A hearty loaf of banana bread is an excellent way to use up a pile of leftover bananas, but sometimes you want a lighter option. These tender banana muffins are crowned with a delightfully crunchy cinnamon crumb topping that lends to their addictive nature. The easy recipe, which doesn't require any special equipment - just a couple of bowls - was adapted from one originally developed by a 9-year old named Meghan Cwikla. With it, she won the junior division at the 1997 State Baking Contest at the Connecticut State Fair.

Steps:
- For the topping, in a medium bowl, mix flour, sugar and cinnamon. Add butter or margarine and mix with a fork or pastry cutter until crumbly. Put aside while preparing muffin batter.
- For the muffins, in large bowl, combine dry ingredients. Set aside.
- In another bowl, combine mashed bananas, sugar, slightly beaten egg and melted butter or margarine. Mix well. Stir into dry ingredients just until moistened.
- Fill greased muffin cups two-thirds full. (Do not use paper muffin cups!) Using hands, arrange coarse, pea-sized crumbs over muffin batter.
- Bake at 375 degrees for 18 to 20 minutes or until muffins test done with a cake tester. Cool in pan 10 minutes before removing to a wire rack.
BEST EVER BANANA MUFFINS
These are the only banana muffins I make now. I add chocolate chips to my batter and triple the recipe. These freeze great. I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". (Prep time is a guess.)

BANANA BREAD CRUMB MUFFINS
Steps:
- Preheat oven to 350 F.
- Line a muffin tin with cupcake liners. Set aside.
- In a large bowl combine all of the crumb topping ingredients.
- Use a pastry cutter until mixture is crumbly. Set aside.
- In a large bowl, cream together butter, brown sugar and white sugar.
- Beat in eggs and vanilla extract. Seat aside.
- In a medium bowl, whisk or sift flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add flour mixture into the wet mixture alternating with the buttermilk.
- Stir just until combined. (be careful not to overdo it.)
- Add lemon juice to mashed bananas.
- Gently fold bananas into the batter.
- Fill muffin pan 3/4 full of batter.
- Spoon on enough crumb topping to completely cover the top. (pinch the crumbs together to create larger crumbs if desired. I used a little over 1 T. of topping)
- Bake for 18-20 minutes.
- Remove from oven when moist crumbs cling to a toothpick inserted into the center.
- Let muffins sit in the pan for about 4 minutes (they will continue to cook)
- Place muffins on a cooling rack to finish cooling.
- Enjoy!
VEGAN BANANA CRUMB MUFFINS
Steps:
- Preheat oven to 375 degrees F (190 C) and lightly grease a standard size muffin tin (will make 10-11 muffins as original recipe is written // adjust if altering batch size)
- Prepare flax eggs by mixing flaxseed meal and water in a large mixing bowl. Let set for 5 minutes.
- To the flax egg, add banana and mash, leaving just a bit of texture.
- Add brown sugar, baking soda, salt and whisk for one minute.
- Stir in vanilla, melted butter and mix.
- Add flour and oats and stir with a spoon or spatula until just combined. Lastly, fold in walnuts (optional).
- Divide batter evenly among 10-11 muffin tins (adjust if altering batch size), filling a generous 3/4 full (I fill mine practically full for aesthetic effect).
- Quickly wipe your mixing bowl and add crumble ingredients. Prepare crumble top by mashing ingredients together with a fork until crumbly like wet sand. Generously top muffins with streusel. You may have leftovers (reserve for future muffins or add to crumbles, pies, quick breads, etc.).
- Bake for 17-22 minutes or until tops are golden brown and a toothpick or knife comes out clean. Let cool for a few minutes, remove from muffin tin and serve warm. Once completely cooled, store in a covered container at room temp for several days. Freeze for longer term storage.

- Prepare the crumb topping: In a small bowl, whisk together flour, sugar and salt. Cut shortening into flour mixture until it resembles coarse crumbs. Larger crumbs are a bit more desirable. Stir in the mashed banana and set bowl aside.
- Prepare the batter: In a medium bowl, sift together flour, baking soda, baking powder and salt. In a large bowl, whisk together sugar, vegetable oil, buttermilk, egg, bananas and vanilla. - Preheat the oven to 400 degrees F (200 degrees C) and grease a 12-cup mini muffin pan.
- Combine brown sugar, flour, coconut, and lemon zest in a bowl for crumb topping. Rub in butter until the mixture is coarse and crumbly.
- Add 1 teaspoon lemon juice to milk and let sit until curdled, about 5 minutes.
- Cream white sugar and butter in a medium bowl. Mix banana and egg together in another bowl and add lemon zest, remaining lemon juice, and vanilla extract. Add the banana mixture to the creamed butter and sugar and stir well. Add the curdled milk and stir lightly into the mixture.

- PREHEAT OVEN TO 375.
- MUFFIN MIX:.
- 1. In a large bowl, combine the dry ingredients for the MUFFIN MIX.
- 2. In another bowl, combine the bananas, sugar, egg, vanilla and butter and mix well.
- 3. Stir the wet ingredients into the dry until combined.
- 4. Fill (either greased muffin cups or paper lined muffin cups) 3/4 full with mixture.
- CRUMB TOPPING:.
- 1. Combine the flour, sugar and cinnamon.
- 2. Cube the VERY COLD STICK BUTTER and toss into the dry ingredients.
- 3. Best way to do this is with a pastry blender. They are inexpensive tools that you can find at any store that sells cooking supplies (Walmart, Target, Kmart -- etc.) "CUT" the butter into the dry ingredients until you get a crumb mixture. It's ok to have larger chunks because they will become the best crumbs after they cook. "CUTTING" just means to mash together the butter and dry ingredients. You can do this with the tines of a fork too, but it's harder work ;).
- 4. Sprinkle crumb topping over the muffins and bake for 25 minutes, or until a toothpick or knife poked in the center of the muffin comes out dry.

- Combine all of the muffin ingredients in a bowl and mix well - a food processor will also do a very good job
- Pour into the muffin tin until each well is 3/4 full
- Combine the sugar and flour for the topping in a separate bowl and cut in the butter until the mixture goes crumbly (like an apple crumble topping)
- Add the topping mixture to the top of each muffin
- Place in the over for 20 minutes or until golden brown
- Cool on a rack and then serve
