2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
2 medium red onions, chopped
1 roasting chicken (6 to 7 pounds)
1/2 cup dry red wine or reduced-sodium chicken broth
1/2 cup balsamic vinegar

Steps:

  • Preheat oven to 350°. Mix rosemary, garlic, salt and pepper. Place onions in a roasting pan; place chicken over onions, breast side up. , Pat chicken dry. With fingers, carefully loosen skin from chicken; rub rosemary mixture under the skin. Secure skin to underside of breast with toothpicks. Tuck wings under chicken; tie drumsticks together., Mix wine and vinegar; pour over chicken. Roast 2 to 2-1/2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.), Remove chicken from oven; tent with foil. Let stand 15 minutes before carving. Transfer onion and pan drippings to a small bowl; skim fat. Remove and discard skin from chicken before serving. Serve with onion sauce.

Robustly flavored Balsamic Chicken! Chicken is soaked in a flavorful garlic and herb + balsamic vinegar marinade then grilled to browned perfection.

1/3 cup balsamic vinegar
1/4 cup olive oil
1 Tbsp minced garlic ((3 cloves))
2 tsp minced fresh rosemary ((or 3/4 tsp dried))
2 tsp minced fresh thyme ((or 3/4 tsp dried))
2 tsp dijon mustard
1 tsp each salt (and freshly ground black pepper)
2 lbs. boneless skinless chicken thighs ((or breasts))
1 Tbsp chopped fresh parsley, (optional)

Steps:

  • Place chicken in a gallon size resealable bag (or you can use a bowl).
  • In a mixing bowl whisk together balsamic vinegar, olive oil, garlic, rosemary, thyme, dijon mustard, salt, and pepper.
  • Pour marinade over chicken in bag (or bowl). Seal bag while pressing out excess air.
  • Rub marinade over chicken (I also like to twist and tie top of bag so marinade fully covers the chicken).
  • Let marinade in fridge for 2 to 8 hours for breasts and 2 to 24 hours for thighs.
  • Heat over medium-high heat to 400 degrees. Partway through heating don't forget to clean and oil grill grates (with a little vegetable oil or olive oil using tongs and a balled up paper towel).
  • Remove chicken from marinade while shaking excess marinade off back into bag. Transfer to grill and cook covered about 5 to 8 minutes per side.
  • Cook time varies based on thickness, check internal temperature of chicken in thickest portion to 165 degrees for doneness.
  • Garnish with parsley if desired. Serve warm.

24 oz. (3 breasts or 1 package) Tyson Fresh All Natural Boneless Skinless Chicken Breasts
2 tbsp. extra virgin olive oil
1/2 c. balsamic vinegar
2 tbsp. freshly chopped rosemary
4 clove garlic, minced
2 tbsp. low-sodium soy sauce
1/2 tsp. freshly ground black pepper
for the pasta salad
1 lb. cooked bowtie pasta
8 oz. ciliegine mozzarella
8 oz. cherry tomatoes
1/2 c. basil
1 sprig of rosemary
For balsamic vinaigrette
4 tbsp. balsamic vinegar
1/4 c. extra virgin olive oil
1 tsp. dijon mustard
1 tsp. garlic powder
For grilled cheese
8 slices of sourdough bread
12 oz. (pre-sliced 1/4 inch thick slices) of fresh mozzarella
1 c. sun-dried tomatoes in olive oil, divided and drained
1/2 c. fresh basil
Olive oil, for pan and for bread
Kosher salt

Steps:

  • In a medium-sized bowl, whisk together olive oil, balsamic vinegar, rosemary, garlic, soy sauce and pepper.
  • Add chicken, completely coating each side. Using a fork, poke holes through each breast and cover. Marinate 20 to 30 minutes, turning occasionally.
  • In a non-stick grill pan on medium-high heat, sear the chicken for 6 to 7 minutes on one side. Flip the chicken, reduce the heat to medium-low, and sear for another 4 to 5 minutes, or until cooked through.
  • Combine all vinaigrette ingredients in a medium bowl. Whisk until combined.
  • Let chicken rest 10 minutes before slicing.
  • Slice chicken into bite-sized pieces and toss with pasta, mozzarella, cherry tomatoes, basil, and balsamic vinaigrette. Serve.
  • Let chicken rest 10 minutes before slicing. Slice into 1/2 inch thick pieces.
  • Add about a tablespoon of olive oil to pan.
  • Brush a liberal amount of olive oil onto bread and sprinkle with salt.
  • Place bread on grill pan and start layer with 4 to 5 slices of mozzarella, 4 basil leaves, sliced balsamic chicken, 1/4 cup sun-dried tomatoes, another layer of mozzarella. Top with remaining slice of bread. Place a flat pan on top of the bread, then firmly apply pressure. Toast for 3 to 4 minutes, then flip sandwich and repeat the process until the bread is golden brown and the cheese has melted, 9 to 10 minutes in total. Repeat for the remaining 3 sandwiches, then cut on a diagonal and serve.

Chicken With Rosemary and Balsamic Vinegar image

This is a great tasting chicken dish. If you don't have balsamic, use red wine vinegar. Can substitute any chicken part for the whole chicken mentioned in the recipe. I have even used boneless chicken breasts and baked at 350 for 50 minutes and that worked well. If the chicken gets a nice golden brown, you may not need to broil it. As usual, fresh rosemary works best. I use a bit less olive oil as well, use your judgement. The original recipe calls for 3 slices of pancetta atop each chicken half, but I don't think it added much to the final dish, you could subsitute bacon if desired. This is adapted from Bon Appetit, 1997. Hope you enjoy!

4 boneless skinless chicken breasts
2 tbsp olive oil
3 tbsp balsamic vinegar
150ml/¼ pint fresh orange juice
150ml/¼ pint chicken stock
2 tsp chopped fresh rosemary leaves
1 tsp light muscovado sugar
knob of butter
orange segments and fresh rosemary sprigs to garnish
boiled rice and green salad to serve

Steps:

  • Put the chicken between pieces of cling film and flatten slightly by bashing with a pan. Unwrap and sprinkle on both sides with pepper. Heat the oil in a pan over a medium heat, then fry the chicken for 5 minutes, turning halfway through.
  • Pour 2 tbsp vinegar over the chicken, add the orange juice and stock and sprinkle with the rosemary and salt. Bring to the boil, lower the heat and bubble gently for 5 minutes until tender, spooning with the sauce frequently and turning chicken halfway through.
  • Stir in the sugar, butter and rest of the vinegar, then sizzle for a few minutes until reduced and glossy.
  • Put the chicken in a serving dish, spoon the sauce over and garnish with orange and rosemary. Serve with rice and a crisp green salad.
