These are soft, simple, but delicious, bars made with yummy ingredients. They're always a big hit when I make them for my friends and bring them to school.

⅓ cup peanut butter
⅓ cup brown sugar
2 ½ tablespoons butter
1 egg
½ teaspoon vanilla extract
1 ripe banana, mashed
⅔ cup rolled oats
⅓ cup all-purpose flour
2 tablespoons wheat germ
¼ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking pan.
  • In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.
  • Bake in the preheated oven until set and lightly browned, 20 to 25 minutes. Remove from oven and cool in pan on wire rack before cutting into bars.

A quick and delicious breakfast bar. I make these for my daughter and husband to get them fed and out the door quick in the morning. I have made these with a variety of combinations of dried fruits. You can also try diced carrots or parsnips in place of the cranberries for a nice change. Its an easy way to sneak veggies into a kid's diet!

Number Of Ingredients 12

4 cups oatmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
2 eggs, beaten
3/4 cup ripe banana, mashed
1/4 cup applesauce
1 cup milk
1 tablespoon maple syrup
3/4 cup brown sugar
1 tablespoon vanilla
1 cup dried cranberries

Steps:

  • Preheat oven to 325 degrees. Grease a 13"x9" pan or use a parchment sling.
  • Combine the oats, baking powder, salt and cinnamon. Make a well in the center.
  • In another bowl combine eggs, banana, applesauce, milk, maple syrup, brown sugar and vanilla.
  • Pour the liquid mix into the dry and stir until just combined. Add the dried cranberries.
  • Place in greased pan and bake for 45 minutes.
  • Cut into bars and enjoy.

3/4 cup sweet unsalted butter, softened
1/2 cup brown sugar
1 egg
4 cups quick oats
2 -3 ripe bananas, mashed
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts or 1/2 cup chopped pecans
1/2 cup golden raisin

Steps:

  • Cream the butter & sugar together then add the egg.
  • Stir in the oats, bananas, salt, & cinnamon.
  • Mix in the nuts & raisins (if using).
  • Spread the mixture in a greased 9x13 pan then bake for 30-35 minutes on 350 degrees.
  • Cool in the pan then cut into bars.

  • Place bananas in a large bowl. Mash them with a fork or potato masher until just small chunks remain. Stir in oil and brown sugar with a wooden spoon or silicone spatula. Add egg, vanilla, and salt, and stir until combined. Stir in baking soda. Add flour and oats and stir until mixed, some lumps will remain. Spread in prepared pan.
  • Bake for 18-22 minutes until browned around the edges and not jiggly in the center. Cool completely. Slice into bars.
  • Optional drizzle: melt white chocolate chips and peanut butter in a small microwave safe bowl (on 50% power in 30 second increments, stirring between each). Place melted chocolate in a small ziploc bag with the tip cut off and drizzle over bars.
