A good friend gave me this recipe forever ago... It's a great way to use up your veggies or impress vegetarian guests. This recipe can easily be doubled for the whole family to enjoy.

Number Of Ingredients 8

2/3 cup white kidney beans
1/4 cup chopped celery
1/4 cup chopped carrot
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup breadcrumbs
1 eggs or 1 egg substitute
nonstick cooking spray

Steps:

  • Spray pan with cooking spray.
  • Add chopped veggies and cook on medium heat for about 5 minutes, or until tender.
  • Crush beans and mix in egg and bread crumbs.
  • Spoon into 4 equal patties on a cookie sheet coated with non stick spray.
  • Bake at 375 - 400 degrees for 20 minutes.
  • Flip burgers and cook for another 10 - 15 minutes.

These cauliflower fritters are super simple to make, versatile, and packed with fiber and plant-based protein. Perfect for serving as bite-sized fritters, medium patties, or large cauliflower burgers. Plus, they're gluten-free, egg-free, dairy-free, low-fat, and can be pan-fried, baked, or air fried!

Number Of Ingredients 10

1/2 small cauliflower head (cut into small florets)
1 (15 oz) can chickpeas ((rinsed and drained))
2 tbsp parsley (finely chopped)
2 cloves garlic (minced)
coconut oil (for frying)
1/2 heaped cup chickpea flour ((see notes))
1 1/2 tbsp ground flax seeds
1 tsp onion powder
1/2 tsp cumin (ground)
salt and pepper (to taste)

Steps:

  • Cook the cauliflower florets in salted water until tender (about 10-15 minutes), then discard the water.
  • Meanwhile, combine all dry ingredients in a bowl, and set aside.
  • Pulse all the wet ingredients (except the oil) in a food processor until combined (don't over-process, though. There should still be texture, not a paste).
  • Add the wet ingredients to the bowl of dry ingredients and combine with your hands.
  • Form 8-10 patties and fry them with a little oil in a large skillet on both sides (about 5 minutes each) until golden brown.
  • Serve with vegan sour cream, tzatziki, Ranch dressing, or tahini dressing,

  • Rinse the red lentils in a sieve under running water to remove any debris. Transfer them to a pot or pan along with 1 cup of vegetable broth. If using water add a little salt. Bring to a boil and let the lentils simmer with a lid for about 15 minutes or until they are soft and partially falling apart. There should be no broth or water being left after cooking!If too much water evaporates during cooking, you can add a little bit more.
  • Meanwhile, heat a little oil in a skillet and add the onion, pepper, and garlic. Fry over medium heat for a few minutes, until the onion is translucent (not browned).
  • Once the lentils are cooked, add them to a food processor together with the cooked veggies, spices, parsley, ground chia seeds, and flour. Pulse a couple of times until the mixture is combined. You want to leave some texture, so do not over-process it.
