I stumbled upon this delicious banana bread when I was trying to make something else, but I ended up with something even better! Everyone in the family just loves this recipe. It tastes even better hot and fresh out of the oven!! Enjoy, and feel free to increase or decrease the amount of oats.

1 ½ cups all-purpose flour
1 cup white sugar
1 ½ teaspoons baking powder
½ cup shortening
2 eggs
1 cup milk
1 teaspoon almond extract
1 teaspoon ground cinnamon
1 very ripe banana, mashed
¾ cup all-purpose flour
½ cup brown sugar, packed
1 cup quick-cooking rolled oats
½ teaspoon ground cinnamon
½ cup cold butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 8x4 inch loaf pan.
  • Whisk together flour, sugar, and baking powder in a mixing bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. Whisk together the eggs, milk, vanilla extract, and cinnamon in a large bowl. Add the banana, and mix well. Fold the flour mixture into the banana mixture until combined. Pour batter into prepared pan.
  • Prepare the crumb topping by combining the flour, brown sugar, oats, and cinnamon in a mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. Spoon the crumb mixture over the batter.
  • Bake in preheated oven for 20 minutes. Reduce heat to 325 degrees F (165 degrees C), and bake until a toothpick inserted in center of the loaf comes out clean, 10 to 15 minutes longer. Cool in pan 10 minutes before turning out onto a wire rack.

1 cup sugar
1/2 cup cornstarch
6 cups 2% milk
5 large egg yolks
1/4 cup butter, cubed
2 teaspoons vanilla extract
1 teaspoon kosher salt
2 packages (11 ounces each) vanilla wafers
7 medium bananas, sliced
2 cups heavy whipping cream
6 tablespoons sugar

Steps:

  • In a large heavy saucepan, mix sugar and cornstarch. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in butter, vanilla and salt. Cool 15 minutes, stirring occasionally., Reserve 1 banana and 1 cup whole wafers for topping. Crush 2 cups wafers and set aside. In a 13x9-in. baking dish, place a single layer of whole wafers, filling gaps with crushed wafers. Layer with a third of the bananas and pudding. Repeat layers twice. Press plastic onto surface of pudding. Refrigerate, covered, overnight., In a bowl, beat heavy cream until it begins to thicken. Add sugar; beat until soft peaks form (do not overmix). Just before serving, spread whipped cream over pudding; top with reserved banana and wafers.

3 large eggs, room temperature

4 very ripe bananas, mashed

1 egg
1 teaspoon vanilla
1/4 cup milk
1 1/2 cups Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 350°F. Lightly spray 9x5-inch loaf pan with cooking spray.

  • In large bowl, mix mashed bananas, melted and cooled butter, 1 cup sugar, the egg, milk and vanilla to combine. 2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 to 4 ripe bananas (mashed should be about 1 ¼ cups (anywhere from 1 to 1 ½ cups will work))
3/4 cup granulated sugar (can use a combination of brown sugar and granulated sugar (see post))
2 large eggs
6 tablespoons unsalted butter (melted and cooled)
1/3 cup sour cream (plain Greek yogurt can be used instead)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Spray with nonstick cooking spray or grease and flour the bottom and sides of an 8½ x 4½ inch loaf pan. (Can also butter pan and sprinkle with sugar or a combination of sugar and cinnamon.) Set aside.
  • Whisk together flour, baking soda and salt in a medium bowl.
  • Mash bananas in a large bowl using a potato masher, fork, or a mixer. There can be some small chunks remaining, it doesn't have to be completely smooth.
  • Whisk in sugar, eggs, melted butter, sour cream and vanilla extract.
  • Add flour mixture and stir in gently just until combined. Transfer to the prepared loaf pan and use the spatula to smooth the top.
  • Bake for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If bread starts to get too brown on top, tent with foil for the last 10 minutes.

6 Tbsp softened butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 tsp pure vanilla
2 large eggs
3 medium ripe bananas ([1 1/2 cups mashed])
1 1/2 cups all purpose flour
1 3.4 oz box instant banana cream pudding mix
1/2 cup finely ground vanilla wafer crumbs
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup buttermilk
Streusel:
4 Tbsp cold butter
1/2 cup finely ground vanilla wafer crumbs
1/3 cup light brown sugar
1/4 cup all purpose flour
1/2 tsp ground cinnamon
1/2 cup pecan pieces

Steps:

  • Preheat the oven to 350°F. Butter bottom and sides of a 9 x 5 x 3 inch loaf pan or spray with baking spray. Set aside.
  • Using an electric mixer, cream together butter, brown sugar, granulated sugar and vanilla for 2 minutes or fluffy. Add eggs one at a time beating well after each addition.
  • Add the bananas continue to whip on medium-high speed, just until the pudding has dissolved.
  • In a separate mixing bowl, use a whisk to sift together 1 1/2 cups of flour, pudding mix, 1/2 cup of vanilla wafer crumbs, baking soda, salt and baking powder.
  • Lower the speed of the mixer, and begin to add the dry ingredients alternatively with the buttermilk. Stop and scrape down the sides of the bowl periodically.
  • After all has been added, beat for 1 minute to fully incorporate. The batter will be creamy, dense and thick. Spread batter evenly into the prepared loaf pan.
  • To prepare the streusel:: Using a food processor or a pastry cutter cut the butter into the vanilla wafer crumbs, flour, brown sugar and cinnamon until it resembles coarse crumbs. Stir in the pecans by hand. Sprinkle evenly over batter.
  • Bake for 45 minutes at 350°F, then lower the oven temperature to 325°F. Continue to bake for an additional 30 minutes. Check halfway through baking for over browning and lay a piece of foil on top, if needed. Bake until a tester inserted into the center comes back clean..
  • Cool in the pan for 15 minutes, then gently run a knife around the edge to loosen the streusal from the pan.
  • Remove from the pan and place onto a wire rack to cool completely.

This is delicious as a dessert or a make ahead breakfast or brunch item. The pudding can easily sit overnight in the refrigerator before baking and tastes good cold too. I use any leftovers from my Oatmeal Molasses Bread for this recipe, but as long as the bread is not sliced sandwich bread, most breads will work. The dairy can be done in a variety of ways, depending on what you have on hand. I have even made this with 1% and it turns out fine, but not as creamy.

2 1/4 cups light cream

  • Remove from oven when a skewer inserted near the center comes out clean, but there is still a little pudding on it. There will be carry over cooking, so keep that in mind.
  • Let cool to desired temperature. This is great warm or cold.
