THE BEST BANANA BREAD
We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

- Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
- Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
- Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
- As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
- Jars should be eaten immediately or kept sealed in refrigerator for up to a week.

- Preheat oven to 350°.
- Lightly grease 9 x 5 loaf pan.
- In large bowl, combine flour, soda and salt.

My mom shared this recipe with me many years ago... and ended my search for the perfect banana bread. This is now the only recipe I use. I've been told by many that it is the best banana bread they've ever tasted! Perfect size for sharing, bake sales and lunch boxes. Very moist! Freezes well.

- 1. Preheat oven to 350 degrees. Lightly spray 4 (15 oz.) or 3 (26 oz.) cans with non-stick spray. Mash bananas in separate bowl and set aside.
- 2. In large bowl, beat eggs. Add oil and vanilla, mix well. In a separate bowl, stir together the flour, baking powder, soda, salt and sugar. Add to wet ingredients alternately with the milk. Add bananas. Beat until smooth - fold in walnuts.
- 3. Fill cans 1/2 full. Set cans on cookie sheet. Bake at 350 degrees for 40 to 60 minutes OR UNTIL DONE (toothpick inserted in center should come out clean). They will be a nice golden brown. Time depends on the size of the can. Cool in cans on rack until you can touch, at least 5 minutes. Remove from cans and cool completely on rack. Wrap in plastic. Very moist! Freezes well.
- 4. Note: I've also made this into muffins. (Baking time is less...use toothpick test) As with the cans, spray with non-stick spray (or use cupcake liners) and fill 1/2 full.
MOIST AND DELICIOUS BANANA BREAD

- Grease and flour a 9 inch loaf pan
- Pre-heat the oven to 350 °F
- In a large mixer bowl, cream the butter and sugar together with the flat beater
- Add bananas and eggs and mix well. Remove the bowl from the mixer
- In a medium bowl, sift together all the dry ingredients and add to the wet ingredients along with the vanilla. Mix with a spatula without over stirring
- Slowly stir in the chocolate chips.
- Pour the batter into the greased pan.
- Mix the 2 Tbs of brown sugar with the ½ tsp of cinnamon and spread evenly over the batter
- If using the optional chopped walnuts, spread them evenly over the batter now.
- Place on the middle rack of the oven and bake for 70 minutes. At this point use a cake tester to test the doneness.
- Cool in the pan for 10 minutes and then remove the loaf onto a cooling rack for another 15 minutes before serving.
- Carefull... this banana bread is awesome and may dissapear in one sitting. Enjoy!

- If necessary, grease/spray the bread pan or use baking parchment paper to line the bread pan.
- Mash bananas with a fork.
- Lightly beat eggs.
- Soften the butter in a microwave.
- Stir eggs, milk, bananas and butter together.
- Mix in remaining ingredients. Stir until the batter is fully mixed.
- Optional - If you want to enhance this 2 banana bread recipe, you can stir in 1 cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
- Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.

- Optional - Right after taking the bread pan out of the oven, use a long wooden skewer to test if the banana bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
- After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.
