6 bananas, well ripened
1 cup flour
1/4 cup sugar
1/4 cup water
1 teaspoon nutmeg

Steps:

  • Mash bananas with a fork or use blender to make into a pulp.
  • Add flour.
  • Mix water and sugar to make a syrup.
  • Add syrup and nutmeg to bananas and flour (add more water, if needed, to make batter to pancake consistency.) Mix well.
  • Fry like pancakes in oiled frying pan until golden brown.

Easy to make and delicious. I got this from an old Time-Life book (1970) on African Cooking, which is timely for the ZWT-4!

1 1/2 cups all-purpose flour
6 tablespoons sugar
3 eggs
1 cup milk
5 bananas (about 1 pound)
oil, for deep frying
powdered sugar, for topping

Steps:

  • In a deep mixing bowl, stir the flour and sugar together and, with a whisk, beat in the eggs one at a time. Whisking constantly, add the milk, about 1/3 cup at a time and continue to beat until the batter is smooth and elastic enough to stretch like a ribbon from the beater when it is lifted up out of the bowl.
  • Peel the bananas, chop or slice them coarsely, and drop them into a shallow bowl. With the tines of a table fork, mash the bananas to a smooth puree. Stir the puree into the batter and let the mixture rest at room temperature for about 30 minutes before frying.
  • Pour oil into a deep fryer or large, heavy saucepan to a depth of 2 to 3 inches and heat the oil until it reaches a temperature of 375 degrees ona deep frying thermometer.
  • For each fritter, ladle about 1/4 cup of the banana batter into the hot oil. Deep-fry 2 or 3 fritters at a time, leaving enough space between them so that they can spread into 3 or 4-inch rounds or oblongs. Turning them once or twice with a slotted spoon, fry for about 3 minutes or until the fritters are a rich golden color on all sides. as they brown, transfer them to paper towels to drain.
  • While the fritters are still warm sprinkle them lightly with powdered sugar and serve at once.

2 eggs, lightly beaten
1/2 cup cold milk
3 tablespoons light brown sugar
1 cup flour
1 pinch baking soda
4 ripe bananas, sliced diagonally into 1/4-inch pieces
2 tablespoons confectioners' sugar
peanut oil, for frying

Steps:

  • Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees.
  • Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl.
  • Add the banana slices a few at a time, coating them well with the batter.
  • With a long slotted spoon remove the banana slices a few at a time and place them into the oil.
  • Fry the bananas for 2 to 3 minutes, until lightly browned, turning them once. Drain them on paper towels and transfer them to a serving platter.
  • Repeat the process until all of the bananas have been fried.
  • Sprinkle them with the confectioners' sugar and serve warm.

  • Place oil in a frying pan or pot up to 3 or 4 inches. Heat up for about 8 minutes on high heat to 350 degrees Fahrenheit (180 degrees Celsius).
  • Take about a tablespoon of the mixture and form a ball about 1 inch in size. Gently place the ball in the oil. Continue forming more balls and placing in the oil until there are enough balls to cook in the oil (but not overcrowded). Let them cook for about ten minutes while you stir from time to time. Take the Accra Banana out of the oil when it is a deep golden brown color. Place on paper towels to absorb the excess oil. Repeat the forming of balls and frying process with the rest of the mixture.
