Making this delightfully different twist on traditional banana bread is fun. It tastes excellent spread with cream cheese or butter. When I take this bread to bake sales, it really goes fast. - In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs. Combine bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana, beating well after each addition. Stir in bran, apricots and nuts. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan to a wire rack.

Steps:
- Heat oven to 160C/140C fan/gas 3. Grease and line a 900g loaf tin with baking parchment. In a saucepan, heat the apricots with the orange zest and all but 1 tbsp of the juice. Simmer gently for 5 mins until the apricots have absorbed all the juice. Set aside to cool.
- Beat the butter and sugar in a bowl until light and fluffy. Gradually beat in the eggs, then fold in the flour. Stir in the cooled apricots. If the mixture is dry at this stage, add a drop of milk.
- Scrape the batter into the tin and smooth the top with a spatula. Bake for 50 mins-1 hr until a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins before removing, then leave on a wire rack to cool completely.
- Gradually add the reserved orange juice to the icing sugar, stirring until smooth and slightly runny. Drizzle the icing in a zigzag pattern over the top of the cake and leave to set.

BRILLIANT BANANA LOAF

- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
- Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

- Preheat the oven to 170°C/325°F/150°C Fan/Gas Mark 3. Grease a 900g loaf tin and line the base and two short sides with a strip of greased baking paper.
- Place the butter, caster sugar and muscovado sugar in a large bowl and beat together until pale and fluffy. Gradually beat in the eggs, about 1 tbsp at a time. Sift over the flour and cinnamon and gently fold into the mixture then fold in the apricots, mashed banana and half the pecan nuts.
- Spoon the mixture into the prepared tin, gently level the surface and scatter over the rest of the pecan nuts. Bake for 1hr 5mins-1hr 15mins until the cake is golden brown and a skewer inserted into the cake comes out clean.
- Leave in the tin for 15-20mins then carefully turn out onto a cooling rack and leave to cool completely.

- Preheat oven to 180C (350F/Gas 4).
- Lightly grease and line a 10cm x 20cm (4inch x 8inch) loaf tin.
- Put the apricots, sultanas and apple juice into a pan and bgring to the boil and cook for 10 minutes or until the fruit has absorbed all the liquid.
- Sift the flour, baking powder and mixed spice into a bowl and stir in the oat bran and sugar or sweetener.
- Whisk together the eggs, buttermilk and oil and stir into the dry ingredients and then fold in the mashed banana and fruit mixture.
- Spoon the mixture into the prepared tin and bake for 50 to 60 minutes or until a skewer comes out clean when inserted into the centre.

- Add dates to hot coffee and allow to soften and cool.
- Add vanilla and butter to the date mixture.

- Preheat your oven to 180C/350F/Gas mark 4 and either line or lightly grease a 2lb loaf tin, and place to one side.
- In a small mixing bowl, combine the plain/all-purpose flour, almond flour, baking powder and salt then place it aside.
- In a large mixing bowl, add in the mashed bananas and mix them with the melted butter and oil.
- Then add the sugar, egg and almond extract and mix until smooth.
- Pour in the dry ingredients and with a gentle hand fold them in together.
- Then fold in the chopped semi-dried apricots and transfer the batter into your prepared loaf tin.
- Place the loaf tin into your hot oven in the centre.
- I have a very slow oven so it took an hour to bake through but check on your loaf at the 50-minute mark. An inserted pick should come out clean, or with only a few crumbs on it.
- Once baked through, leave your loaf to cool for 5 minutes in the tin. Then gently turn it out onto a wire rack to fully cool down.
- This loaf can be kept in a cool environment in an airtight tin for 5 days. This loaf also freezes well, either freeze it as a whole or cut it up into slices and freeze the individual slices.

- Place the chopped apricots in a small bowl with enough cool water to cover. Let stand 30 minutes, then drain and pat dry with paper towels.
- Stir together the peanut butter, honey, and brown sugar in a medium-size heavy-duty saucepan. - Put the bran flakes, sultanas, apricots, sugar and milk into a bowl and mix well. Leave to soak for an hour.
- Preheat oven to a moderate heat.

- In a measuring jug, add the tea bag and pour over 150ml of boiling water and leave to infuse for 5 minutes. Remove the tea bag, add the dried apricots and leave to soak for 30 minutes.
- Butter and line the bottom and ends of a 2lb loaf tin leaving 'tails' of baking paper at each end to help you lift the cooked cake from the tin. Heat the oven to 180C/fan 160/gas 4.
- For the streusel topping, add all the ingredients to a small mixing bowl and rub together between your finger and thumb.
- In a bowl, mix together the mashed banana, melted butter, eggs and vanilla. Add the soaked apricots and any remaining tea. In another bowl, mix together the teff flour, sugar, baking powder and bicarbonate of soda. Pour the wet mixture over the dry mixture and mix briefly to combine. Pour into the prepared loaf tin, levelling with a knife. Sprinkle over the streusel topping and bake for 35 minutes or until a skewer inserted into the centre comes out clean. Check after 25 minutes to see if the top is getting too dark, if it is, cover loosely with foil.
- Lift out of the tin and allow to cool on a wire rack. Best served while still a little warm.
