Baked trout recipes show up on my dinner table often. Moist tender trout is draped in a creamy Parmesan cheese coating that makes this dish elegant enough to serve company. I also use the delicious sour cream mixture on salmon. -Mary Zimmerman, Spring Lake, Michigan

1 pound trout fillets
1 cup sour cream
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
1 tablespoon finely chopped onion
1/2 teaspoon salt
Paprika

Steps:

  • Place fish in a greased shallow 3-qt. baking dish. In a small bowl, combine the sour cream, cheese, lemon juice, onion and salt; spread over fish. Sprinkle with paprika. , Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork.

This is from the Food Network. The crust is amazing. I love new ways to prepare fresh fish and this is very good.

1 cup breadcrumbs
1 tablespoon garlic powder
1/2 grated romano cheese
1/2 cup chopped fresh parsley leaves
4 (8 ounce) trout fillets
1/3 cup fresh lemon juice
1/4 cup olive oil

Steps:

  • Combine bread crumbs, garlic powder, cheese and parsley in medium bowl.
  • Rub each fillet with lemon juice.
  • Coat fillets evenly in bread crumb mixture.
  • Place fillets on baking pan lined with waxed or parchment paper.
  • Drizzle olive oil over fillets.
  • Bake in oven for 10-15 minutes or until fillets are cooked through.

Really simple recipe that even pleases the non fish lovers among us! My favorite fish to use is tilapia, but any mild, white fish will work nicely.

4 fish fillets, about 1 pound
1/3 cup mayonnaise
3 tablespoons butter, melted
1/3 cup onion, finely diced
1/4 cup parmesan cheese or 1/4 cup romano cheese, grated
1 tablespoon lemon juice
1/2 teaspoon Old Bay Seasoning
1/4 teaspoon black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat oven to 400°F.
  • Place fish, in a lightly greased 9x13 baking dish.
  • In a bowl, combine mayonnaise, butter, onion, cheese, lemon juice, Old Bay, and pepper. Mix until a thick paste is formed.
  • Spread mixture evenly over fish filets, then top with bread crumbs.
  • Bake for about 10 minutes, or until fish is flaky.
  • To finish cooking, place fish under the broiler, for another 2-3 minutes, or until fish is golden brown.
