BANANA BRAN MUFFINS
Moist, healthy banana bran muffins made with yogurt, honey and ripe bananas. Good for you and super yummy for filling breakfasts and snacks!

- Preheat the oven to 350 degrees. Lightly coat a muffin pan with nonstick spray or fit with paper liners.
- Spread the walnuts in a single layer on an ungreased rimmed baking sheet. Bake for 8 to 10 minutes, tossing once halfway through, until they are fragrant and toasted. Watch carefully to makes sure they do not burn. Transfer to a cutting board and roughly chop.
- In a medium bowl, whisk together the whole wheat flour, salt, baking powder, baking soda, and cinnamon.
- In a large bowl, combine the mashed bananas (if mashing them directly in the bowl, double-check to make sure you have 1 full cup, not more or less), honey, yogurt, oil, eggs, and vanilla.
- Add the flour mixture to the bowl with the wet ingredients. By hand with a rubber spatula or wooden spoon, stir gently just until the flour disappears.
- Gently stir in the wheat bran, walnuts, and any additional mix-ins, just until combined. The batter will be very thick.
- Portion the batter into the muffin cups, dividing it evenly (I recommend using a batter scoop like this or try a 1/3 cup dry measuring cup).
- Bake for 24 to 28 minutes, until the tops are golden brown, a toothpick inserted in the center of a muffin comes out clean, and the tops spring back lightly when touched. Allow to cool for 5 minutes in the pan, then gently unmold and transfer to a wire rack. Serve warm or at room temperature.

- Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
- In a large mixing bowl, cream butter and brown sugar together until fluffy. Add bananas, milk, vanilla and eggs; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts. Pour batter into prepared muffin cups.
- Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.

- Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Stir in bran flakes. In another bowl, whisk eggs, bananas, oil and buttermilk until blended. - Preheat oven to 400 degrees F. Coat 12 muffin cups with cooking spray.
- Whisk eggs and brown sugar in a medium bowl until smooth. Whisk in bananas, buttermilk, wheat bran, oil and vanilla.
- Whisk whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon and salt in a large bowl. Make a well in the dry ingredients; add the wet ingredients and stir with a rubber spatula until just combined. Stir in chocolate chips, if using. BANANA BRAN MUFFINS WITH LINDT CHOCOLATE INSIDE
I always have these muffins ready for my hike in the morning, along with a sliced apple. I used a cookie scooper to put the first scoop of batter into the cupcake paper, add a piece of Lindt Chili Chocolate, and cover the chocolate with another 1/2 scoop of batter. This recipe comes from Stater Bros. bran flakes cereal, but any bran flakes will work. I was surprised how high each muffin was in calories, but I figured out that a half of a square of Lindt chocolate is twenty calories in itself.

- Preheat oven to 400 degrees F. Paper line 12 (2-1/2 inch) muffin cups. Combine egg, oil, milk, mashed banana, and crushed bran cereal. Mix well and let stand for five minutes. Combine flour, sugar, baking powder, baking soda and nutmeg in a separate bowl. Add cereal banana mixture all at once to flour mixture, stirring just until moistened. CHUNKY BANANA BRAN MUFFINS

- Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
- Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
- With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

- Preheat oven to 375F (190C). In a large bowl, combine flour, baking powder and baking soda.
- Cut in butter with pastry blender or two knives until mixture is crumbly.
- Stir in bran and nuts.
- In a medium bowl, lightly beat egg; stir in banana, yogurt, brown sugar and molasses.
- Add to dry ingredients, all at once, stirring just until moistened.

- Straw berry Butter: Cream together 1/2 cup (125 mL) softened butter and 1/2 cup (125 mL) strawberry jam. Makes about 1 cup (250 mL).
- TIP: Add a topping treat to your muffins before you bake them. Over batter in muffin cups, sprinkle quick-cooking rolled oats, cinnamon and sugar, sesame seeds or chopped nuts.
