2 large bananas (mashed)
1 cup peanut butter (can sub for another nut butter or nut free alternative)
1/4 cup coconut oil
1 tablespoon Cinnamon (optional)

Steps:

  • Line a 12 count muffin tray with muffin liners and set aside.
  • In a large mixing bowl, add your mashed bananas and set aside.
  • In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated.
  • Divide mixture amongst muffin tins and refrigerate or freeze until firm.v

Number Of Ingredients 4

6 ripe bananas
3 tablespoons coconut oil (divided)
Crushed nuts for garnish (I used slivered almonds)
Ground cardamom (add it in with the bananas or sprinkle on top of the fudge)

Steps:

  • Puree the bananas in a blender.
  • Melt 1 tablespoon of coconut oil in a non-stick saute pan over medium heat and then add the banana puree.
  • Stir continuously for about 20 minutes.
  • Add 1 tablespoon of coconut oil, stir until well combined, then add the final tablespoon of coconut oil and continue to stir for another 10 minutes, or until the banana mixture turns dark and sticky.
  • Spoon the banana mixture onto a greased plate or in a parchment-lined loaf pan and allow it to cool in the fridge.
  • Cut the fudge while it's cold, then allow it to come to room temperature before serving.

3 cups white sugar
1 cup milk
3 tablespoons light corn syrup
1/2 cup mashed banana (2 small bananas, very ripe)
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup butter

Steps:

  • Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan. Combine sugar, milk, corn syrup, banana, and salt in large 3 quart saucepan. Mix thoroughly. Bring to boil on high heat, stirring constantly. Reduce heat to medium and continue to boil mixture without stirring until it reaches 238F or until a small amount forms a soft ball in cold water. Remove from heat and stir in nutmeg, vanilla, and butter. Let cool to 120F. Beat the mixture until it becomes very thick and loses some of its gloss. Quickly pour into a buttered 8" square pan.

1 package chocolate fudge cake mix (regular size)
1 large ripe banana, mashed
FROSTING:
1/2 cup butter, cubed
1/4 cup water
5-1/2 cups confectioners' sugar, divided
1/4 cup baking cocoa
1 small ripe banana, mashed
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, prepare cake mix according to package directions, omitting 1/4 cup of the water. Beat on low speed until moistened. Add banana; beat on high for 2 minutes. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely. , In a large saucepan, add butter and water. Cook over medium heat until butter is melted; stir until combined and set aside. , In a large bowl, combine 4 cups confectioners' sugar and cocoa. Add the butter mixture, banana and vanilla; beat until smooth. Add enough remaining sugar until frosting reaches desired spreading consistency. Frost the cake.

2/3 cup margarine, softened
1 2/3 cups sugar
3 eggs
3 bananas, mashed
2 cups flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
3/4 teaspoon baking powder
2/3 cup buttermilk
3/4 cup sugar
3 tablespoons cocoa powder
1/3 cup milk
3 tablespoons margarine
1 1/2 tablespoons light corn syrup
3/4 teaspoon vanilla
1 1/4 cups powdered sugar

Steps:

  • Cake: Preheat oven to 350 degree. Grease and flour a 9x13 pan. Cream margarine and sugar, add eggs and beat until fluffy. Add bananas. Mix dry ingredients in a separate bowl. Add buttermilk, then add dry ingredients. Beat on low speed until combined, then on high speed for 3 minutes. Pour into pan. Bake 45 - 50 minutes. Cool.
  • Frosting: While cake is baking, mix sugar and cocoa in 2-qt saucepan. Stir in milk, margarine and corn syrup. Heat to boiling, stirring often. Boil for 3 minutes, stirring often. Cool. Stir in vanilla and sugar. Frost cake.

Another fabulous SL recipe for chocolate and banana lovers. It is delicious warm or cold. I have made this many times and it never fails to please everyone! I have estimated the time to make it- sounds like a lot of steps, but it goes together really quickly and best of all....it is foolproof! Make sure you use a big enough bowl since it makes quite a lot, especially if you decide to add extra bananas. I also guessed at the # of servings since it really depends on how much you "dish out" for each person.

1/3 cup flour
1/4 teaspoon salt
2 cups milk
2 cups half-and-half
4 large eggs, separated
2 cups semisweet chocolate morsels
1 tablespoon vanilla extract
1 (11 ounce) package chocolate wafers
6 large bananas
1/3 cup sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine first 3 ingredients in a large saucepan.
  • Whisk in milk, half-and-half, and egg yolks.
  • Cook over medium heat, whisking constantly, until smooth and thickened.
  • Remove from heat, and stir in chocolate morsels and 1 tablespoon vanilla.
  • Reserve 14 wafers.
  • Arrange one-third of remaining chocolate wafers in the bottom of a 4-quart baking dish.
  • Slice 2 bananas, and layer over wafers.
  • Top with one-third of pudding mixture.
  • Repeat layers twice and arrange reserved wafers on top.
  • Beat egg whites at high speed with an electric mixer until soft peaks form.
  • Gradually add 1/3 cup sugar, 1 tablespoon at a time, beating until stiff peaks form.
  • Fold in 1/2 teaspoon vanilla.
  • Spread meringue over pudding, sealing to edge of dish.
  • Bake at 325° for 25 minutes or until golden.

  • In sauce pan, melt 1/2 cup of chocolate chips over medium heat.

3 very ripe bananas, peeled, each cut crosswise into 4 pieces
1 14-ounce can sweetened condensed milk, divided
1 cup half and half
2 tablespoons light corn syrup
1 tablespoon fresh lemon juice
1/2 cup bittersweet chocolate chips
1 ripe banana, peeled, diced (for garnish)

Steps:

  • Puree 3 bananas, 3/4 cup condensed milk, half and half, corn syrup, and lemon juice in processor until smooth. Transfer to ice cream maker; process according to manufacturer's instructions. Transfer to container. Freeze until firm, about 4 hours.
  • Heat 1/2 cup sweetened condensed milk and 1 tablespoon water in small saucepan over medium heat; add chocolate. Stir until melted and smooth, adding more water by teaspoonfuls if sauce is very thick.
  • Divide ice cream among bowls. Drizzle sauce over; top with diced banana.
