2 ½ pounds baking potatoes
1 teaspoon vegetable oil
1 tablespoon white sugar
1 teaspoon salt
1 pinch ground cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
  • In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
  • Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

4 medium potatoes
1 tablespoon olive oil
2-1/2 teaspoons paprika
3/4 teaspoon salt
3/4 teaspoon garlic powder

Steps:

  • Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

2 Idaho potatoes, cut in half lengthwise and cut into 1/4-inch strips
1/2 cup vegetable oil
1 1/2 tablespoons salt
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon ground nutmeg

Steps:

  • Preheat the oven to 450 degrees F and place 2 baking sheets in the oven to preheat.
  • Put the potatoes into a large bowl and add the oil, salt, garlic powder, paprika and nutmeg. Toss gently to coat and carefully transfer to preheated pans. Place in the oven for 20 minutes, remove and, using a spatula, flip the fries. Return to the oven for an additional 10 to 15 minutes, or until the fries are brown and crispy on both sides. Remove and serve immediately.

Steps:

  • Preheat oven to 400 degrees. Oil two baking sheets with 1 tablespoon of olive oil each. Slice the potatoes into 1/2 inch wide by 1/4 inch thick fries. In a large. Bowl toss the potatoes with the remaining olive oil. Spread the potatoes out in a single layer on each baking sheet. Bake for 3040 minutes until golden brown. Flip the fries occasionally so that they brown evenly and do not stick. Season and serve.

4 baking (russet) potatoes, sliced into 3/8-inch thick rounds
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch herbes de provence, or to taste
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  • Combine potatoes, salt, ground black pepper, cayenne pepper, and herbes de provence in a large bowl. Drizzle olive oil over potatoes and stir to evenly coat.
  • Place potatoes on baking sheet, spaced evenly, and bake in the preheated oven for 15 minutes.
  • Remove from oven, flip over each potato slice, and return to the oven for another 15 minutes. Continue cooking and flipping until potatoes are well browned, about 30 minutes. Potatoes should be crispy around edges, but still soft in the center.

A healthy way to make french fries - once you try these you'll never go back to the old "frying" method! Enjoy!!

8 yukon gold potatoes
1 -2 tablespoon extra virgin olive oil (use a good quality - I use Mastero)
salt
Pam cooking spray

Steps:

  • Wash potatoes and cut them into semi-thin strips.
  • Place strips in a bowl and add cool water to cover the potatoes.
  • Wash out some of the"starch" and then drain the potatoes well.
  • Mix in the olive oil and sprinkle with salt.
  • Mix all of the potatoes well so that they all get coated evenly.
  • Spray a cookie sheet with PAM and then place the potatoes on top.
  • Cook at 350F for approximately 20-25 minutes (more if you want them crunchy and brown) Serve and enjoy!

4 large potatoes (peeled and sliced into 1/2 inch cubes)
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400 F.
  • Melt margarine/butter over medium heat in a large heavy bottomed fry pan which has a heat resistant handle(I use cast iron)
  • When butter starts to sizzle add potatoes and let fry for 2 minutes.
  • Turn with a spatula and cook for another 2 minutes.
  • Continue until all sides of potato cubes are browned.
  • Place in preheated oven for 15-20 minutes until potatoes are tender.*.
  • (Cooking time will depend on the type of potato used. Yukon Gold/Katahdins/Red Norlands take less time to cook than Shepradies/Russett/BellRus. Use your own judgement.).
