TUNA BALL
There's nothing fancy about the tuna ball, but it tastes great at parties and other get-togethers. Chopped pecans give this blend of tuna, cream cheese, and onion a light crunch. I love this appetizer with veggies, crackers ,and veggies.

CRISPY BAKED TUNA BALLS - GOOD!
This is a flavorful and quick and easy appetizer that my husband, friends and I enjoy. It is also good as a snack for both children and adults, although for kids you may want to tame down the spiciness a bit by using a smaller amount of mustard and/or lemon juice. Steps:
- Heat the oil in a pan on medium heat. Add the diced onion and minced garlic and saute for a minute. Then add the chopped baby spinach and saute for another 1-2 minutes or until the spinach is wilted.
- Transfer the onion spinach mixture to a bowl and let it cool. You can place the bowl in the fridge to speed this up.
- Preheat your oven to 400 degrees fahrenheit.
- Drain the cans of tuna and add the tuna to a mixing bowl along with the cooled vegetables, almond flour, eggs, mayonnaise, lemon juice, parsley, dill, salt and pepper.
- Use your hands to dig in and mix everything together, breaking up any large chunks of tuna. The finer the mixture, the easier it will stick together.
- Use a medium cookie scoop to scoop out evenly sized amounts of mixture. Use your fingers to mold this into a ball, then place it on a parchment lined baking tray.
- Bake the tuna meatballs for 20-25 minutes, or until lightly golden.

Steps:
- Melt mozzarella & cream cheese in the microwave. I do about 45 seconds, remove from microwave and stir and pop back in for another 45 seconds.
- Add in almond flour and egg until combined.
- Place dough on parchment paper. Top with the second piece of parchment paper and roll out until it's about 1/4" thick.
- Use a round cookie or biscuit cutter. I used a 3" for this recipe for a smaller tuna ball. You can use a larger one if you prefer.
- In a medium size bowl mix together tuna, cream cheese, and chopped green onions.
- Grab a piece of the fat head dough that's been cut out into a circle. Using a teaspoon, put filling onto the dough. Pinch the ends of the dough together and pinch together to ensure the filling isn't going to come out. Roll in the palm of your hand until the dough looks smooth.
- Place seam side down on the baking sheet and repeat the process until the filling is gone. You will need to reroll the extra fat head dough a second time.
- Bake in the oven at 350° for 20 minutes and golden brown.
- Serve with a side of tartar sauce!

- For the meatballs: In a mixing bowl, add the tuna, egg, bread crumbs, raisins, pine nuts, Parmigiano cheese, and 1/2 cup wine. Combine the ingredients together using your hands. - Heat up extra-virgin olive oil in a saucepan. Gently place the meatballs in the hot oil and fry until golden brown. Turn the balls over to cook on all sides. Transfer to a plate lined with an absorbent paper towel.
- For the balsamic sauce: Add the balsamic vinegar to a saucepan and cook on high heat. Add the rosemary and bring to a boil. Lower the heat to minimum. Let the balsamic reduce to half or when the sauce resembles a thick consistency. Drizzle the balsamic sauce over the meatballs.

BAKED TUNA BALLS
These tuna balls are very tasty, they can be made into 10-12 larger balls, or 30-40 smaller cocktail size balls (served with a cocktail picks). If you are one of those people (like myself) that just have to add garlic to everything, no matter what it is, then fresh minced garlic in any amount may be added to these if desired. This recipe can easily be doubled, I usually do if I am making, them into larger balls, for a snack or a main meal.

- Chop the tuna into 1/2 inch pieces. Put the tuna, mint, pistachios and the chopped onion in a food processor and pulse to combine. You want a rough mixture, not a smooth paste. Put the tuna mixture into a large bowl with the breadcrumbs, salt, lemon zest and egg and mix well with your clean hands for a minute or so. You want everything combined well and you want the proteins in the egg and tuna to bind the mixture.
- Using an ice cream scoop or large spoon to scoop out the meat, roll into meatballs. You should be able to make about 20 golf ball-sized meatballs. Roll each meatball in flour and fry in enough olive oil to come half way up the sides of a large frying pan. You will probably need about 1/2 cup. Fry gently until browned over medium heat, about 15 to 20 minutes, and set each finished meatball on paper towels to drain.
- To finish, stew the meatballs in the tomato sauce (you can use any tomato sauce you want, if you'd rather not make the tomato-fennel sauce ) until heated through, about 5 to 10 minutes, and serve alone or with pasta.
