BALSAMIC ROAST PORK TENDERLOINS

4 1/2 pounds pork tenderloins, 2 packages with 2 tenderloins in each package
4 tablespoons balsamic vinegar
4 tablespoons extra-virgin olive oil
8 cloves garlic, cracked
Steak seasoning blend or coarse salt and black pepper
4 sprigs fresh rosemary leaves stripped and finely chopped
4 sprigs fresh thyme, leaves stripped and finely chopped

Steps:

  • Preheat oven to 500 degrees F.
  • Trim silver skin or connective tissue off tenderloins with a very sharp thin knife.
  • Place tender loins on a nonstick cookie sheet with a rim. Coat tenderloins in a few tablespoons of balsamic vinegar, rubbing vinegar into meat. Drizzle tenderloins with extra-virgin olive oil, just enough to coat. Cut small slits into meat and disperse chunks of cracked garlic cloves into meat. Combine steak seasoning blend or coarse salt and pepper with rosemary and thyme and rub meat with blend. Roast in hot oven 20 minutes.
  • Let meat rest, transfer to a carving board, slice and serve.

Grilled Pork Chops with Peppers and Balsamic Glaze image

2 red bell peppers
2 yellow bell peppers
2 tablespoons canola oil
1/4 cup balsamic vinegar
4 cloves roasted garlic, smashed to a paste
1 tablespoon clover honey
1/2 cup chopped fresh parsley
Kosher salt and freshly ground black pepper
1/2 cup seeded and chopped hot cherry peppers
2 cups good quality balsamic vinegar (not expensive, just good quality)
2 teaspoons honey
1/2 cup balsamic vinegar
1/4 cup clover honey
1/4 cup canola oil, plus more for cooking
2 tablespoons chopped flat leaf parsley
1 tablespoon finely chopped fresh thyme
4 bone-in center cut pork chops, about 1-inch thick (approximately 12 ounces each)
Kosher salt and freshly ground black pepper
Parsley leaves, for garnish

Steps:

  • For the hot and sweet pepper relish: Preheat oven to 425 degrees F. Toss peppers with canola oil and season with salt and pepper. Roast in oven, turning once, until charred on both sides, about 25 minutes total. Remove to a bowl, cover top with plastic and let steam for 10 minutes. Remove the skin and seeds and thinly slice.
  • Whisk together the balsamic, garlic, honey and parsley in a large bowl, season with salt and pepper. Add the red and yellow peppers and cherry peppers and toss to coat. Let sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.
  • Relish can be made up to 8 hours in advance and stored, covered in refrigerator. Bring to room temperature before serving.
  • For the balsamic reduction: Put the vinegar in a nonreactive (such as stainless steel) pan, bring to a boil and cook until reduced to 1/2 cup. Then stir in the honey, transfer to a bowl and let cool to room temperature; it will thicken as it cools.
  • For the pork chops: Whisk together the vinegar, honey, 1/4 cup oil, parsley and thyme and let sit at room temperature for 30 minutes.
  • Remove the pork from the refrigerator 30 minutes before grilling to take the chill off.
  • Heat your grill to high or a cast iron grill pan over high heat. Brush the pork chops on both sides with canola oil and season with salt and pepper. Grill on one side until golden brown, about 4 minutes. Turn over and grill until the other side until golden brown. Brush with some of the glaze, turn, brush with more glaze and turn again until a crust forms and pork is cooked through, (it should register 145 degrees F on instant read thermometer), about 10 to 12 minutes total.
  • To serve: Transfer the chops to a plate, top with some of the relish and drizzle with balsamic reduction. Garnish with parsley leaves.

1 teaspoon olive oil
3 slices bacon (about 2 ounces), cut into 1/2-inch pieces
1 small onion, peeled, thinly sliced
2 tablespoons mascarpone cheese
1/4 cup farmer's cheese
Freshly grated nutmeg
Freshly ground black pepper
6 ounces Pizza Dough, recipe follows
1/2 cup grated mozzarella
2 tablespoons grated Parmesan
2 tablespoons fresh thyme leaves
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
  • In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
  • In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
  • On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
  • Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

½ cup balsamic vinegar
½ cup olive oil
2 pounds boneless pork loin roast

Steps:

  • Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).

3 tbsp balsamic vinegar
1 tsp Dijon mustard
2 garlic cloves , crushed
4 boneless pork loin chops
2 handfuls green olives , pitted and halved
large handful basil , chopped

Steps:

  • Mix the oil with vinegar, mustard and garlic. Score the meat on both sides, season, then put into a dish. Pour over the balsamic mixture and leave to marinate for 5 mins.
  • Heat a griddle pan until very hot. Lift the pork from the marinade, scraping off any garlic, then cook for 4 mins on each side. Remove the meat and keep warm. Pour the marinade into the pan with the olives, cook for 2 mins, then stir in the basil. Pour any juices from the pork into the pan, drizzle the sauce over the pork and serve with pasta.

1 1/4 lbs strong flour
2 teaspoons salt
1/4 ounce instant yeast
1 1/4 cups warm water, approximately
3 tablespoons olive oil
1 onion, chopped
1 garlic clove, chopped
7 ounces cherry tomatoes
salt & freshly ground black pepper
1 chicken breast fillet, chopped into small pieces
2 tablespoons balsamic vinegar
1 tablespoon olive oil, plus extra for drizzling
1 red onion, finely sliced
1 fresh mozzarella ball, torn into pieces
chopped cilantro leaf, to garnish

Steps:

  • First make the pizza dough. In a bowl, mix together the flour, salt and yeast. Gradually add in the warm water, mixing as you add it in, until the mixture comes together into a dough.
  • Knead the dough on a lightly floured work surface until smooth and elastic. Set aside in a warm place for 30 minutes, until doubled in size.
  • Meanwhile, cook the tomato sauce. Heat the olive oil in a heavy-based saucepan. Add in the onion and garlic and fry very gently for 5 minutes.
  • Add in the cherry tomatoes and cook gently for 15 minutes, stirring now and then. Season with salt and freshly ground pepper. Crush the cooked cherry tomatoes with a masher.
  • Meanwhile, prepare the chicken topping. Place the chicken in a bowl, sprinkle over 1 tablespoon of balsamic vinegar and set aside for 10 minutes.
  • Heat the olive oil in a frying pan. Add in the chicken and fry, stirring, for 5 minutes, until cooked through. Add in the remaining balsamic vinegar, scraping the frying pan with a wooden spatula to deglaze it.
  • Break the risen dough down and divide into 3 even-sized portions.
  • Preheat the oven to 450°F
  • To make a pizza, roll out one of the pizza dough portions into a large disc and place it on a baking sheet.
  • Top the pizza with the fried balsamic chicken, then sprinkle over the red onion. Dot with the mozzarella and drizzle over with olive oil.
  • Bake for 8 minutes. Sprinkle with cilantro and serve at once.

  • To brine the chops: Combine the water, sugar, salt, and orange zest in a medium saucepan. Bring to a boil over high heat, stirring often to dissolve the sugar and salt. Transfer to a medium heatproof bowl, and stir in the ice water–the brine must be very cold.
  • Meanwhile, one at a time, place a pork chop between two sheets of plastic wrap. Pound the chop with the flat side of a meat pounder until it is about ⅓-inch thick. One at a time, coat the pork in the flour, shaking off the excess, then dip on both sides in the egg mixture and coat evenly with the panko mixture, patting it in gently to adhere. Transfer to a platter. Let the pork stand for about 10 minutes to set the coating.
