BALSAMIC PORK CHOPS



Balsamic Pork Chops image

Super simple, yet serious flavour!! The Balsamic sauce is tangy and sweet, and this will go fantastically with any protein - chicken, beef, pork and even lamb! The flavour of this syrup is quite intense so you do not need much for each serving - just spoon a couple of tablespoons over each pork. While the total cook time may seem long, it is mostly hands off time because the balsamic syrup doesn't need to be watched over as it reduces.

4 pork chops (, 2.5cm / 1" thick, about 200-250g/7-8oz each (excluding any bone) (Note 1))
1 - 2 tbsp olive oil
1 garlic clove (, minced)
1 onion (, finely sliced (~1 cup of onion, brown, yellow or white))
1 cup balsamic vinegar
1/3 cup / 60g brown sugar ((Note 2))
Salt and pepper
Crumbled goats cheese or feta
Fresh parsley or thyme

Steps:

  • Sprinkle both sides of pork with salt and pepper.
  • Heat 1 tbsp oil in a large skillet over medium high heat. Cook the first side for 4 minutes until it has a lovely dark gold crust, then turn and cook the other side for 3 minutes. (Note 3)
  • Transfer to a plate, cover loosely with foil.
  • Add 1 tbsp oil to the skillet, still on medium high. Add garlic and onion, cook until translucent - around 3 minutes.
  • Add balsamic vinegar and brown sugar. Stir until the sugar is melted. When it comes to a simmer, adjust the heat so it is bubbling gently, not rapidly.
  • Simmer for ~5 to 8 minutes or until it reduces by almost half and is a THIN syrup. Then add the pork back into the skillet, including all the juices on the plate. Simmer, turning pork to reheat, for 2 minutes or until the the sauce becomes syrupy (to your taste) and pork is reheated. (Note 4)
  • Serve, garnished with crumbled goats cheese if desired.

2 tablespoons steak seasoning rub
½ cup balsamic vinegar
½ cup olive oil
2 pounds boneless pork loin roast

Steps:

  • Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let the roast rest for 10 minutes before slicing and serving.

3 tbsp olive oil
3 tbsp balsamic vinegar
1 tsp Dijon mustard
2 garlic cloves , crushed
4 boneless pork loin chops
2 handfuls green olives , pitted and halved
large handful basil , chopped

Steps:

  • Mix the oil with vinegar, mustard and garlic. Score the meat on both sides, season, then put into a dish. Pour over the balsamic mixture and leave to marinate for 5 mins.
  • Heat a griddle pan until very hot. Lift the pork from the marinade, scraping off any garlic, then cook for 4 mins on each side. Remove the meat and keep warm. Pour the marinade into the pan with the olives, cook for 2 mins, then stir in the basil. Pour any juices from the pork into the pan, drizzle the sauce over the pork and serve with pasta.

These are just like the marinated olives that you purchase in the European markets...if not better. They will stay forever in the fridge. This recipe makes quite a lot of olives (6 cups), but can be scaled down in half if desired....note: plan ahead, these olives need to stay in the fridge for at least 8 hours (the more time left marinating in the fridge, the stronger the flavor will be). Prep time includes the 8 hour refrigeration marinating time.

2 (7 ounce) jars kalamata olives, drained
2 (7 ounce) jars pimento stuffed olives, drained

My market had a sale on boneless, country style pork ribs so I stocked up. Not wanting to baste with a tradiditional tomato barbeque sauce, I became bold and made this up as I went along. The end result was very tasty indeed. You could use boneless chicken breasts or boneless pork chops in place of the ribs.

1 -1 1/2 lb country-style boneless pork ribs
3 tablespoons butter or 3 tablespoons margarine, divided
2 tablespoons olive oil
1 large onion, chopped into medium dice
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage
1/2 teaspoon dried garlic powder (see Note)
salt and pepper
1/3 cup balsamic vinegar
1 cup white wine

Steps:

  • *Note-You could use chopped fresh garlic in place of the dried powder, but I wouldn't add it until the the last ten minutes or so.
  • I'm thinking the garlic may burn if you add it at the beginning and would ruin the dish.
  • Combine all dry spice ingredients.
  • Sprinkle on both sides of the ribs, rub into meat surface.
  • Let stand at room temperature for 1/2 hour.
  • In a large skillet, add the olive oil and 2 tablespoons of the butter over medium-high heat.
  • When the butter has melted, add the ribs.
  • Cook for approximately 5 minutes, and then turn over and sear the other side.
  • You want to get a nice crust from the spices on each side.
  • Add the chopped onion.
  • Cook for approximately five more minutes, stirring the onions until they become tender and are starting to brown.
  • Pour the balsamic vinegar over everything in the skillet.
  • Turn the heat down to medium-low and cover the skillet.
  • Cook for approximately 10-15 minutes more, depending on the thickness of the meat.
  • Occasionally stir the onions and turn the meat.
  • You want to really caramelize the onions, until they become slightly charred.
  • They take on a lovely, sweet and smoky flavor.
  • Test your meat to ensure that it's cooked through by inserting a meat thermometer in the center.
  • Temperature should be 170 degrees.
  • Remove the pork and onions to a platter.
  • Turn the heat up to medium-high.
  • Add the wine to the skillet.
  • Stir up the browned bits in the skillet with a wooden spoon.
  • Cook until the wine is reduced by about half, five minutes.
  • Take the skillet off of the heat, and add 1 tablespoon butter.
  • Stir the sauce until the butter has melted, and season with salt and pepper.
  • Pour the sauce over the pork ribs and onions.

2 tablespoons extra virgin olive oil
2 cloves garlic, sliced
salt and pepper

  • Preheat oven to 500°.
  • Cut slits in pork tenderloin and insert slices of garlic.
  • Combine balsamic vinegar and olive oil and rub into meat.
  • Place in a baking dish.
  • Combine salt, pepper, rosemary and thyme and rub on pork.
  • Roast in oven for 20 minutes or until cooked through.
  • Remove from oven and let meat rest for 10 minutes, covered with foil.
  • Slice and serve.
