- Combine crushed cookies and butter in bowl. Press crumb mixture onto bottom and up side of a 9-inch pie plate. Refrigerate.
- Add half-and-half, egg yolks, sugar and cornstarch to 2-qt. saucepan and whisk until the mixture is smooth and cornstarch is dissolved. - Combine chocolate, 1 tablespoon milk, and butter or margarine in a medium, microwave safe bowl. Microwave on high for 1 to 1 1/2 minutes, stirring every 30 seconds. Stir until chocolate is completely melted. Spread evenly in pie crust.
- Arrange banana slices over chocolate.

- Preheat oven to 350°. Grease a 9-in. pie plate. Stir together 1-3/4 cups cake mix, egg and 1 tablespoon butter until combined. Turn onto a floured surface; knead until a smooth dough forms. - Preheat the oven to 400°F.
- In food processor, process cookies and 2 tablespoons brown sugar until finely ground.
- Add melted butter and 1/4 cup of milk and process until completely moistened.
- Oil a 9-inch non-stick or glass pie plate.
- Using wet fingers, press crumb mixture evenly into bottom and up sides of pie plate.
- Bake 10 minutes. If crust rises during baking, use the back of a spoon to push the crust back into shape. Cool on a wire rack.
- In medium saucepan, combine remaining 1/2 cup brown sugar, cornstarch, nutmeg and salt.
- Whisk remaining 2 1/2 cups of milk into sugar mixture until well combined.
- Bring to a boil over medium heat.
- Simmer, whisking constantly, for 1 minute or until thickened.
- Remove from heat and stir in vanilla.
- Set aside to cool to room temperature.
- Thinly slice bananas.
- Fold all but 1 cup of bananas into cooled pudding.

CHOCOLATE COOKIE CRUST BANANA CREAM PIE
Steps:
- Make the crust:
- Preheat oven to 350 degrees F.
- Melt butter and sugar together in a saucepan over medium heat. Gradually add cookie crumbs and stir to combine well. Press crumb mixture onto the bottom and up the sides of a 9-inch pie dish. Bake crust 10 to 12 minutes. Cool completely.
- For filling:
- Heat the milk over medium heat until warmed, but not boiling. Beat the yolks in a large bowl. Slowly whisk the warm milk into the yolks and add the vanilla. Whisk sugar, cornstarch, and salt together in heavy medium saucepan. Over medium heat, gradually whisk in the egg, milk, and vanilla mixture to the dry ingredients until custard thickens and you can see the tracks from the whisk in the bottom of the pan, about 6 minutes. Remove from heat. Transfer custard to large bowl and fold in bananas; cover bowl with plastic wrap and cool custard completely in refrigerator, about 1 1/2 hours.
- When custard has chilled, make topping by whipping cream with sugar and vanilla in a mixer at high speed until soft peaks form. Fold in most of the remaining chocolate cookie crumbs, reserving a few for garnish.
- Stir custard to loosen, if necessary. Spread over bottom of prepared crust. Top with whipped cream mixture. Refrigerate until ready to serve. Scatter remaining chocolate crumbs over top just before serving.

- Prepare crust: combine pretzels, cookies, and brown sugar in the bowl of a food processor; pulse until blended. Drizzle in melted butter slowly, and pulse to combine. Press firmly into the bottom of a 9x13-inch dish.

- To make chocolate pastry: In a food processor or a bowl, combine flour, sugar, cocoa, and salt; whirl or mix to blend.
- Add butter, whirl, or rub in with our fingers until fine crumbs form.
- Add egg yolk and vanilla; whirl or mix with a fork until blended.
- Lightly spray 9-inch pie pan with non-stick spray. Pour mixture into pan and press evenly over bottom, up sides and across rim. Pinch in decorative edge, or press with tines of fork.
- Bake in 350°F oven just until crust is slightly darker around edges, 15 to 18 minutes.
- Let cool on a rack at least 1 hour.
- To make filling: In a 2-quart pan, combine ¾ cup sugar, cornstarch, and salt.
- Add milk and whisk to blend.

- Do not scorch.
- Remove from heat.
- In a small bowl, beat egg yolks to blend.
- Stir about ½ cup of the hot milk mixture into yolks, then add this mixture back it pan.
- Return pan to medium-low heat and stir until mixture just begins to bubble, about 2 minutes.
- Remove from heat and stir in butter and 1 teaspoon vanilla.
- Spread a thin layer of warm custard over bottom.
- Peel bananas and slice half into pie, covering bottom evenly.
- Pour half the warm custard evenly over bananas.
- Repeat to layer remaining bananas and custard.
- Cover surface of custard with plastic wrap.
- Chill until cold, at least 2 hours.
- In a bowl, with a mixer on high speed, beat whipping cream and remaining sugar and vanilla until mixture holds soft peaks.
- Mound on pie and swirl to cover.
- Top with chocolate shavings, if desired.
