- Heat oven to 350°F In a large mixing bowl cream butter, vanilla and sugar until light and fluffy. Beat in eggs, one at a time.
- Sift flour, baking powder, baking soda and salt together. Mix mashed bananas and milk together.
- Blend dry ingredients into batter alternating with banana mixture. Stir in chopped nuts.
- Pour batter into 2 greased and floured 8-inch round or square baking pans.
- Bake for 30 to 40 minutes or until cake tester inserted in center comes out clean.
- Cool 10 minutes, then turn out on racks until thoroughly cool. When ready to serve frost with Cream Cheese Frosting.
- Cream Cheese Frosting: In mixing bowl, stir cheese until smooth. Gradually beat in sugar a little at a time. Add vanilla; beat until smooth. Spread mixture between layers and around sides.

Steps:
- Preheat oven to 160degC (325degF).
- Beat eggs and sugar together in electric mixer until mixture is thick and pale - use a fairly low speed.
- Pour cream into the bowl and beat for a few seconds longer.
- Sift flour, add to bowl and stir with wooden spoon.
- Peel bananas and smash with the flat side of a chopper, but do not mash, add to batter with nuts and the coconut mixed with the milk.
- Stir only until all ingredients are combined.
- Grease 2 x 20cm (8") pans and dust with breadcrumbs, shaking out excess and cook for 1 hr or until top brown, usually 1 to 1 1/4 hours.
- Serve warm or cold.

- Soak. Tear sandwich bread into small pieces and soak in the coconut milk mixture. Set aside for 15 minutes.
- Bake. Gently mix 2/3 of the banana slices with the mixture. Pour in a baking pan greased with butter. Flatten the surface and arrange the remaining banana slices on top Bake in a preheated oven at 175°C /350°F for 15 minutes with bottom heat only. Then brush the surface with thin layer of butter. Bake with both top and bottom heat for another 30 minutes or until the banana slices get caramelized and the edges of the cake turn golden brown. Baking time varies depending on the oven. Keep a watch out on the last 15mins, when the surface is golden brown, take out from the oven immediately because the cake gets burned easily.
