1 1/2 pounds Brussels sprouts, trimmed and cut in half through the core
4 ounces pancetta, 1/4-inch-diced
1/4 cup good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon syrupy balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees. Place the Brussels sprouts on a sheet pan, including some of the loose leaves, which get crispy when they're roasted. Add the pancetta, olive oil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper, toss with your hands, and spread out in a single layer. Roast the Brussels sprouts for 20 to 30 minutes, until they're tender and nicely browned and the pancetta is cooked. Toss once during roasting. Remove from the oven, drizzle immediately with the balsamic vinegar, and toss again. Taste for seasonings, and serve hot.

1 ½ pounds Brussels sprouts, trimmed
2 tablespoons olive oil
1 onion, thinly sliced
2 cloves garlic, minced
¼ cup balsamic vinegar
2 tablespoons butter
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Bring a large pot of lightly salted water to a boil. Add Brussels sprouts and cook until slightly tender, about 2 minutes. Drain and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
  • Heat olive oil in a skillet over medium heat; cook and stir onion and garlic in the hot oil until onion is just tender, 5 to 10 minutes. Add Brussels sprouts; cook and stir until sprouts are tender, 8 to 10 minutes.
  • Mix balsamic vinegar, butter, salt, black pepper, and garlic powder into Brussels sprouts mixture; toss to coat.

2 pounds fresh Brussels sprouts, trimmed and halved
3 tablespoons olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces sliced pancetta or bacon strips, chopped
2 garlic cloves, minced
1 tablespoon balsamic vinegar
1/3 cup dried cranberries
1/2 cup pine nuts, toasted

Steps:

  • Preheat oven to 400°. Place Brussels sprouts in a 15x10x1-in. baking pan; toss with 2 tablespoons oil, salt and pepper. Roast 30-35 minutes or until lightly charred and tender, stirring halfway., Meanwhile, in a large skillet, heat remaining oil over medium-high heat. Add pancetta; cook and stir 4-6 minutes or until crisp. Add garlic; cook 1 minute longer. Remove from heat; stir in vinegar., In a large bowl, combine Brussels sprouts, cranberries and pancetta mixture; toss to combine. Sprinkle with pine nuts.

Pancetta is a mild, Italian bacon. If not available where you shop, use thin slices of regular bacon. I like this recipe because you can make ahead and keep for up to 2 days. From Chatelaine Magazine.

3 slices thin mild pancetta
2 small shallots, finely chopped
1 lb green beans (about 8 cups, or 2 L)
1 teaspoon butter or 1 teaspoon olive oil
1/2 teaspoon salt
2 tablespoons balsamic vinegar
parmesan cheese (optional)

Steps:

  • Bring a large saucepan of water to a boil over high heat.
  • Meanwhile, slice pancetta into thin strips.
  • Finely chopped shallots should measure about 3 tablespoons (45 mL).
  • Trim ends from beans.
  • Over medium heat, melt butter in a wide frying pan.
  • Add pancetta and shallots.
  • Stir often 3 to 5 minutes until pancetta is crisp.
  • While pancetta is cooking, place beans into boiling water.
  • Boil uncovered, 2 to 3 minutes, until almost tender-crisp.
  • Drain thoroughly.
  • When pancetta is cooked, add hot beans to pan.
  • Sprinkle with salt.
  • Add in vinegar.
  • Stir often for about 1 minute, until vinegar is absorbed.
  • Turn onto a platter; garnish with Parmesan shavings, if you wish.
  • Serve immediately, with Roast Pork, Stuffed With Stilton.
  • Make Ahead: After boiling beans, drain and plunge into a bowl of ice water to stop cooking.
  • Drain.
  • Pat dry with paper towels.
  • Wrap and refrigerate.
  • Prepare shallots and pancetta following the recipe, but do not cook.
  • Wrap and refrigerate up to 2 days.
  • When ready to cook, continue with recipe.
  • Beans, from the refrigerator, may need a couple of extra minutes to heat.

1 lb fresh Brussels sprouts, halved
1/2 cup white wine
1/2 cup Progresso™ chicken broth (from 32-oz carton)
Salt and pepper to taste
1 tablespoon butter
2 tablespoons sweetened dried cranberries, chopped
2 tablespoons chopped walnuts

Steps:

  • Heat stockpot with heavy bottom over medium heat about 5 minutes or until very hot.
  • Spray stockpot with cooking spray. Add Brussels sprouts; cook 3 to 4 minutes, stirring occasionally, until lightly browned. Stir in wine. Add broth, salt and pepper. Cover; cook 5 minutes.
  • Uncover; stir. Cook uncovered until all liquid has evaporated.
  • Stir in butter, cranberries and walnuts. Once butter melts, cook 2 to 3 minutes longer. Remove from heat; pour into serving dish. Serve immediately.

Balsamic Glazed Brussels Sprouts With Pancetta image

For those of us Brussels Sprouts lovers, these are excellent and easy. I got this recipe from my sister in law...I think it's from Fine Living. Great side dish.

2 ounces pancetta, cut into 1/4 inch dice
1 -2 tablespoon extra virgin olive oil
10 ounces Brussels sprouts (about 18 medium, trimmed and halved)
1/4 cup balsamic vinegar
fresh ground black pepper
2 tablespoons butter
salt

Steps:

  • In a heavy 10 inch saute pan, set over medium low heat, slowly cook pancetta in 1 tablespoons olive oil until golden and crisp all over. About 15 minutes. With slotted spoon, transfer pancetta to a plate lined with a paper towel, leaving fat in pan. You should have about 2 Tbsps. of fat remaining, if not add remaining 1 tablespoons oil to pan. Have ready 1/2 cup water.
  • Put the pan over medium high heat and arrange the sprouts cut side down in a single layer. Cook undisturbed until nicely browned, 2 to 3 minutes. When the sprouts are browned, add water to the pan, cover immediately and simmer until the sprouts are tender. If water evaporates before sroupts are tender, add more water, 1/4 cup at a time. With a slotted spoon, transfer sprouts to a bowl. Return pan to medium high heat, and if any water remains, let it boil off.
  • Add balsamic vinegar and a few grinds of pepper. Boil vinegar until it's reduced to about 2 Tbsps., and looks syrupy. About 2 minutes. Reduce heat to low, and add butter, and stir until it's melted. Return sprouts and pancetta to the pan and swirl and shake the pan until the sprouts are evenly coated. Season with salt and more pepper, and serve.

½ pound pancetta. sliced %-inch thick, then diced
2 tablespoons extra virgin olive oil
2 ½ pounds Brussels sprouts, ends trimmed, halved (quartered if large)
2 shallots, minced
3 cloves garlic, minced
3 tablespoons balsamic vinegar
½ cup low-sodium chicken stock
1 teaspoon dried red pepper flakes (to taste!)
Kosher salt and freshly ground black pepper

Steps:

  • In a large saucepan over medium heat, cook the pancetta until brown and crispy. Remove the pancetta from the pan and set aside. In the same pan. heat the olive oil and saute the Brussels sprouts until crispy on the outside, about 5 minutes. Add the shallots and garlic and cook until the garlic is soft, about 5 minutes. Add the balsamic vinegar, chicken stock and red pepper flakes. Cover and bring to a boil, then simmer uncovered until the Brussels sprouts are tender, about 15 minutes. The braising liquid should have reduced by half. Season sprouts with salt and pepper to taste. Pour Brussels sprouts onto a serving platter and garnish with pancetta.
