  • Preheat the oven to 400 degrees F. Lightly grease a 12-cup standard muffin tin or line with paper liners. If using liners, lightly grease them as well. Set aside.
  • Place the all ingredients but the mix-ins in a blender or the bowl of a food processor fitted with the steel blade: oats, bananas, eggs, Greek yogurt, honey, baking powder, baking soda, vanilla extract, and salt. Blend or process on high, stopping to scrape down and stir the ingredients once or twice as needed, until the batter is smooth and the oats have broken down almost completely, about 3 minutes. By hand, stir in the mix-ins. If the batter is warm from the appliance’s motor, the chocolate chips may melt and swirl as they are stirred. If this bothers you, let the batter cool for 10 minutes before adding them.
  • Divide the batter among the prepared muffin cups, filling each no more than three-quarters of the way to the top. Sprinkle with additional chocolate chips or nuts as desired. Bake for 15 minutes, until the tops of the muffins are set and a toothpick inserted in the center comes out clean. Place the pan on a wire rack and let the muffins cool in the pan for 10 minutes. They will deflate but still taste delicious. Remove from the pan and enjoy!

  • Combine all the batter ingredients in blender and blend until a smooth batter forms (don’t over blend). Pour into 10 muffin cups. Crumble a bit of the streusel topping onto each muffin.
  • Bake 25 to 28 minutes until a toothpick comes out mostly clean with a few clinging crumbs. Allow to cool in the pan for 5 minutes, then remove the muffins and place them on a cooling rack. Cool 1 hour until room temperature. Store up to 4 days in a sealed container with a paper towel inside (to keep the topping crumbly) or frozen up to 3 months. You can also refrigerate the muffins, but they can become dry and the topping becomes soft.

  • Cook for 8-10 minutes until thick and creamy, stirring frequently so it doesn’t burn. I like to remove the pot from the heat after 8-10 minutes and let sit for a few more minutes to thicken a little more. If you want it a little creamier, stir in a little additional almond milk, light coconut milk or other plant milk of choice to reach desired consistency.
  • Scoop into a bowl and add any desired toppings (chopped walnuts, blueberries or almond butter are delicious) and enjoy.
