1 lb parsnips, peeled, cut into 2-inch pieces (3 cups)
1 lb carrots, cut into 2-inch pieces (3 cups)
1/2 large red onion, thinly sliced, slices cut in half (2 cups)
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2/3 cup balsamic vinegar
3 tablespoons honey
1 teaspoon Dijon mustard

Steps:

  • Heat oven to 425°F. In large bowl, toss parsnips, carrots, onion, oil, salt and pepper. Arrange vegetables in single layer in ungreased 17x12-inch half-sheet pan.
  • Bake uncovered 35 to 40 minutes, stirring once, until tender and lightly browned.
  • In 1-quart saucepan, heat vinegar, honey and mustard to boiling; cook 6 to 8 minutes, stirring occasionally, until glaze is reduced to 1/3 cup. Remove from heat; drizzle glaze over vegetables.

1 (16 ounce) package fresh Brussels sprouts
1 small red onion, thinly sliced
5 tablespoons olive oil, divided
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 shallot, chopped
¼ cup balsamic vinegar
1 tablespoon chopped fresh rosemary

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • Combine Brussels sprouts and onion together in a bowl; add 3 tablespoons olive oil, salt, and pepper and gently toss to coat. Spread sprouts mixture onto the prepared baking sheet.
  • Bake in the preheated oven until sprouts and onion are tender and caramelized, 25 to 30 minutes.
  • Heat remaining 2 tablespoons olive oil in a small skillet over medium-high heat; saute shallot until tender, about 5 minutes. Add balsamic vinegar and cook until glaze is slightly reduced, about 5 minutes. Stir rosemary into glaze and pour over sprouts mixture.

3/4 cup sweetened dried cranberries
1 1/2 lb sweet potatoes, peeled, cut into 1 1/2-inch pieces
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon packed light brown sugar
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/3 cup chopped fresh Italian (flat-leaf) parsley

Steps:

  • Spray 6-quart slow cooker with cooking spray. In slow cooker, stir together parsnips, carrots, onions and cranberries. Top with sweet potatoes.
  • In small bowl, stir together oil, vinegar, brown sugar, salt and pepper with whisk; pour over vegetables in slow cooker. (Do not stir.)
  • Cover; cook on High heat setting 4 to 5 hours or until vegetables are tender. Sprinkle with parsley before serving.

Steps:

  • Preheat oven to 425°F Cut onions in half through the root, leaving skins on.
  • In an oven-safe 12" skillet, heat olive oil until smoking. Add onions, cut side down. Cook over medium heat without moving them for 7-8 minutes, until dark golden brown.
  • Add the balsamic vinegar and transfer pan to preheated oven until onions are tender, 15-20 minutes.

This is a recipe I got in epicurious. It is one of those 'perfect' things you so rarely come across - nothing can be improved upon. Epicurious says it feeds 10. My husband and I say 'HA!!!' (it sometimes never makes it to the table and is eaten directly out of the pan).

4 lbs medium-size red onions, peeled
1/4 cup olive oil
6 tablespoons butter
3 tablespoons sugar
6 tablespoons balsamic vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Position 1 rack in center and 1 rack in bottom third of oven; preheat to 500°F.
  • Line 2 large baking sheets with foil.
  • Cut onions crosswise nearly, but not quite, all the way through. Make two or three more sectional cuts - always stopping before you cut through, so that onion is in 3/4-inch-thick wedges (the onion stays attached at one end and resembles an onion 'flower' (with very thick petals ;-) ).
  • Place in medium bowl; toss with oil.
  • Arrange onions, cut side down, on baking sheets.
  • Sprinkle with salt and pepper.
  • Roast until onions are brown and tender, rotating pans in oven and turning onions once, about 45 minutes (they will caramelize and be quite dark in parts but, if you have coated them well with olive oil, will not have a 'burnt' taste).
  • Meanwhile, melt butter in heavy small saucepan over medium-high heat.
  • Add sugar and stir until sugar dissolves.
  • Remove from heat.
  • Add vinegar.
  • Return to heat.
  • Simmer until mixture thickens slightly, about 2 minutes.
  • (Onions and balsamic glaze can be made 1 day ahead. Cool. Cover separately and chill. Rewarm onions in 375°F oven about 15 minutes. Stir glaze over low heat to rewarm.) Arrange onions on platter.
  • Drizzle glaze over.
  • Sprinkle with parsley.

450 g parsnips, scrubbed and cut into 1/2in x 2in/1cm x 5cm batons
225 g pickling onions, peeled (pour boiling water over them first to loosen skins)
1 tablespoon soya oil
1 tablespoon honey
1 teaspoon turmeric

Steps:

  • Squeeze grated ginger tightly in one hand over parsnips so all the juice runs out. Discard the remaining fibrous ginger.
  • Mix all ingredients together and place in a shallow tin.
  • Cook uncovered at 150C/300F for 35-45 minutes, turn occasionally.
  • Increase temperature to 200C/400F and cook for a further 15-20 minutes until crisp and golden.

6 large carrots, peeled, sliced diagonally
3 parsnips, peeled, sliced into strips
1/2 cup white pearl onion, peeled and halved
1 small cinnamon stick
1 teaspoon fresh orange rind
1/2 teaspoon thyme
1/2 teaspoon garlic salt
1/2 teaspoon powdered ginger
1 teaspoon fresh fennel seed, ground into powder
1 cup orange juice, fresh squeezed
2 tablespoons sweet butter
2 -2 1/2 tablespoons brown sugar
4 teaspoons red peppers, finely chopped (garnish)

Steps:

  • Put carrotes, parsnips, pearl onions and cinnamon stick into a large pot.
  • Add the orange rind, thyme, garlic salt, powdered ginger and fennel into the orange juice and pour over the vegetables in the pot.
  • Bring to a boil, lower heat and simmer for 15 - 20 minutes.
  • Drain the vegetables and remove the cinnamon stick.
  • Next add the butter and brown sugar to the cooked vegetables and cook on medium heat, gently stirring until all vegetables are glazed about 2 minutes.
  • Garnish with finely chopped red peppers.
