Steps:
- Peel the onions and slice them in half from top to bottom. Trim the top and bottom of each half.
- Cut the onion halves into chunks by cutting at right angles to the original cut. Make the pieces as consistently sized as possible so they will cook evenly.
- Set a large saucepan on the stove over medium-high heat and let it warm up. Add the butter to the pan. When the margarine melts and begins to bubble, add the onions. Stir the onions so that they are well coated. Cook for about 5 minutes or until the onions begin to sweat (look glossy).
- Add the balsamic vinegar, sugar and salt.
- Continue cooking on low heat for about 15 to 20 minutes until the onions have softened, stirring occasionally.
- Take the pan off the heat and serve warm. If making ahead, allow the onions to cool and then store them in an airtight container in the fridge.

BALSAMIC PORK CHOPS WITH CARAMELIZED ONIONS
Easy and delicious recipe for balsamic pork chops. The sesame oil adds a different flavor, but can be swapped for olive oil. I've made it many times with and without the onions.

Steps:
- Toss onion slices and olive oil in a saucepan over medium heat until onions are evenly coated with oil. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 25 to 35 more minutes.
- While the onions are cooking, rub both sides of the pork chops with salt, pepper, and chili powder.
- Heat sesame oil in a large skillet over high heat. Add pork chops to the hot skillet and cook for 2 to 3 minutes per side. Reduce heat to medium and season chops with more salt, pepper, and chili powder, if desired. Add garlic to the pan and pour in 1/2 of the balsamic vinegar to cover the bottom of the pan. Cook for 5 minutes, flip the chops, and add the remaining balsamic vinegar. Cook for 4 to 5 minutes, flip, and cook another 4 to 5 minutes.
- Place caramelized onions in the pan with the pork chops. Cook, flipping chops at least 1 more time, until no longer pink in the center, 3 to 5 minutes longer. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Steps:
- Bring a saucepan of water to a boil. Drop in the onions and boil 2 minutes. Drain and cool slightly.
- Use a small, sharp knife to slice off the top of the onions, then slip off the skins. Trim any hairy roots, but leave the stem end intact so that the onions don't separate. If the onions are larger than 1 1/2-inches diameter, slice into halves or quarters.
- Heat the butter and oil in a medium (8-10-inch) nonstick skillet over medium-high heat. When the butter stops foaming and begins to smell nutty, add the onions to the pan. Cook 5 minutes, or until the onions are browned, stirring occasionally.
- Sprinkle the onions with the sugar and salt. Pour the water and vinegar over them (the pan will sputter). Turn the heat down to medium and cover the pan. Cook 5 minutes.
- Uncover the pan and continue cooking until the liquid in the pan looks syrupy and has large bubbles, another 2-3 minutes. Sprinkle with the thyme and serve.

Steps:
- Melt the butter in a saute pan or pot on low to medium heat.
- Slice the onions, and add them to the saute pan. Stir to coat them in the butter, and leave them to cook until they soften.
- Stir through the onions every 5 minutes to make sure they don't stick to the bottom of the pan. When they start to stick, add some balsamic vinegar to deglaze the pan and prevent the onions from burning.
- Repeat as often as needed, adding splashes of vinegar to prevent the burning. The onions will have to cook for 45 min - 1 hour to fully caramelize.

Steps:
- Put all the ingredients apart from the vinegar in a slow cooker - or a very low oven or aga (50degreesC)
- Let it cook all day - and all night if it needs it - untill the onions are soft and dark brown and reduced. If it is crisping the heat is too high. You may need to stirr it occasionally - but i usually just leave it.
- Cook for the last half hour without a lid - to help it dry out a bit.
- Stirr in the balsamic vinegar. Done!
- I serve this with Lamb or Beef - but I also keep pots of it in the freezer to top homemade bread - or to put on puff pastry with brie.

BALSAMIC-GLAZED RED ONIONS
Steps:
- Prepare the onions: Preheat the oven to 400F. Slice off any straggly roots from the onions, leaving the firm root centers intact. Cut the onions in half from tip to root. Peel off the skins until all the papery layers are removed. Cut each half into 4 wedges, slicing through the root so that the wedges stay intact.
- Roast the onions: Cover the baking dish with foil and roast the onions for 30 minutes. Remove the foil and continue roasting the onions uncovered for 30 minutes more.
- Make the glaze: In a bowl, whisk the balsamic, mustard, salt, and pepper. Gradually whisk in the olive oil.
