I stumbled upon this delicious banana bread when I was trying to make something else, but I ended up with something even better! Everyone in the family just loves this recipe. It tastes even better hot and fresh out of the oven!! Enjoy, and feel free to increase or decrease the amount of oats.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 8x4 inch loaf pan.
- Whisk together flour, sugar, and baking powder in a mixing bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. Whisk together the eggs, milk, vanilla extract, and cinnamon in a large bowl. Add the banana, and mix well. Fold the flour mixture into the banana mixture until combined. Pour batter into prepared pan.
- Prepare the crumb topping by combining the flour, brown sugar, oats, and cinnamon in a mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. Spoon the crumb mixture over the batter.
- Bake in preheated oven for 20 minutes. Reduce heat to 325 degrees F (165 degrees C), and bake until a toothpick inserted in center of the loaf comes out clean, 10 to 15 minutes longer. Cool in pan 10 minutes before turning out onto a wire rack.

- In a large heavy saucepan, mix sugar and cornstarch. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. - Place the bread cubes in a greased 2-qt. casserole; pour butter over top and toss to coat. In a medium bowl, lightly beat eggs; add milk, sugar, vanilla, cinnamon, nutmeg and salt. - Heat oven to 350°F. Lightly spray 9x5-inch loaf pan with cooking spray.
- In small bowl, stir together Streusel ingredients except butter. Pinch pieces of butter into flour mixture until crumbly and looks like wet sand. Refrigerate.
- In large bowl, mix mashed bananas, melted and cooled butter, 1 cup sugar, the egg, milk and vanilla to combine. In another small bowl, stir together 1 1/2 cups flour, the baking powder, salt and 1/2 teaspoon cinnamon. Fold banana mixture into flour mixture just until combined, taking care not to over mix. BANANA BREAD RECIPE

- Preheat oven to 350°F. Spray with nonstick cooking spray or grease and flour the bottom and sides of an 8½ x 4½ inch loaf pan. (Can also butter pan and sprinkle with sugar or a combination of sugar and cinnamon.) Set aside.
- Whisk together flour, baking soda and salt in a medium bowl.
- Mash bananas in a large bowl using a potato masher, fork, or a mixer. There can be some small chunks remaining, it doesn't have to be completely smooth.
- Whisk in sugar, eggs, melted butter, sour cream and vanilla extract.
- Add flour mixture and stir in gently just until combined. Transfer to the prepared loaf pan and use the spatula to smooth the top.
- Bake for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If bread starts to get too brown on top, tent with foil for the last 10 minutes.
- Let bread cool on cooling rack in loaf pan for 15 to 20 minutes. Invert the loaf pan and carefully remove banana bread. Let bread continue to cool on the rack for another hour or more. Slice and serve.

BANANA PUDDING BREAD
Steps:
- Preheat the oven to 350°F. Butter bottom and sides of a 9 x 5 x 3 inch loaf pan or spray with baking spray. Set aside.
- Using an electric mixer, cream together butter, brown sugar, granulated sugar and vanilla for 2 minutes or fluffy. Add eggs one at a time beating well after each addition.
- Add the bananas continue to whip on medium-high speed, just until the pudding has dissolved.
- In a separate mixing bowl, use a whisk to sift together 1 1/2 cups of flour, pudding mix, 1/2 cup of vanilla wafer crumbs, baking soda, salt and baking powder.
- Lower the speed of the mixer, and begin to add the dry ingredients alternatively with the buttermilk. Stop and scrape down the sides of the bowl periodically.
- After all has been added, beat for 1 minute to fully incorporate. The batter will be creamy, dense and thick. Spread batter evenly into the prepared loaf pan.
- To prepare the streusel:: Using a food processor or a pastry cutter cut the butter into the vanilla wafer crumbs, flour, brown sugar and cinnamon until it resembles coarse crumbs. Stir in the pecans by hand. Sprinkle evenly over batter.
- Bake for 45 minutes at 350°F, then lower the oven temperature to 325°F. Continue to bake for an additional 30 minutes. Check halfway through baking for over browning and lay a piece of foil on top, if needed. Bake until a tester inserted into the center comes back clean..
- Cool in the pan for 15 minutes, then gently run a knife around the edge to loosen the streusal from the pan.
- Remove from the pan and place onto a wire rack to cool completely.

This is delicious as a dessert or a make ahead breakfast or brunch item. The pudding can easily sit overnight in the refrigerator before baking and tastes good cold too. I use any leftovers from my Oatmeal Molasses Bread for this recipe, but as long as the bread is not sliced sandwich bread, most breads will work. The dairy can be done in a variety of ways, depending on what you have on hand. I have even made this with 1% and it turns out fine, but not as creamy.

- Grease a 2 quart, oven safe dish or casserole.
- Put dried bread cubes in dish and sprinkle with dried fruit.
- Mix together eggs, cream, vanilla, cinnamon and nutmeg until well combined.
- Pour egg mixture over top of bread cubes.
- Allow to sit at least 30 minutes, but more time is better.
- Mix crumb topping by cutting the butter into the flour and brown sugar.
- Sprinkle topping over the pudding mixture and bake in an oven preheated to 350 degrees F.
- Bake for 45 minutes to an hour.
- Remove from oven when a skewer inserted near the center comes out clean, but there is still a little pudding on it. There will be carry over cooking, so keep that in mind.
- Let cool to desired temperature. This is great warm or cold.
