1/2 cup heavy cream
1 teaspoon vanilla extract
2 1/2 cups confectioner' s sugar

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl,cream together sugar,sour cream,eggs,and 1/4 cup softened butter.
  • Stir in mashed bananas and 2 teaspoons vanilla extract.
  • Add the flour,salt,and baking soda and mix well.
  • Pour batter into a greased 9x13 inch pan. Bake about 25-30 minutes,or until a toothpick inserted in the center comes out clean. Cool completely.
  • To make frosting,beat butter and confectioner 's sugar together until smooth.
  • Slowly add the heavy cream and mix until smooth. Stir in the vanilla extract.
  • Spread frosting over cooled cake.

1/2 cup sour cream
1 egg
2 Tablespoons butter, softened
2 medium bananas, mashed
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 teaspoon baking soda

2 Tablespoons butter, softened
1 1/4 cups powdered sugar
2-3 Tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray an 8x8 baking pan with cooking spray and set aside.
  • Using an electric mixer, beat together the sugar, sour cream, egg, and softened butter over medium speed until combined. Add in the mashed bananas and vanilla extract.
  • Stir in the flour, baking soda, and salt by hand, mixing until just combined. Pour into the prepared baking dish and bake in the preheated oven for 22-28 minutes, until top is golden brown and a toothpick inserted in the center comes out clean.
  • Cool completely on a wire rack.
  • To make the frosting, beat the butter, powdered sugar, milk, and vanilla extract with an electric mixer until smooth. Evenly spread over the cooled cake and serve. I like to sprinkle the frosted cake with a little cinnamon for an extra boost of flavor and color, but this is optional! Refrigerate any leftovers.

Steps:

  • For the banana cake: Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
  • In the bowl of an electric mixer, combine the butter, brown sugar and granulated sugar. Mix on medium-high speed until light and fluffy, about 5 minutes.
  • Meanwhile, sift the flour, baking soda, baking powder, cinnamon and salt into a medium bowl. Set aside.
  • Add the bananas to the butter mixture and mix until combined. Let the mixer do the work of mashing for you. Add the eggs one at a time and mix until well combined. Mix in the yogurt and vanilla. Turn the mixer to low and add the dry ingredients until just combined. Do not overmix.
  • Pour the batter into the prepared cake pan. Bake until a cake tester or toothpick comes out clean, 45 to 50 minutes. Cool in the pan for 5 to 10 minutes, then turn onto a wire rack and cool completely.
  • For the cream cheese frosting: Using the electric mixer on high speed, blend the cream cheese and butter until light and fluffy, 4 to 5 minutes. With the mixer on low, add the confectioners' sugar and then the vanilla.
  • Spread the frosting on top of the cake. Decorate around the perimeter of the cake with raspberries, if desired.

1 butter recipe yellow cake mix
1 (3 1/2 ounce) package instant vanilla pudding
1/4 cup water
1/3 cup oil
1 cup mashed ripe banana
3 eggs
3/4 cup creamy vanilla frosting (from can)
1/4 cup creamy peanut butter

Steps:

  • Heat oven to 350 degrees F.
  • Grease and flour a bundt pan.
  • In large bowl, combine all cake ingredients, beat on low speed until moistened, then beat 2 minutes at medium speed.
  • Pour batter into greased/floured pan.
  • Bake cake at 350 degrees F for 45-55 minutes, or until toothpick comes out clean.
  • (Cake will be moist on top.) Cool in pan 10 minutes.
  • Remove from pan and cool for 45 minutes, or until completely cooled.
  • Microwave frosting on high for 25-35 seconds, or until thin consistency.
  • Immediately stir in peanut butter.

Steps:

  • For cake, preheat oven to 350°F.
  • Measure flour, soda, salt, baking powder and sugar into mixing bowl.
  • Add softened butter and mix at medium speed of electric mixer until the mixture is a "mealy" consistency.
  • Add buttermilk and mashed banana gradually and mix for four minutes; your mixture should be light and fluffy.
  • Scrape the mixture from the sides of the bowl and add eggs in two additions, beating after each addition of egg.
  • Pour into two greased and floured 9 inch cake pans and bake at 350° for about 25 minutes (cake should be golden brown).
  • Remove layers from pan and cool completely, then chill layers before you frost the cake (the icing is thin and it WILL RUN if cake is not cold!).
  • For frosting, cream butter and sugar together and slowly add the cream.
  • Add the mashed banana gradually, continuing to beat as you add it.
  • Add corn syrup and mix enough to blend well (corn syrup will help the thin frosting to "set").
  • Frost cake and store in refrigerator.

This is one of (if not) the BEST banana cake I have ever tasted! I thought the oven temp of 275° sounded a little low, but this cake baked up (and rose) beautifully in my oven at this temp after pretty much exactly one hour. I do not know if the little "freezer trick" to this recipe is what ensured its moistness or not, but I did it, and it was exceptionally moist & delicious. Would be interesting to see if it still came out as great if this step was skipped. All I know is that I followed this recipe EXACTLY as stated (except that I had no buttermilk, so I subbed with a mix of lemon juice & milk) and I got exceptional results. So moist and yummy...a dense cake, similar in texture to a carrot cake... I personally would not call this frosted banana bread :o) Depending on the amount of frosting you like you can decide whether to half the recipe or not. I used the full recipe and had some leftover. I sprinkled on the chopped walnuts and threw this baby in the fridge and cut it the next day...TO DIE FOR! I really liked it slightly chilled, but great at room temp too! It got better each day it sat, I always make this cake at least the day before I need or want it. I was extremely pleased with this cake and will be making it over & over again!! So glad I came across this one!! (on another website). (* * Just to update the recipe, (based on some of the reviews), the baking time may vary based on individual ovens. I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.

2/3 cup milk
2 large bananas, very ripe
18 1/4 ounces butter recipe cake mix
1 teaspoon baking soda
1/2 cup butter, softened (1 stick, no substitutes)
3 eggs
1 teaspoon vanilla
1/3 cup chopped pecans
1 cup brown sugar, packed
2 tablespoons all-purpose flour
1 teaspoon all-purpose flour (in addition to the 2 Tablespoons)
3 tablespoons butter (no substitutes)
1/4 cup milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 375 for glass or light metal pan; 350 for dark metal or coated pan. Position a rack in the middle of the oven.
  • Grease and flour a 9x13" pan.
  • Put 1 tablespoon lemon juice in a measuring cup and fill with milk to the 2/3 cup line. Set aside.
  • Mash bananas with a fork, adding the remaining tablespoon of lemon juice to them as you mash. Set aside.
  • Combine cake mix and baking soda in a large mixer bowl and stir. Add bananas, softened butter, lemon-milk mixture, eggs, and vanilla. Beat at low speed about 30 seconds until moistened. Turn speed to medium and beat another 4 minutes.

  • For glass or metal pan, bake at 375 degrees for 28 to 33 minutes. For dark metal or coated pan, bake at 350 degrees for 31 to 33 minutes. Cake should be pulling away slightly from edges of pan when done, and the center should spring back when lightly touched with finger. Check for doneness at lowest time, but don't move cake in oven before then as it may fall.
  • Cool in pan on wire rack, then frost.
  • For frosting:.
  • Spread chopped pecans on a baking sheet and bake in 375 degree oven for 5 to 8 minutes until lightly browned. Watch carefully to avoid overcooking! Set aside while you prepare frosting.
  • Have all frosting ingredients ready so you can move quickly while making the frosting, or it may set up before you can smooth it on the cake.
  • In a small saucepan, thoroughly mix brown sugar and flour. Add butter and milk, and set over medium-high heat until mixture comes to a rolling boil. Boil exactly 1 1/2 minutes.
  • Remove from heat; cool 5 minutes. Beat briefly with a wooden spoon until it begins to thicken. Mix in vanilla and continue beating until frosting is the consistency of thick honey, no more than 1 to 2 minutes.
  • Immediately pour frosting onto cooled cake and quickly spread with the back of a warm spoon before frosting begins to set up. Quickly sprinkle with toasted pecans.
  • You can serve immediately; although frosting may take several hours to completely set.
