HERBED BASMATI RICE

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

2 Tbsp butter
1 tsp dried onion or ¼ C finely chopped onion
1 tsp salt
black pepper (a few shakes)
1 tsp garlic (minced)
¼ cup fresh lemon juice
3 cup chicken broth
1½ cup basmati rice
1/2 tsp rosemary, basil, thyme, dill (use less dill), oregano, or parsley
fresh parsley (for garnish)

Steps:

  • In a pan over medium heat melt butter and add in onion as well as salt and pepper.
  • Stir until onion is soft.
  • Add in garlic and cook for one minute more.
  • Add in chicken broth and lemon juice and herb combination along with the rice. I used 1 tsp basil, 1/2 tsp thyme and 1 tsp parsley.
  • Stir until mixed together.
  • Bring to a boil and cover and reduce heat.
  • Cook covered for about 20 minutes or until rice is tender.
  • Garnish with some fresh herbs if desired

  • In a skillet, saute onion in butter until tender. Dissolve bouillon in boiling water; add to the skillet. Stir in rice, parsley, sage and celery salt if desired. , Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until rice is tender.

1 tablespoon unsalted butter
1/2 onion, chopped
2 cups long-grain rice
3 cups water
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Heat butter over medium heat in a medium-size saucepan. Add onion, and sauté until pale golden, 1 to 2 minutes. Add rice, and stir to coat.
  • Add 3 cups water, and bring to a boil. Add salt and pepper. Cover, and reduce to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
  • Remove from the heat. Fluff with a fork, and stir in chopped parsley.

1 cup thinly sliced carrot
2 cups basmati rice (or other fine quality rice)
1/2 teaspoon dill weed
2 tablespoons chopped fresh parsley
1 cup chopped onion
3 cups water
2 teaspoons salt
1 dash black pepper
non-stick olive oil flavored cooking spray (or 1 tsp. olive oil, spread in pan with paper towel)
1 tablespoon fat-free margarine (or vegan margarine) (optional)

Steps:

  • Spray large saucepan with cooking spray.
  • Add onion and carrots and saute over medium heat, adding a few drops of water if necessary to prevent sticking, stirring frequently, until onion is translucent and carrot is fairly tender.
  • Add water rice, salt, dill weed, and pepper; bring to a boil.
  • Cover; simmer 20-25 minutes or until rice is tender.
  • Stir in parsley and fat-free margarine.
  • Serve.
